It is by this same principle that I usually marinate ribs in the morning like a shish kebab in onions, and after work I push them into the oven along with a vegetable side dish.

And if there is absolutely no free time, or everyone is sitting and looking with hungry eyes, then instead of homemade vegetables I use frozen store-bought mixtures.

We will need:

  • Pork ribs – 1000 gr.
  • Potatoes – 6-7 pcs.
  • Garlic clove – 5 pcs.
  • Tomato – 3 pcs.
  • Bell pepper, carrots, onions - 1 pc.
  • Zucchini – ½ pc.
  • Ground black pepper, salt, spices - to taste.

Preparation:

1. First of all, you need to prepare the ribs and marinate them. To do this, wash the large “accordion” of ribs and cut off excess films from it and be sure to remove bone fragments. For convenience, cut into several wide pieces to make it easier to stack them.

Dry with a paper towel and rub first with a couple of pinches of salt, and then with ground pepper, crushed garlic and your favorite spices through a press, trying to “massage” them directly into the meat.

2. Chop medium or slightly large-sized onions into half rings up to 3 mm thick. Place half of the slices in a “cushion” shape in a deep, wide bowl or saucepan, lightly kneading with your hands to release the juice.

Place the grated pork ribs on top of it. Cover them with a second onion layer and leave for 5-12 hours in a cool place, being sure to close the container.

3. Wash all remaining vegetables well and drain. Peel the skins of the potatoes, zucchini and large carrots, chop them into large cubes and mix them together.

Remove the bell pepper from the seed capsule and cut into thick strips. Remove the stems of the tomatoes and use a sharp knife to turn them into wide wheels up to 3-5 mm thick.

Instead of zucchini, you can use eggplant or pumpkin. Or even replace all the vegetables with a frozen mixture of “Mexican”, “Country” or “Mushroom Glade with Potatoes”.

4. Lightly grease a baking sheet with sunflower oil and lay out first the vegetable cubes in an even layer, then the top of the onion from the pan with the ribs. Place colored pepper slices on it and cover them with tomato rounds. Distribute the marinated pieces of ribs over the surface of the vegetable layers and place the remaining onions on them.

5. Bake in the oven at 180 degrees, covering the first half hour with foil so that nothing burns and stew with steam from vegetable juices.

Then remove the shiny leaf and simmer for another half hour. As soon as the onion begins to dry out and darken slightly at the tips, you can carefully remove it from the ribs and place it in between the meat or remove it from the baking sheet altogether so that the pork is well baked for another 20-30 minutes.

6. Serve in portions, being careful not to disturb the vegetable layers when transferring to plates. Or place the side dish separately on one dish, and the ribs on another, and additionally cut them into single pieces. Guests can serve themselves as much as they want.
