Before forming such unusual sweet products, you should knead and subsequently bake the shortbread dough. To mix it you need to purchase:

  • light wheat flour – about 300 g;
  • fresh butter – 60 g (pre-melt);
  • cocoa powder – 3 large spoons;
  • baking soda (it is not necessary to extinguish with vinegar) - an incomplete dessert spoon;
  • fine table salt - a small pinch;
  • granulated sugar - 2 large spoons;
  • semi-sweet white wine – faceted glass.

Preparing the base

If you follow all the rules for making straws, you will definitely get tasty and crispy cannoli. The recipe for such products includes fairly simple and affordable ingredients. Due to the fact that this dish is based on a large amount of alcoholic drink, the dessert is not recommended for children. Otherwise, the wine must be replaced with regular milk. Thus, you should mix melted butter, light wheat flour, cocoa powder, granulated sugar, fine table salt and a semi-sweet alcoholic drink in one bowl. As a result, you should get a soft, elastic and homogeneous chocolate-colored dough, which must be placed in a bag and kept in the refrigerator for at least an hour.

Helpful information

The width and length of traditional canollas can vary and depend on the region in Italy where such a delicacy is prepared. It is worth especially noting that today the presented dessert is extremely popular not only in the above-mentioned European country, but even in the USA, where the recipe for their preparation came back in the 1900s thanks to emigrants.

Cover with cling film and place in the refrigerator for 30 minutes. After the dough has rested, roll it out thinly and cut out circles.

We roll the dough into tubes and glue the ends with egg white so that they do not come apart during frying.

Place on a paper towel to absorb excess fat.

The finished cannoli can be placed in an airtight container and stored for about a month, filling with cream as needed.

Properly prepared cannoli should be crispy and have little bumps like this:

Preparing the cream.

Grind the ricotta with powdered sugar. It should be creamy and without lumps. If this is not the case for you, then first grind it through a sieve. Then add drops of chocolate (unfortunately, I had to add grated chocolate, but this is not recommended, because the ricotta loses color and you don’t feel the crunch of the chocolate in the cannoli).

Using a pastry bag, fill the cannoli and sprinkle with powdered sugar. Serve immediately, because... After just a few hours, the cannoli becomes soft.

This site is dedicated to self-learning Italian from scratch. We will try to make it the most interesting and useful for everyone who is interested in this beautiful language and, of course, Italy itself.

Interesting about the Italian language.

History, facts, modernity. Let's start with a few words about the modern status of the language; it is obvious that Italian is the official language in Italy, the Vatican (simultaneously with Latin), in San Marino, but also in Switzerland (in its Italian part, the canton of Ticino) and in Several districts in Croatia and Slovenia, where a large Italian-speaking population lives, Italian is also spoken by some of the residents on the island of Malta.

Italian dialects - will we understand each other?

In Italy itself, even today you can hear many dialects, sometimes it is enough to travel only a few tens of kilometers to encounter another of them. Moreover, dialects are often so different from each other that they can seem like completely different languages. If people from, for example, the northern and central Italian “outback” meet, they may not even be able to understand each other. What is especially interesting is that some dialects, in addition to the oral form, also have a written form, such as the Neopolitan, Venetian, Milanese and Sicilian dialects. The latter exists, accordingly, on the island of Sicily and is so different from other dialects that some researchers distinguish it as a separate Sardinian language. However, in everyday communication and, especially, in large cities, you are unlikely to experience any inconvenience, because... Today, dialects are spoken mainly by older people in rural areas, while young people use the correct literary language, which unites all Italians, the language of radio and, of course, television. It may be mentioned here that until the end of the Second World War, modern Italian was only a written language, used by the ruling class, scientists and in administrative institutions, and it was television that played a big role in the spread of the common Italian language among all inhabitants.

