Hedgehogs are a very juicy and tender variation on the theme of meatballs. This dish is literally made for family dinners, suitable for even the smallest eaters. It owes its name to its appearance; the “needles” of the dish are provided by the addition of rice to the minced meat.
True, they will stick out funny only if you put the cereal raw, otherwise you will end up with ordinary-looking, but still very tasty meat balls. Moreover, the rice should be long, not round.
For minced meat, you can choose absolutely any type of meat or fish. The main thing is its juiciness. Therefore, we recommend not using beef in its pure form, but diluting it with pork or chicken.
To keep the hedgehogs in shape and increase their satiety, bread crumbs, flour, and breadcrumbs are often added, and carrots and onions will help make the taste fresher. This dish is usually not pampered with spices, limiting itself to the classic salt and pepper.
How to cook meat hedgehogs with gravy?
Although hedgehogs and meatballs are very similar to each other, we do not forget that these dishes are still different. Therefore, in this case, the meat balls should not be fried, thereby depriving them of their very essence - the protruding needles.
To make tomato gravy, you can use ground tomatoes, homemade juice or tomato paste.
Required ingredients:
- 0.5 kg minced meat;
- ½ tbsp. rice;
- 1+1 onion (for hedgehogs and for gravy);
- 1 cold egg;
- 3 tomatoes;

There will be quite a bit of gravy, so whatever the container you choose, its sides should be high. Ideally, lay out all the meat balls in one layer, but if this doesn’t work out, then it’s not a problem, we place them on the second floor.
- For the gravy, fry grated carrots with chopped onions in a frying pan; when the frying is ready, add tomatoes pureed in a blender or paste diluted in water. After a couple of minutes, add flour, mix and continue frying for about 30 seconds, pour in about 3 tbsp in a thin stream. boiling water, stir immediately, allowing the flour to disperse evenly, bring to a boil, continuing to stir.
- Add salt, dried herbs, spices and sugar to the gravy to your taste. The last ingredient is required, otherwise our sauce will lose much of its taste.

If you wet your hands in cool water before starting to form the “hedge”, the minced meat will not stick to your palms.
Steamed hedgehogs are a dietary version of your favorite dish. Once ready, they can be poured with low-fat sour cream diluted in water and simmered for about 5 minutes.
An excellent side dish for hedgehogs would be crushed potatoes, vegetable salad, and buckwheat porridge.
If you pass the minced meat through a meat grinder several times, it will become more tender. Approximately 2 tbsp is used for one “hedgehog”. spoons of minced meat, this volume allows it to stew well and keep its shape.
The total calorie content of a dish depends on each of its ingredients separately. The “lightest” option is made from minced chicken with low-fat sour cream sauce.

