What ingredients will you need?

To make 6 servings of snacks, the following set of ingredients is required:

  • water – 400 ml;
  • squid – 3 pcs.;
  • bay leaf – 2 pcs.;
  • sunflower oil – 15 ml;
  • sugar – 4 g;
  • lemon juice – 50 ml;
  • salt – 11 g;
  • dried crushed pepper - at your own discretion.

Lemon juice can be replaced with regular table vinegar in the amount of 15 ml.

When marinating seafood, you need to follow these steps:

  1. Scald the carcasses with hot water and remove film and skin. Cut the ingredient into strips or rings.
  2. To create a brine, add oil with lemon juice, sugar, salt, pepper and bay leaf to the water.
  3. Boil the brine and add seafood to it. Turn off the gas and cool the ingredient with the lid closed.

The classic version uses table vinegar. This is the most affordable and easy to use ingredient.

For 500 ml of water to prepare the marinade you will need 3 tbsp. l. vinegar.

With balsamic vinegar

If you want to vary the taste, you can add balsamic vinegar. So for 500 ml of water you will need 5-6 tbsp. l. vinegar depending on what kind of acidity of the finished snack you want to get.

With wine

Wine vinegar goes well with squid. It preserves the preparation and also gives it a spicy note. The marinade is diluted in the following proportion: 4 tbsp per 0.5 liter of water. l. acids.

With apple

Apple cider vinegar enriches the snack with a pleasant fruity aroma and corresponding taste characteristics. It should be added in the same proportion as wine.

If during the cleaning stage in hot water the carcasses become light, they do not need to be boiled further.

  1. Prepare and cut the carcasses in a convenient way.
  2. Pour oil into a saucepan, add dried spices with chopped garlic cloves. Add sesame seeds to the mixture and fry until golden brown.

  1. Clean the squid carcasses and boil in lightly salted water for 2 minutes.
  2. After the time has passed, immediately cool in ice water and cut into strips or rings.
  3. Peel the carrots and chop them using a Korean carrot shredder. Chop the onion into rings after removing the skins.
  4. Place all ingredients in a container, add salt and granulated sugar and mix well. Fry the composition in vegetable oil with the addition of paprika, vinegar and garlic. Pour the prepared marinade over the seafood.
  5. Upon completion of cooking, place the product in the refrigerator for 2 hours.

How to marinate squid at home

Classic marinated squid recipe

The appetizer prepared according to this recipe turns out tasty, with some sourness. The longer the marinating time, the tastier the finished dish. Therefore, it is better to prepare a snack the night before or a day before the feast.

  1. Pour boiling water over the carcasses and remove skin and films. Cut into strips or rings.
  2. To make the brine, add bay leaf, salt, sugar and spices, lemon juice and vegetable oil to the water.
  3. Boil the brine and add the prepared squid. Turn off the burner and cool the snack under the lid.
  4. The dish is immediately ready to eat. But it’s better to marinate it for 16–18 hours in the refrigerator.

Store the finished snack in a tightly closed jar in the refrigerator, put a slice of lemon on the bottom and pour vegetable oil on top.

Korean marinated squid

  • Squid – 0.5 kg;
  • Onions – 2 pcs;
  • Carrots – 1 piece;
  • Vinegar – 3 tbsp;
  • Vegetable oil – 2 tbsp;
  • Sugar – 1 tsp;
  • Salt to taste;
  • Paprika – 1 tsp;
  • Garlic – 2 cloves.
  1. Clean the carcasses and boil for 1–2 minutes. Cool immediately in ice water. Do not increase the cooking time, otherwise the fillet will become tasteless and chewy.
  2. Cut the finished carcasses into rings or strips.
  3. Grate the carrots on a Korean grater, cut the onion into half rings. Mix everything, add sugar and salt.
  4. Lightly fry the vegetables with paprika, add squid, vinegar and garlic. Place in the refrigerator for 2 hours.