How it all began, origins

The history of the formation of modern Italian, as we all know it, is closely connected with the history of Italy and, of course, no less fascinating. Origins - in Ancient Rome, everything was in the Roman language, commonly known as Latin, which at that time was the official state language of the Roman Empire. Later, from Latin, in fact, the Italian language and many other European languages arose. Therefore, knowing Latin, you can understand what a Spaniard is saying, plus or minus a Portuguese, and you can even understand part of the speech of an Englishman or a Frenchman. In 476, the last Roman emperor, Romulus Augustulus, abdicated the throne after the capture of Rome by the German leader Odocar, this date is considered the end of the Great Roman Empire. Some also call it the end of the “Roman language”, however, even today disputes still rage as to why exactly the Latin language lost its relevance, because of the capture of the Roman Empire by barbarians or was it a natural process and in what language? spoken towards the end of the Roman Empire. According to one version, in ancient Rome by this time, along with Latin, the spoken language was already widespread, and it is from this popular language of Rome that the Italian that we know as Italian of the 16th century comes from, according to the second version, in connection with the invasion of the barbarians Latin mixed with various barbarian languages and dialects, and it is from this synthesis that the Italian language originates.

Birthday - first mention

The year 960 is considered the birthday of the Italian language. This date is associated with the first document where this “proto-vernacular language” is present - vulgare, these are court papers related to the land litigation of the Benedictine Abbey, witnesses used this particular version of the language so that the testimony would be understandable to as many people as possible, until this moment in all official papers we can only see Latin. And then there was a gradual spread in the ubiquitous life of the language vulgare, which translates as the people's language, which became the prototype of the modern Italian language. However, the story does not end there, but only becomes more interesting and the next stage is associated with the Renaissance and with such well-known names as Dante Alighiere, F. Petrarch, G. Boccaccio and others. to be continued…

How to make airy and sweet cream?

Sicilian canolli, the recipe of which is based on soft Mascarpone cheese, turns out to be the most delicious and tender. To make such an unusual filling, you need to beat the presented dairy product with a hand whisk or mixer, gradually adding powdered sugar, rum and heavy cream to it. The resulting mass should be placed in the refrigerator, and then immediately begin preparing the other part of the cream. To do this, you need to break chicken eggs and separate the whites from the yolks. We don't need the last component, so it can be used to prepare some other dish. As for the whites, they need to be cooled a little and then beaten vigorously until they form stiff peaks. After this, both parts of the filling need to be combined in one bowl, mixed thoroughly and refrigerated for half an hour.

Origin story

Cannoli is a traditional Italian dessert originating from Sicily. It is a wafer roll with curd filling .
The word canolli itself is translated from Italian as “small tube”. The dessert may vary in size depending on the traditions of the region. It can be either the size of a finger or the size of a large fist. The cakes were originally sold at fairs and Italian carnivals. Now this sweetness is sold at every step, and it is consumed both during holidays and on weekdays . Italians consider this dessert a winter dessert, since its filling consists of dairy products that will quickly spoil in the hot summer.

Sicilians call cannoli “mafia sweetness”, because the heroes of the film “The Godfather” constantly ate it. The dessert is also popular in the United States, where its recipe was brought by the first Italian emigrants.

The process of forming and baking the base in the oven

Chocolate cannoli tubes are fairly easy to form. To do this, you need to remove the dough from the refrigerator, roll it out into a sheet 5-6 millimeters thick, and then cut it into squares with sides of 7 centimeters. After this, all products should be beautifully wound onto special molds. If you don’t have such devices in your home, you can make them yourself from thick foil. Finally, the tubes must be placed on parchment paper and placed in a preheated oven for 18-20 minutes. During this time, the products will be completely baked, become crispy and very tasty.

How to beautifully decorate a dessert and fill it with cream?

Sicilian canolli, the recipe for which we are considering, can be decorated in different ways. We decided to present to your attention the simplest, but at the same time original method. To do this, you need to melt a white chocolate bar with the addition of a few spoons of fresh milk, and then grease the sharp ends of the chocolate tubes with the resulting glaze. After the sweet mass has hardened, you need to squeeze a small amount of cheese cream into the hollow part of the base with a culinary syringe. Next, you should beautifully place bright multi-colored candied fruits into the filling.
