Vanilla muffins
Ingredients
- 240 g flour;
- 2 teaspoons baking powder;
- ¹⁄₂ teaspoon salt;
- 120 g butter;
- 200 g sugar;
- 2 eggs;
- 120 ml milk;
- 2 teaspoons vanilla extract or 1½ g vanillin.
Preparation
Sift flour, baking powder and salt into a deep bowl.
Using a mixer, beat the softened butter for 30 seconds. Gradually add sugar and beat for 3-4 minutes until dissolved. Add eggs one at a time. Punch until the mixture becomes light.
Mix milk and vanilla and add to egg mixture. Add sifted flour in four additions. Stir until smooth.
Divide the dough into the cavities, filling each cavity three-quarters full. Bake for 20–25 minutes. Let the muffins cool for 5-10 minutes.
If you have trouble removing from the pan, run a knife around the edges of each cupcake. Then cover with a clean towel and turn over. The muffins will pop out onto the cloth.
