Flaxseed jelly: benefits and harms, how to cook

Chemical composition of flaxseed jelly

Flax is a traditionally grown crop in Russia. Kissel made from its seeds has good taste and is of great benefit to the body.

There are more than 100 amino acids in living beings, but only 12, the so-called fundamental ones, are synthesized from them, the rest (essential) enter the body with food. The absence of any amino acid affects the physical condition of a person:

  • lack of valine leads to impaired coordination of movements;
  • the immune system suffers from a lack of lysine;
  • the absence of methionine threatens muscle weakness, functional liver disorders, and nervous disorders.

Linumin (flax protein) contains a full composition of essential amino acids.

Lignans are plant-derived hormones, antioxidants that prevent the development of tumors. The jelly contains: 53579 mcg per 100 g of dry matter. By comparison, flaxseed oil contains little or no oil. The effect of plant estrogens on the human body has not been sufficiently studied.

The jelly contains unsaturated fatty acids with an increased number of double bonds (omega-3, linolenic, arachidonic). In combination, they form vitamin F, which reduces the level of “bad” cholesterol in the liver and improves blood circulation in the vessels.

Jelly contains a lot of potassium, which (in terms of dry weight) is 7 times more than in bananas.

With peas

Peas add an additional set of amino acids to the jelly, which are involved in metabolism.

Recipe:

  1. Peas are fried and ground into flour using a blender or coffee grinder. In total you need half a glass (125 g).
  2. The ground mass is poured into a glass of water and boiled, stirring occasionally.
  3. To get pea jelly with warm linseed oil, you must first cool it. The oil should be at room temperature.

Nutritional value and calorie content of flaxseed jelly

Flax seed carbohydrates are distinguished by one feature - the content of water-soluble polysaccharides (pentosans). When they are soaked, mucus is formed, which forms the basis of flaxseed jelly. Grains in their shell have dietary fiber, which is represented by fiber, cellulose, pectin and lignin. They are classified as indigestible carbohydrates. They are not digested, but these nutrients are necessary for the intestinal microflora. The energy value consists only of the main nutrients: carbohydrates, fats, proteins.

Minerals and vitamins, for all their nutritional benefits, do not have any calorie content. The caloric content of nutrients in 100 g of flax seeds is 534 kcal, in the finished jelly - 250 kcal. It should be noted that the energy value is not represented by carbohydrates (there are few of them - 1%), but by proteins (18.3 g) and the composition of useful unsaturated acids (40.6 g).

With fermented milk

The recipe is used to enhance intestinal motility, gently relieve constipation, and restore intestinal microflora. For preparation, they do not use ready-made kefir, but home-fermented milk.

  1. In a liter of warm milk, stir 4 tablespoons well. kefir or sour cream.
  2. Leave for 8 hours in a warm place: near a radiator (carefully turning the container), in a yogurt maker, in a slow cooker.
  3. Pour 30 g of flaxseeds into 500 ml of boiling water and leave for 8 hours, or in a thermos.
  4. After the time has elapsed, the ingredients are mixed, left for 2 hours, and taken as an addition to food or as an independent dish.

Flaxseed jelly in a thermos

There is an opinion that infusing jelly in a thermos is harmful. The reason is the oxidation of the product when it comes into contact with a metal flask and the high temperature of the water. There are many arguments for and against this statement.

In favor:

  • there are thermoses with a glass flask, but even if it is metal, there will be no harm, because stainless steel is very inert and cannot oxidize anything in a short time;
  • the main oxidation of fatty acids occurs with free access to oxygen and light, while the flask is tightly sealed with a stopper;
  • the composition of the jelly with substances extracted from the seeds is determined only by the temperature and cooling rate.

In the debate about whether jelly made from flaxseed flour brewed in a thermos is beneficial or harmful, one thing is obvious: this method of steaming has proven itself to be beneficial for inflammatory processes of the gastrointestinal tract, has been tested by time and is based on the experience of more than one generation. It is not difficult to prepare healthy jelly without harm to health.

If you systematically violate the rules of intake and the quantitative norm of seeds during pregnancy, then instead of a healthy drink, there is a risk of getting a toxic one. Scientists have not studied the mechanisms of the influence of plant hormones on women during breastfeeding, so it is better to avoid this drink.

Flaxseed infusion should be taken with caution for calculous cholecystitis. This is a strong choleretic agent that can move gallstones. Kissel has a small concentration of seeds and will not cause harm, but in case of acute exacerbations of pancreatitis, cholecystitis, colitis, diarrhea and diabetes, it is better to avoid it.
