Stewed cabbage with pork ribs

- Onions – 2 pcs.;
- Carrots – 3 pcs.;
- Prunes - optional;
- Vegetable oil – 50ml;
- White cabbage – 1 kg;
- Thyme – 0.5 tsp. dried;

Rinse the ribs with cold water, then dry well with paper towels.
Cut the ribs between the bones into portions.
Place the chopped ribs in a single layer in a frying pan with well-heated vegetable oil.
Fry over high heat on both sides until the ribs are well browned.
Transfer the fried ribs into a pan, preferably with a thick bottom, in which our dish will be prepared.
Peel the onions and carrots, rinse. Then cut the onion into cubes and grate the carrots on a coarse (beetroot) grater.
Separately, finely chop the cabbage.
In the remaining oil from the ribs, first lightly fry the chopped onion until softened.
Add grated carrots to the onion and simmer lightly. At the end, if desired, you can add a handful of prunes.
Place all this roast into the pan with the ribs and stir. Add some shredded cabbage on top (it may not all fit at once) and mix again. Pour a glass of water (or broth, if available).

Turn on the heat under the pan.
When heated, the cabbage will soften and settle - this is where you can add the rest. As soon as all the cabbage is in the pan, immediately add chopped garlic, spices and tomato paste.
Mix everything again, lightly tamping. If the liquid seems too little, add a little more. But keep in mind that cabbage will give up its juice when stewed.
Reduce heat to low and simmer everything together under a closed lid for about 30-40 minutes until the ribs are done.
Turn off the finished dish and let it stand for another 15 minutes. And then boldly put it on plates, sprinkled with chopped parsley. Stewed cabbage with pork ribs is ready! Bon appetit!

Pork ribs with cabbage prepared according to this recipe are aromatic and very tasty.
Bon appetit, make your loved ones happy!
Step-by-step preparation
To prepare this dish, use pork ribs with some meat on them. Rinse them well in running water and dry with a paper towel. Cut them along the bones into small pieces.
Pour a little vegetable oil into a hot frying pan and add the chopped ribs. Fry them on all sides until golden brown.
While the ribs are roasting, peel and rinse the onions and carrots. Finely chop the onion. Grate the carrots on a coarse grater.
Add chopped vegetables to the pan with the fried ribs. Stir and fry everything together for 3-4 minutes.
Remove the top, weathered leaves from the cabbage. Cut the head of cabbage into 2 parts and chop one half with a sharp knife. Add chopped cabbage to the pan. Stir and cover with a lid. Reduce the heat and simmer, stirring occasionally for about 10 minutes. Add a little water to the pan if you suddenly see that the vegetables begin to fry.
Then add some tomato paste. Sprinkle with salt and spices to taste. Stir and leave to simmer for another 20 minutes. Adjust the degree of simmering yourself. Because everything depends on the cabbage. Young cabbage cooks faster than old cabbage.
Remove the finished stewed cabbage with ribs from the heat and leave under the lid to allow the dish to steep. Then serve hot. Bon appetit!
When preparing this dish, try to choose pork ribs with layers of fat on them. Thanks to this, the finished dish will be more aromatic and tastier. You can use spices to your taste, but I recommend limiting yourself to ground pepper so as not to interrupt the main flavor of the dish. This dish is quite simple to prepare, but it can feed the whole family. This is especially true in winter. The longer everything simmers, the better all the ingredients will be saturated with each other’s juice and aroma. However, determine the readiness of the cabbage according to your taste. Some people like it a little crunchy, while others like it completely soft.

Stewed cabbage with ribs “Fed Hans”: how to cook
We wash the pork ribs and place them in a suitable sized bowl.
Add all the spices to them (from the section for marinade), pour in vegetable oil, and mix everything well. Leave the meat on the table to marinate a little.
For now, let's take care of the cabbage: chop it into medium strips (not too small and not too large), transfer it to a separate bowl.
Place a large deep frying pan on the stove, pour in vegetable oil, and heat it up.
Place the ribs and fry them over high heat on all sides until golden brown.
At this time, we peel the onion heads ourselves, wash them and cut them into thin half rings.
Finely chop the garlic cloves.
Remove the fried ribs to a plate and add vegetable oil to the frying pan.
Place the onion there and fry until light golden brown over high heat, remembering to stir.
On a coarse grater, grate the carrots, previously peeled and washed.
As soon as the onion becomes soft, add the carrots, add a little salt and fry until tender.
Now add tomato paste, mix and simmer everything together a little.
Pour in a little water, stir and add the cabbage. Reduce the heat and cover the pan with a lid.
As soon as the cabbage settles, stir, add a little more water, lay out the ribs (they need to be “sunk” a little into the cabbage).
Close the lid, reduce the heat further, and simmer for 50 minutes. During this time you need to stir 2 times.
After 20 minutes, add two bay leaves, salt, black pepper, dried garlic, and sugar to the dish. Stir. Please note that the meat should be under the cabbage.
Once the pork ribs are ready, you can remove them from the heat.
Stewed cabbage with ribs “Fed Hans” is so aromatic that the whole family will gather at the table without your participation: they will just come to the smell. We serve it as follows: put cabbage in the middle of the dish, and pork ribs along the edges. Sprinkle with fresh herbs. Chef's tricks
There are a lot of cooking options, as well as compositions of dishes with cabbage and ribs. Use your imagination and select combinations and cooking methods that will suit you and your loved ones. However, don’t forget about some little things that will help you avoid spoiling your food:
- If you cook meat with sauerkraut, try to see if it is too sour. If the cabbage is very salty, it is better to soak it in water for 10 or 20 minutes before cooking. The soaking time depends on how salty the product is;
- Cooking mature cabbage also requires little preparation. To keep the vegetable soft and juicy, season it with salt for a couple of minutes;
- ribs with lard, especially pork, can be fried without oil so that the dish does not turn out too greasy.
