All this is boiled for a couple more minutes, flavored with chopped herbs and removed from the stove.

Possible harm

Despite the many beneficial properties that sausage cheese can have on the human body, do not forget that it is a fatty product. It is high in saturated fats, which are sources of cholesterol. Frequent consumption of this fermented milk product can lead to increased levels of cholesterol and triglycerides in the blood, dyslipidemia, which subsequently threatens lipid metabolism disorders and an increased risk of atherosclerosis.

In the process of making this type of cheese, salt is added to it in large quantities. Salt, or sodium chloride, is not only a flavoring additive, but also a preservative that is necessary in the product to increase its shelf life. But salt not only adds flavor to cheese, it is also a source of sodium and chlorine ions. They are required by the body in moderation, since they take an active part in many metabolic processes. Excess sodium and chlorine contributes to fluid retention in tissues, which manifests itself in the form of edema and decreased diuresis.

During the smoking process, specific substances accumulate on the surface and inside the cheese loaf - benzopyrene and other carcinogens. These are common volatile combustion products of biofuels, which are always formed during frying over an open fire or smoking. Often entering the human body, benzopyrene is capable of causing gene mutations in the cells where it enters. As a result, this leads to disruption of the cell reproduction process and the development of neoplasms.

Carcinogens with food enter the digestive tract, adversely affecting the cells of their mucous membrane. Being absorbed into the blood, benzopyrene promotes the progression of sclerotic changes in the walls of blood vessels.

Food additives (melters, flavorings, dyes, acidity regulators and others), which are present in abundance in sausage cheeses, are strong allergens. They can cause allergic reactions not only in experienced allergy sufferers, but also in people who are not prone to them.

Considering the number of harmful properties of sausage cheese, it is not recommended for consumption by people suffering from:

  • cardiovascular diseases (atherosclerosis, hypertension, coronary heart disease, cerebral ischemia);
  • diseases of the digestive system (gastritis, pancreatitis, hepatitis, intestinal diseases);
  • allergies of various origins;
  • obesity;
  • kidney pathologies (with impaired excretory function);
  • endocrine diseases (diabetes mellitus, hypothyroidism, hyperaldosteronism).

The consumption of this type of cheese is contraindicated for children, pregnant women, breastfeeding, and the elderly. During these periods of life, metabolism has its own characteristics, which can affect the functioning of the digestive and other systems of the body. In addition, preservatives and other food additives are harmful to a growing and aging body.

How is it produced?

For the first time, such processed cheese was produced in Scotland from rennet cheese that had been lying around for quite a long time. To save the product from drying out completely, it was mixed with baking soda and fatty oil and melted all this in a water bath into an elastic mass, forming small bars resembling sausage in shape. Subsequently, production technology changed, some ingredients appeared and others disappeared. Currently, the entire process of making such cheese takes several stages.

  • Rennet cheeses are mixed using a special machine with the remaining ingredients. Depending on the recipe, it can be cottage cheese, butter, cream or other fermented milk products.
  • The entire mass is melted in a large cauldron and poured into solid molds.
  • Chilled cheese bars are treated with natural sawdust smoke. Some manufacturers, in an attempt to save money, use liquid smoke, which is not very useful for the human body. This fragrant liquid is added at the first stage, when mixing all the ingredients.
  • Frozen sausages are packed with vacuum film and transported to store shelves.