The taste of the snack is sweet and sour. If you want to make a spicy dish, add a shot of soy sauce to the recipe. For those who prefer a spicy snack, use coriander seeds.

  • Squid carcasses – 3 pcs;
  • Paprika – 1 tsp;
  • Vegetable oil – 100 g;
  • Provençal herbs – 1 tsp;
  • Allspice – 2–3 pcs;

Those who have tried regular marinated squid more than once may like the original recipe for a hot appetizer. It will perfectly complement any feast and will appeal to household members as a complement to a regular dinner or lunch. To prepare you will need:

  • three carcasses of frozen squid;
  • one teaspoon of sweet paprika;
  • one teaspoon of Provençal herbs;
  • one tbsp. spoon of lemon juice;
  • two cloves of garlic;
  • two tbsp. spoons of vegetable oil;
  • three or four peas of allspice;
  • bay leaf, ground pepper, salt to taste.

The carcasses are defrosted, doused with boiling water and cleaned of films and entrails. In a deep frying pan, heat the vegetable oil with spices and lemon juice until boiling. Meanwhile, the meat is cut into thin rings or strips and dried in a known manner. Place all the chopped meat into the boiling marinade and simmer for 1-2 minutes.

After this time, turn off the heat under the frying pan, cover it with a lid and let the seafood brew and absorb the aroma of the marinade for another two minutes. It is best to serve this appetizer in a special dish with a lid or even in a small tureen. You can prepare a hot appetizer in advance, since after heating it in the oven or microwave it will only become more flavorful.

In the store they are sold in jars so small that they are literally enough for an amateur. And it's a bit expensive for the money. But preparing them is as easy as shelling pears, and it will take so little time that you can cook them between other things, just playfully.

In our country, friendship with squid began not so long ago, in late Soviet times, so not everyone knows how to cook them, and they don’t even know how to boil them correctly. If you are not confident in your knowledge and strive to become a culinary master, you are welcome.

The recipes I present at home have been tested many times and checked for the amount of ingredients. Preservatives for pickling include vinegar, lemon juice, soy and tomato sauce. If you like a soft marinade, choose the middle option - keep the first recipe, with lemon.

Tip: When defrosting food, first immerse it in cold water. After complete defrosting, pour hot water over it - the thin skin will come off much easier.

With parsley

Marinated squid rings with parsley are usually served as a cold appetizer along with a glass of dry wine. The nutritional value of the treat reaches approximately 128 kcal per 100 g serving. According to the recipe, seafood becomes soft and moderately spicy.

To improve the taste, it is advisable to make the dish in the evening and leave it in the refrigerator until the morning.

The process of marinating squid is shown in the following stages:

  1. Peel the garlic, chop with a knife and place in a bowl.
  2. Remove the zest from the lemon and add to the garlic.
  3. Cut the chili pepper into rings, after removing the seeds. Place the product with the rest of the ingredients.
  4. Wash the parsley, chop with a knife and add to the bowl.
  5. Squeeze the juice from the lemon and pour it over all the listed ingredients.
  6. Add sweet chili sauce and olive oil.
  7. Add salt and mix everything thoroughly.
  8. Remove the chitinous plate, tentacles and fins from the squid.
  9. Rinse the carcass well and cut into rings.

  10. Fry the seafood in a frying pan with olive oil for 3 minutes.
  11. After the time has passed, add the prepared marinade and mix. It will take 60 minutes to marinate the ingredient.
  12. Place the squid along with the sauce in a salad bowl and serve.

Cooking a dish step by step with photos

Step 1

To prepare this simple and tasty cold appetizer, take squid (I use fresh frozen), water, lemon juice, refined vegetable (in my case, sunflower) oil, salt, sugar, bay leaf and allspice.

