Biscuit

Pancake

The dough for pancakes (or pancakes) has a pourable, liquid consistency and contains milk (or kefir), eggs, sugar, and baking powder.

Therefore, it should be kept at a temperature of +2+4°C for no more than 24 hours.

The container with the contents must be covered with a lid or plastic wrap and stirred periodically, thereby reducing the risk of thickening and separation of the ingredients.

For dumplings

The kneaded dough for dumplings is elastic and thick, so it can be placed in any container or bag. The main condition is to limit the access of oxygen so as not to dry out.

Store in the refrigerator for 2-3 days.

If the period has expired and the batch has not been used, it should be thrown away. It would be best to immediately stick dumplings, cook or freeze. As a filling you can put cottage cheese, cherries, potatoes, mushrooms.

Pelmennoe

Dumplings are stored similarly to dough for dumplings. You can also make noodles or manti from it. It is recommended to cut into portions and store in polyethylene or place ready-made semi-finished products in the freezer.

Custard

The custard is kept in the refrigerator for no more than 2 days, in the freezer it will last for 30-45 days.

Phyllo

Phyllo (fresh extracted yeast-free) comes from Greece, its peculiarity is its thin rolling, the thickness of the layer is no more than 1 mm. You can make your own phyllo or buy it at your local supermarket. The most common product on sale is a frozen product, the shelf life of which in the freezer reaches six months.

After defrosting, the unopened package may be placed in the refrigerator for no more than 72 hours.

Salty (for modeling)

Used as a material for creativity. In kindergartens and schools, figurines, crafts, puppet theater props and much more are made from it. Natural composition, ease of preparation, cost-effectiveness - these are the main advantages of the salted mass. The presence of a large amount of salt as a preservative contributes to the long-term storage of such a batch.

In the refrigerator, the duration reaches 4 weeks if placed in cling film. Eating is prohibited.

How to store yeast-free dough

This type of dough includes any dough that is not based on yeast, such as shortbread, biscuit or puff pastry.

The easiest way is to store dough that will later be used for pizza. It is prepared very simply and is then divided into portions, rolled into balls and sent to the refrigerator in cling film. If you will be preparing pizza in the next few days, then you can simply put it in the refrigerator, but if longer, then it is better to put it in the freezer. There it can even lie for 6 months. Shortbread dough can be stored in the freezer for no more than 3 months, and puff pastry for about 5 months.

The easiest and most reliable way to preserve the dough is to freeze it. As everyone knows, different doughs differ in their purpose and composition. But, despite the different compositions, each one is based on milk or water. It is thanks to such liquids that the dough can be frozen and preserved, and after defrosting, it can again be used for its intended purpose. Sometimes this can even benefit its taste. The main difference in refrigerating dough is the temperature and shelf life.

How to store shortcrust pastry in the refrigerator?

Many recipes for making shortcrust pastry include advice: place the product in the freezer so that the dough can be rolled out more easily. It is believed that after defrosting, the taste of the product improves.

How to store yeast dough.

If you want to store the dough in the refrigerator, it should not be stored for very long, as the fermentation process may cause the dough to sour. But if you put the yeast dough in the freezer, it can be stored there for several weeks. The dough should defrost in a warm place, and after it has melted, it should rise again. And after it has risen, you must immediately start cooking with it.

It is better to cut the dough into portions before freezing to make it easier to use.

Can shortbread and puff pastry be stored in the refrigerator?

Dough containing animal fats should only be stored in a cold place.

The main ingredients of shortcrust pastry are premium wheat flour, butter or margarine, sugar, eggs.

Yeast-free is less capricious, since it has a simple composition and rises due to leavening components (soda), and not carbon dioxide. At low temperatures, yeast can be stored twice as long, but it is better to prepare it without delay.

It is recommended to divide the puff pastry into portions, wrap it in cling film and store it in the freezer. This method will extend shelf life up to 2 months.

IMPORTANT! After defrosting, the puff pastry will turn sour in an hour.

The custard is prepared in an unusual way, has a viscous consistency of medium thickness; for long-term storage, a container with a lid is better suited. If you first wrap it in film and then place the package in a container, the period will increase even more, but it will expire after a month in the freezer.

The finished dumplings have a dense consistency and a simple composition. Wrapped in cling film, it can be kept at low temperatures for up to six months - longer than others. Also suitable for dumplings and other dishes that require a bland taste and a minimal increase in volume during cooking.

How long can dumpling dough be stored?

The classic composition includes water, eggs , salt, flour.

Muslims add vegetable oil and make famous Tatar pies. In Ukrainian cuisine, water is replaced with kefir. When kneading choux dumpling dough, use hot water.

Homemade dumpling dough can be stored for no more than a day. Experienced housewives knead it a little in advance. After lying in the refrigerator for 10-12 hours, it becomes more elastic.

Advice. Store-bought product must be used within 12 hours.

Unscrupulous manufacturers, suppliers and sellers may not comply with temperature conditions during transportation and storage. Therefore, even an expiration date that has not expired does not serve as a guarantee. When purchasing a frozen product, you need to gradually defrost it during the first day and use it the next day.

In a refrigerator

GOST 31806-2012 “Semi-finished bakery products, frozen and chilled” recommends storing chilled dough at a temperature of +2 to +4°C for no more than 24 hours.

If it has been left for more than a day, but looks good - it has not darkened, does not stick to your hands, and has the original smell - you can make fried unleavened flatbreads from it.

In the freezer

Each of the ingredients, after defrosting, restores its consistency and taste. This means that it is possible to store dumpling dough in the freezer.

Attention! Repeated freezing is unacceptable!

According to GOST 31806-2012 “Frozen and chilled semi-finished bakery products” the following is stored at a temperature of -18ºС:

  • frozen dough pieces without filling - 120 days;
  • frozen dough pieces with filling - 60 days.

It is recommended to lay out the semi-finished product in small portions in the form of small cakes. Each cake is wrapped in cling film or a plastic bag.

Defrost gradually:

  1. After the freezer, it lies in the refrigerator for 10-12 hours.
  2. The next 2-3 hours are restored on the table.

In winter, if there is no space in the freezer, many housewives put dumplings on the cold balcony. This can only be done if the temperature there is not higher than -18°C.

The flash freezing process plays a role here. This function is available in many modern refrigerator models. Instantly frozen product retains its properties better. The main thing is not to expose it to subsequent sudden changes in temperature.