and rice, to make it satisfying, tasty and quick, every housewife should know. This combination of products is universal.
It can be used both as an independent dish and as a filling or in addition to other products.
Minced meat in combination with rice and spices is used in culinary masterpieces in almost all countries of the world. After all, these products are available in every kitchen and at any time of the year.
Any dish with these ingredients turns out tasty, satisfying and helps housewives in those cases when they need to quickly feed the whole family using a minimum of ingredients.
Dishes made from minced meat with rice are enjoyed by both adults and children. Despite the ease of preparation, there are several that make any dish made from these products delicious.
Spices
The ideal seasoning for a mixture of these products is salt and black pepper. Spices and aromatic herbs in this case are used carefully and in small quantities.
This is especially true for spices with a strong smell - ginger, cumin, etc., since after cooking the taste of the dish itself will not be felt. They can be added to a side dish or gravy a few minutes before they are ready.
The taste of meat and rice can be enhanced with dried or fresh dill. But it’s better not to add garlic to the minced meat - it gives the meat a sweetish taste.
Onion
This vegetable is not suitable for all minced meat and rice dishes. Passed through a meat grinder, it releases a large amount of juice, and the finished mixture turns out wet, its viscosity is lost.
Finely chopped onion in minced meat can spoil the finished product - it will not have time to reach readiness at the same time.
It is because of half-raw vegetables that many minced meat and rice dishes quickly turn sour. But if you chop it finely and fry it in oil, then when mixed with meat and rice you will get a tasty and tender filling.
Potatoes and carrots
These root vegetables go well with minced meat and rice dishes as a side dish. But you don’t need to add them directly to the mixture in any form.
What can you put in minced meat with rice?
Some housewives add additional binding ingredients to prepare dishes from minced meat and rice - egg, flour, semolina.
They can be used to prepare meatballs, steamed meatballs, and all kinds of casseroles served in broth or sauces. And if minced meat and rice are used as a filling for cabbage rolls, pies or poultry, then this is not necessary.
The egg imparts rigidity and the finished dish turns out dry. To prevent this from happening, pre-boil the rice until half cooked before cooking.
Pilaf with minced pork in a frying pan
Ingredients
- Round rice – 200 g (1 cup);
- Minced pork – 200 g;
- Carrots – 200 g;
- Onions – 200 g;
- Vegetable (sunflower) oil – 80 ml;
- Garlic – 3 cloves;
- Spices for pilaf (turmeric, barberry, coriander, cumin, paprika) – 1 tbsp. l.;
- Salt, black pepper - to taste.
Recipe
- This pilaf recipe uses minced pork, but with beef or mixed minced meat you will also get an excellent result, you just need to fry it a little longer.
- It is best to cook pilaf in a cauldron, or you can also cook it in a thick-bottomed pan. We will cook pilaf with minced meat in a frying pan, but it must have thick walls (preferably cast iron), due to this the dish heats up evenly and cools for a long time, which makes it simmered.
- Heat vegetable oil in a deep and wide frying pan. Add the onion, cut into small cubes, and fry until transparent.
- While the onion is frying, cut the peeled carrots into thin slices. You can grate the vegetable, but I prefer the structure of the finished dish with chopped carrots. Add it to the transparent onion and fry together.
- When the carrots become soft, add minced meat to it. Break it up with a spoon or spatula so it doesn't form lumps, and fry along with the vegetables for another 5-10 minutes. There is no need to make cutlets or meatballs from minced meat; the frequent small inclusions of meat in the finished dish will be much more interesting.
- Add spices to the contents of the pan, salt and pepper to taste. It is convenient to take spices in the “Spices for Pilaf” package, but in this case you need to take a product from a trusted manufacturer. Or you can choose your own spice composition to suit your taste.
- Place washed and dried rice on top of the meat, vegetables and spices. Fry the rice along with the remaining ingredients for about 5 minutes. The oil should be slightly absorbed into each grain of rice, then the minced pilaf will be crumbly and rich.
- It is important to choose the right rice; steamed or wild rice is not suitable for pilaf.
- After the rice turns golden, stick garlic cloves into it and fill it with water - take about 2 cups of boiled water. Make the fire very low and simmer the pilaf under the lid in a frying pan for about half an hour.
- All the water should be absorbed into the rice. If after testing you feel that the rice is still damp, add a glass of water and simmer over low heat for another 10 minutes. Once the pilaf is ready, cover it and set it aside for another 10 minutes.
- The rice turns out fluffy, the vegetables do not turn into porridge, and the minced meat completes the taste and nutritional value of this dish.
- Serve pilaf with minced meat in portions in plates with fresh or pickled vegetables.

What to cook from rice with minced meat
There are many recipes for dishes made from these two products. The easiest and fastest way is to fry or simmer rice with minced meat in a frying pan. You can cook the cereal and meat together in one frying pan, or cook the rice and fry the minced meat separately, and then mix, the result will be equally tasty. This dish is complemented with vegetables, mushrooms, cheese, tomato paste and various sauces.
But there are more complex dishes, which will be discussed below.
Meatballs and meatballs
Meatballs are small balls of minced meat, to which, in addition to meat, rice, eggs, onions, garlic, bread, carrots, cheese and spices are added. Meatballs are fried, stewed, baked, steamed. Most often they are stewed in gravy, which makes the dish more juicy and tender.
The cooking process is simple - first prepare the minced meat, add rice and other ingredients to it to taste and depending on the specific recipe, form balls, fry them in oil, pour in sauce and simmer on the stove.
You can also cook the meatballs in the oven. The sauce is prepared on the basis of tomatoes, sour cream, cream, tomato paste, vegetables, using spices, sugar and flour. The extinguishing process takes 20-25 minutes.
Meatballs are served with vegetable puree, various cereals, pasta or vegetables.
Meatballs differ from meatballs in being smaller in size; they are usually placed in soup.
Another variety of meatballs is lazy cabbage rolls. To prepare them, the same ingredients are used as for regular cabbage rolls, but the minced meat is not wrapped in cabbage, but finely chopped, blanched, mixed with meat and rice and formed into cutlets. These cutlets are fried in oil. Can be stewed in tomato or cream sauce. The dish is served with sour cream.
Stuffed vegetables
These are the most delicious dishes using rice and minced meat, but also the most labor-intensive, which is why many people refuse to cook them.
