I don’t know exactly how it got its name, but the “Novinka” cake is prepared at home quite often. There is nothing complicated in this recipe, which means that even a novice pastry chef can handle it.

Kefir option

Using the technology described below, you can relatively quickly prepare a delicious homemade dessert. It contains simple budget ingredients, the main part of which every prudent housewife always has. Therefore, it is possible that you won’t even have to run to the store. The recipe for the “Novelty” cake involves the use of a certain set of products, including:

  • 350 milliliters of kefir.
  • A glass of sugar.
  • 4 chicken eggs.
  • A teaspoon of soda.
  • A couple of glasses of premium flour.
  • A tablespoon of vinegar.

To prepare the cream, you will have to additionally add to the above list:

  • 200 grams of sugar.
  • 500 milliliters of sour cream.

Among other things, the recipe for the “Novelty” cake requires the presence of glaze. To prepare it you will need:

  • 100 milliliters of milk.
  • 3 tablespoons cocoa.
  • 20 grams of butter.
  • A couple of tablespoons of sugar.

Process description

Combine the eggs with granulated sugar and beat thoroughly with a whisk. Pour kefir into the resulting homogeneous mass and add sifted flour little by little. Mix everything vigorously, trying to prevent the formation of lumps. Slaked soda is added to the finished dough, the consistency of which resembles thick sour cream. After this, it is sent to a heat-resistant form lined with parchment and put into the oven.

The product is baked at two hundred degrees. After about half an hour, the cake is removed from the oven, cooled and cut lengthwise. The resulting halves are greased with cream consisting of sour cream whipped with sugar and placed on top of each other. The finished cake is poured with glaze made from cocoa, sugar and butter. After this, it is left for several hours in a warm place so that it is thoroughly soaked and becomes soft.

  3. The third cake will be with chopped nuts. You shouldn’t make them too small; it’s better to chop them with a knife. When the cake is baked, you will notice pieces of nuts.
  4. How to make the “Novelty” cake even more interesting? You can add a pinch of cinnamon or dried berries to the crust, for example. If you wish, you can make not 3, but 4-5 cakes, each with a different filling.
  5. While the cakes are baking, you can make the cream. This recipe uses the simplest option - whipped butter with condensed milk. If desired, you can make custard or chocolate cream.
  6. Grease the cooled cakes generously with cream. If desired, you can also sprinkle them with chocolate chips, coconut or nuts.
  7. When the “Novelty” cake is completely prepared at home, you can fill it with chocolate glaze or grease it with cream on top. It should brew and soak for at least 3 hours, and then it can be served.

Distribute this mass evenly over the baking sheet, forming a circle (21 cm in diameter, if you follow the rules). Baking time – 12 minutes.
  2. While the sponge cake is baking, you need to make the jelly and mousse. Soak the gelatin, combine the raspberries with sugar and heat without letting them boil. When the sugar dissolves, add gelatin. Pour the mixture into the mold and refrigerate.
  3. To prepare the mousse, combine sugar and water and boil. Separately beat the whites and, while whisking, add the syrup.
  4. Soak the gelatin. Heat the puree without letting it boil, and pour the swollen gelatin mass into it. Whip the cream until it reaches peaks, fold into the cooled puree and then add the whites.
  5. All that's left is to assemble the dessert. Place the cake in the mold, spread the puree over the top and pour the mousse over it. Refrigerate the cake for three hours.

“New” cake recipe

In a small bowl, beat the eggs with 300 g of sugar until light. Quench the soda with lemon juice and add to the eggs. At low mixer speed, beat the mixture, gradually adding starch and sifted flour. The dough should not contain lumps and be thick enough, but not too steep. Divide the resulting mixture into three parts.

Pour one part into a round shape of medium diameter and bake for 10 minutes at 190 degrees. Add poppy seeds previously crushed using a coffee grinder to the second part of the dough. Stir the mixture until smooth and bake in the oven for 10 minutes. Add nuts chopped with a knife to the third part of the dough.

Decorate the cake with chocolate glaze and crushed nuts! Do not chop them too finely – the nuts should be felt in the dough after baking. With the third cake, do the same as with the previous ones - bake for ten minutes. Prepare the buttercream. To do this, beat 250 g of softened butter with condensed milk until fluffy. Grease the slightly cooled cakes with cream.

You can put nuts or candied fruits on the cream to taste. Now melt the butter in a water bath, add 100 g of sugar and cocoa powder. Stir the glaze until the sugar dissolves and pour it over the cake. If desired, decorate the top with nuts or chocolate pieces by placing them on top of the glaze. Place the cake in the refrigerator to harden completely.