Step 2

The most important rule, following which you will always get soft and tender squids, is not to overcook them. If this happens and you keep them in boiling water, you will have to soften these cephalopods by cooking longer - at least 35-40 minutes after boiling. I always do this: let the squid completely thaw, rinse it under cold running water, remove the insides and the transparent spine. Then I pour cold water into the pan and place it on the stove over medium heat. The water should boil well and that’s when I add the squid. They instantly thicken, change color, and almost all of the skin comes off on its own. The squid will be ready as soon as the water boils for the second time - this will happen after about 2.5-3 minutes.

Step 3

We simply wash the finished squid under cold running water and remove the remaining skin with our fingers (there is very little of it). Do not forget to remove the entrails, if there are still some left inside the carcasses.

Step 4

Now cut the squid into rings or random pieces, whichever you like best. Just don’t make it too small, as then it will be inconvenient to pick up the marinated squid with a fork or chopsticks.

Step 5

All that remains is to prepare the marinade for the squid. To do this, pour 500 milliliters of water into a small saucepan, add lemon juice, salt, sugar, a couple of bay leaves and a few peas of allspice. In general, you have the right to choose seasonings and spices according to your taste, but I have the simplest option. Bring the marinade to a boil so that the sugar and salt dissolve, remove the pan from the stove.

Then transfer the squid pieces into the hot marinade. Add odorless vegetable oil, mix everything and let cool completely.

Step 7

After this, you can transfer the marinated squid along with the marinade to a container more suitable for storage. After 5-6 hours in the refrigerator, delicious marinated squid will be ready. It’s even better to leave them in the cold for a day so that they are thoroughly saturated with the taste and aroma of the marinade.

Serve marinated squid as a cold appetizer, garnished with slices of fresh lemon. It turns out to be an amazing dish, believe me! Better yet, check it yourself.

With onion

Marinated squid (the homemade recipe allows you to use onion rings) can be served as a cold appetizer. It is suitable for everyday use and holiday cooking. The seafood comes out quite soft and moderately spicy.

What ingredients will you need?

Required set of ingredients for marinating 4 squid carcasses:

  • laurel leaf – 2 pcs.;
  • onion head – 75 g;
  • sunflower oil – 30 ml;
  • lemon juice – 100 ml;
  • salt – 1 pinch.

The onion must be red because it has a less bitter taste. When using a regular onion vegetable, it is advisable to marinate it in a vinegar solution or pour it over with boiling water to reduce the bitter taste.

If you don’t have freshly squeezed lemon juice, you can use 9% table vinegar. You can take olive oil in a similar volume.

The steps for making the pickled snack are given below:

  1. Rinse the carcasses under water and remove the film.

  2. Boil water and add bay leaf there. Add 1 squid and boil for 10 seconds. after the liquid boils. Remove the cooked seafood by repeating similar steps with the remaining carcasses.
  3. Cool the cooked squid and cut into long strips.
  4. Chop the peeled onion into thin half rings and add to seafood.
  5. Add oil, vinegar and salt to the mixture. Stir the mixture and place it in the refrigerator for 2 hours to marinate.

  3. Pour the hot marinade over the chopped carcasses, stir and leave until completely cooled.

The product can be preserved without preliminary boiling.

You will need:

  • Squids, carcasses – 6 pcs.
  • Water – 0.7 liters.

Seasonings for marinade:

  • Bay leaves - a couple of pieces.
  • Vegetable oil – 2 tbsp. spoons.
  • Sugar – 1 teaspoon.
  • Black pepper.
  • Lemon juice – 4 tbsp. spoons.
  • Salt – 2 teaspoons.

Marinate squid according to this recipe:

  1. Thaw the squid carcasses, clean them of plates and thin skin.
  2. Cut into rings and strips, the width does not matter, do as desired.
  3. Make the marinade: Add the marinade seasonings to the water and let it boil. Without allowing the marinade to cool, pour over the squid.
  4. Stir and leave until completely cool. There is an option - keep it in the marinade longer, for several hours, but not longer than 12 hours, there is not enough exposure - try it right away.

