The cake comes out delicious, literally melts in your mouth. And the most amazing thing is that even experienced confectioners admit that this is almost the most successful honey cake recipe they have ever come across.

So, we will need:

• 3 eggs • 150 g honey • 100 g butter • 100 g sugar • 1.5 tsp. slaked soda • 350 g flour

• 750 g sour cream 20% • 300 g cream 30%-38% • 270 g sugar • 15 g vanilla sugar

Grease a baking tray well with oil or line it with baking paper. Place 1/5 of the dough (approximately 170 g) in the center of the baking sheet. Take a lid from a pan or a large plate with a diameter of 25-26 cm. Lightly spread the dough into a circle with a spoon, spatula or just your hand. The cake should be 1-2 cm larger than the lid.

Place a baking sheet on a medium level in an oven preheated to 200 degrees. Bake for 5-8 minutes (it usually takes 8 minutes) until the cake has darkened to a brownish-reddish hue; At the same time, the edges should not darken or dry out. Cut the finished cake, while it is still warm, with a knife along the contour of the lid (or with the lid itself, if it has sharp edges). Bake the remaining cakes in the same way - you get 5 pieces in total. If you want the cakes to be more even and the cake to come out more beautiful when cut, you can put a press on the still warm cake for a while (after covering it, for example, with a cutting board).

Prepare the cream and topping:

Whip the cream until thick. Add sugar, vanilla sugar, sour cream and beat until sugar dissolves. Grind the cake scraps in a blender or crush with a hammer.

Place the first cake on a large plate and spread with about 1/5 of the cream. There is no need to spare the cream; its layer should be quite thick. Place a second cake layer on top of the cream and brush it with the same amount of cream. Repeat the same with the remaining cake layers, including the top one. You also need to coat the sides of the cake with cream. Sprinkle with honey crumbs on top and sides. Place the finished cake in the refrigerator to soak for 3-4 hours, or even better, overnight.

With custard

I'll tell you a big secret. Every housewife should have her own unique taste of borscht and, of course, honey cake. It's like perfume. Every woman has her own scent. That's how honey cake is! At the dacha, when I can’t even think about work, I really like to pamper my family with an unusual honey cake. Especially when a neighbor brings a jar of freshly pumped honey. Ingredients. Dough.

  • Flour - three glasses.
  • Sugar - one glass.
  • Butter – 60 g
  • Eggs – 2 pieces.
  • Soda – 1.5 teaspoon.
  • Honey – 2 tablespoons.

Cream.

  • Milk – 1 liter.
  • Granulated sugar – 1 cup.
  • Flour – 2 tablespoons.
  • Butter – 50 g
  • Egg – 1 pc.
  • Vanilla – 1 sachet.

Preparing the dough.

  1. Take a bowl that you can put on the fire. Mix 1 cup of sugar and honey in it.
  2. Break two eggs and mix well again.

  3. Heat the butter a little in the microwave until it becomes soft. We also throw it into a bowl and stir everything.

  4. Prepare a water bath. Place a container with the mixture on it. It should not touch the water. This is done to ensure that the heating is only hot steam.
  5. Stir constantly until the sugar is completely dissolved. Add baking soda while continuing to stir. The mixture will greatly increase in volume (twice) and become like foam.

  6. Remove from the water bath and add flour, stirring constantly.

  7. When we feel that the dough can no longer be mixed with a spoon, you can put it on a cutting board sprinkled with flour and continue working with your hands.

  8. After kneading the dough until elastic, divide it into 8 parts. Subsequently, we will prepare cakes from them. First, we need to cool them down.

  9. Place them in a bowl, cover with cling film and place in the refrigerator for an hour.

While our preparations are in the cold, we have free time to prepare the custard.

Making custard.

  1. Mix a glass of sugar, an egg and two tablespoons of flour thoroughly. Then add 1 glass of warm milk.
  2. Heat the remaining three glasses of milk until almost boiling. Pour the prepared mixture into it and continue stirring vigorously so that no lumps appear.

