Before you start cooking lard, you need to properly prepare it. To do this, be sure to scrape the lard skin to remove any remaining dirt. For those who don’t like the skin (and it can be tough), we recommend cutting it off.
To prepare any of the recipes listed above, you need to choose the right pan. Onion peels stain not only the lard, but also the walls of the pan, so choose one with a Teflon coating. Anything enameled will quickly turn brown and be difficult to clean.