The squid will arrive just fine, it won’t be raw, believe me. You shouldn’t keep it longer, they will be too sour. You can hold it longer if you are a fan of rich sour taste, make your decision carefully, I warned you about the consequences.

It is advisable to eat the squid immediately; if there is any left, put it in a jar and fill it with vegetable oil. Place a lemon slice on the bottom of the jar and on top of the rings. And in the refrigerator!

In tomato sauce

Marinated squid rings can be additionally fried in a frying pan with oil to make them more appetizing. It will take no more than 2 minutes to cook.

If seafood is overcooked, it will taste like rubber.

What ingredients will you need?

List of products that will be required to make the dish:

  • squid – 4 pcs.;
  • ground white pepper - a pinch;
  • lemon – 75 g;
  • sunflower oil – as needed;
  • adjika – 40 g;
  • salt with spices - at your own discretion;
  • tomato-based sauce – 50 g.

Adjika should be hot. Instead of tomato sauce, you can use juice or paste diluted with water. However, the taste will change when replacing the ingredient.

The step-by-step process for making pickled treats is given below:

  1. Clean the squid carcasses and chop into rings.
  2. Combine tomato sauce with spices and adjika. Squeeze the mixture and add salt and freshly squeezed lemon juice.
  3. Place the squid rings in the marinade and leave to marinate overnight.
  4. The next day, transfer the marinated seafood into a preheated saucepan with sunflower oil and quickly fry until golden brown.

It will take you at least 3 hours to prepare marinated squid according to the photo recipe.

We count 20-25 seconds, and, taking it out of the water, rinse thoroughly under running cold water. Thanks to boiling water, the squid skin immediately curls up and is much easier to remove from the carcass. Don’t forget to take out the insides (if any) and also rinse everything inside the “stocking” well. Boil water in a small saucepan and throw in half of the prepared spices (peppercorns and bay leaves), boil for a couple of minutes and add clean squid.

After boiling, cook for no more than one minute, then close the pan with a lid and leave for five minutes alone. Now you can safely eat the squid meat - it is ready. We cut the squid into rings and strips (as is more convenient) with a width of at least 3 mm, and the garlic into very thin slices.

Place the chopped products in a glass or enamel bowl (or in a jar). Squeeze the juice from half a lemon; the other half will be useful later.

Squid can be marinated with bell pepper, which will make the dish more juicy and nutritious.

Cooking will take no more than 3 hours, but for better saturation with brine, it is advisable to soak the seafood for 5 hours.

  • wine vinegar – 15 ml;
  • onion head – 75 g;
  • frozen seafood - at your discretion;
  • boiled water - as needed;
  • celery root - at your discretion;
  • bay leaf - to your taste;

  • salt, pepper, spices - at your discretion;
  • garlic - 3 cloves.

It is advisable to use refined olive oil.

  4. Place the above products in a container, add soy sauce and mix thoroughly.
  5. Pour water into the pan, add vinegar, butter with granulated sugar, allspice and salt and, stirring, bring the contents to a boil.
  6. Treat the jars with boiling water and fill 2/3 with a seafood-based mixture.
  7. Fill the remaining space with marinade and roll up the containers with lids.

  • The color of the skin will be affected by the age and habitat of the squid, so it will almost never be monochromatic. The color can be brown and also vary from light lilac to gray-pink.

  • Under the skin, the shade of the meat must be light cream. After several defrosts, the color becomes purple or yellow. Similar shades may indicate that the seafood was colored with dyes that were present in the packaging material. If the squid has been treated with chemicals, its color will be milky white.
  • Fresh and high-quality meat must be elastic and dense in consistency.
  • The packaging containing seafood must be free of large accumulations of snow and ice.

The recipe for marinated squid is quite simple and includes a minimal set of ingredients. When making treats at home, you can add a variety of spices with onions, carrots and soy sauce to make the taste more pleasant and rich.