  3. Cook over low heat until it thickens.
  4. At the end add vanilla sugar.
  5. Cool the finished cream a little, add butter (40-50g) and beat.

  6. Cover it with cling film so that it touches it tightly. Otherwise, a crust that we don’t need will form on top.
  7. Leave to cool to room temperature.

Preparing the cakes.

  1. Each lump must be carefully rolled out to form a very thin layer. The cakes will rise while baking. Excessive thickness will give our Honey cake dryness.
  2. Having rolled them out, we give each one the same round shape. When trimming, you can take a plate that is suitable in size as a template. What we cut off will also be useful to us. From this, after baking, we will make crumbs for topping.

  3. We bake the cakes on a baking sheet lined with parchment. The oven should be preheated to 180 degrees. Bake either bottom or top until golden brown. Usually this takes 5-7 minutes.
  4. Let the cakes cool.

We prepare the honey cake ourselves.

  1. Place the first cake layer on a flat plate.
  2. Evenly coat it with cream (I use about 3 spoons for each). And so all eight.
  3. We coat the resulting slide on all sides. Some then sprinkle it with crumbs, others decorate it with fruits and candied fruits. Place in the refrigerator for 5-8 hours. To captivate you with its taste, the cakes must be well soaked.

  • Baking powder or soda - a teaspoon.

Let's cook!


  1. Place a bowl of honey and butter in a water bath.

  2. In another container, beat eggs with sugar and a pinch of salt. Cool the mixture with honey slightly and mix with the contents of the second bowl. Beat until the mass is homogeneous. Be sure to sift the flour (this not only cleans it, but also saturates it with oxygen). Add it in pieces, along with baking powder, to the prepared mixture. We keep interfering.

Honey cake (step-by-step recipe) - general principles of preparation

The dough for honey cake can be made either liquid or stiff. From the first option, one whole biscuit is baked and then divided into several parts. The second version of the dough is immediately divided into 6-9 parts and rolled one by one into a layer. Each layer is baked for several minutes in the oven.

The classic honey cake is layered with custard. But you can also use buttercream, whipped cream or sour cream if you prefer.

It is better to first put the assembled honey cake in the refrigerator for a couple of hours, and only then serve it to the table. During this time, the cakes will have time to soak, and the cake will turn out juicy and soft.

Cake recipe in a frying pan at home with cheese curd cream

In this recipe, the cakes are coated with Cheese curd cream. For this, I recommend using fatty, pasty cottage cheese. You can even buy baby curd mass. If you have a regular grain one, then I recommend rubbing it through a fine sieve, but not a metal one, but a nylon one.

This cream perfectly saturates the Honey cake and turns out very tasty and tender.

  • 240 gr. flour;
  • 1 egg;
  • 1 yolk;
  • 120 gr. Sahara;
  • 65 gr. butter;
  • 30 gr. cocoa;
  • 2 tbsp. l. honey;
  • 1 tsp. soda without a slide;
  • a pinch of salt.

For the Cheese curd cream:

  • 180 gr. cottage cheese;
  • 180 gr. sour cream 20%;
  • 400 gr. cream 33-35%;
  • 100 gr. powdered sugar.

Melt the butter in the microwave or in a water bath.

Break eggs into a saucepan, add cocoa, sugar, salt, melted butter and honey. Mix everything thoroughly until smooth.

Place the pan on low heat and bring to a boil while constantly stirring. The sugar should completely dissolve, and the mass should become glossy, smooth and homogeneous. Under no circumstances should it be boiled; just warm it up well. As soon as bubbles begin to appear, remove the pan from the heat.

Immediately add soda to the hot mixture and stir it thoroughly with a spatula.

It will lighten a little and increase slightly in volume.

Cool the chocolate mass and add sifted flour to it in portions. Mix carefully with a spatula so that there are no lumps.

When the dough becomes thick, transfer it to a floured table and knead with your hands.

It turns out very soft, flexible and delicate.

Divide the dough into 8 parts, roll each into a ball.

Place them on a plate sprinkled with flour, cover with cling film and place in the refrigerator for 40-50 minutes.

Roll out the chilled dough into circles.

Prick them with a fork to prevent them from puffing up during baking.

Place the frying pan on the stove over low heat. Place a circle of dough on it and bake it without adding oil, on both sides.

We bake the first side for 21 minutes, and 20-30 seconds is enough for the second.

How do you know if you can flip the cake? Gently try it with a spatula, if it is too loose, then let it bake a little more, but if it can be easily moved, then turn it over immediately.

Transfer the finished cakes to a board or wire rack and let them cool completely.

While they are cooling, let's prepare a delicate, curd cheese cream.

Using an immersion blender, beat cottage cheese, sour cream and powdered sugar.

Separately, whip very cold cream. First, beat at low speed, and then gradually increase it to medium. They should increase slightly in volume, become fluffy and strong.

Gently mix the cream into the curd and sour cream mixture. We do this with a spatula so that the cream does not settle.

Spread the finished cooled cakes with Cheese curd cream, not forgetting the sides and top of the cake.

If desired, it can be sprinkled with crumbs from the cake trimmings.

Coconut shavings, grated chocolate or nuts are also suitable for sprinkling.

Of course, Honey cake should be allowed to soak for 2-3 hours, but from my own experience I know that this is almost impossible. Personally, I don’t even have time to sprinkle crumbs on the cake before my household starts cutting it.

“Honey cake” with prunes and walnuts

What you will need:

  • Wheat flour - 2.5-3 cups.
  • Butter, sugar - 100 g each.
  • Honey – 1 glass.
  • Egg – 3 pieces.
  • Soda – 1 teaspoon.

For cream:

  • Sour cream (fat) – 2 cups.
  • Cream (heavy) - one and a half glasses.
  • Granulated sugar - half a glass.
  • Prunes, walnuts – 300 g each.

How to cook:

  1. In a container we collect all the ingredients needed for the dough, except flour. Let's send them to a steam bath. Stir and wait until the consistency is uniform.
  2. Let it cool slightly. We begin to gradually add flour and make the dough. Place the finished mixture in the cold. It is preferable if she stands there all night.
  3. In the morning, let it sit for a couple of hours at room temperature. The dough is liquid, so place it on a baking sheet using a spoon. You can use the rim of the mold and fill it with two full spoons of dough.
  4. Cook each cake (there should be five of them) for about 8-10 minutes. The oven temperature must be kept within 180 degrees.
  5. For the cream, beat sugar with sour cream in the first bowl, and cream in another. Combine both mixtures.
  6. Cut the prunes into pieces and chop the nut kernels.
  7. Coat the cakes with cream and, alternating, sprinkle with either prunes or nuts.

When you prepare a cake for your family, of course, you don’t have to decorate it. Personally, I don’t even have time to sprinkle crumbs on it, let alone build any other decorations.

But it’s another matter when the cake is intended for guests. Here, even you yourself somehow want to show off your skills, so that you will be praised and certainly surprised by your talents.

I like it when the cake is decorated simply, inexpensively and tastefully. Those. when this can be done in normal home conditions and does not require any overly complex and costly technologies or products.

Chocolate honeycomb with bees

For this decoration you will need a piece of packaging film with pimples. This is the same film that not only children, but also adults love to clap.

  • a piece of bubble wrap;
  • 1 bar of white chocolate;
  • 50 gr. liquid honey;
  • 20 gr. sugar mastic;
  • food paint yellow, black.

  • 1 bar of milk or dark chocolate;
  • 60 ml cream 30%;
  • 2 large tangerines;

  • half a pomegranate;
  • 7-10 blackberries;

Heat the cream until hot and pour it over the chocolate.
