SALAD WITH FRIED MUSHROOMS, CUCUMBER AND CRAB STICKS
If you love mushroom salads as much as I do, then be sure to prepare a salad with fried mushrooms, cucumber and crab sticks for your holiday table.
After all, it turns out so tasty that it is this, and not Olivier or Mimosa, that is swept off the table in the first minutes of the celebration! To create it, I use champignons - they are easiest to find at the market or in a store. In addition, they fry much faster than other types of mushrooms and release more flavor. Of course, other mushrooms, such as oyster mushrooms, but just make sure they are fresh when purchasing!
Be sure to cool the mushroom slices after frying, as warm foods added to the salad reduce its shelf life.
Required ingredients:
- 300 g fresh champignons;
- 2-3 boiled chicken eggs;
- 1 cucumber;
- 100 g crab sticks;
- 1.5 tbsp. l. mayonnaise;
- 30 ml vegetable oil;
- salt and pepper to taste.
Salad with fried champignons and crab sticks
- Tackle the mushrooms first - they take the longest to cook in the salad. Rinse them in water, thoroughly removing all dirt, and then cut them into thin slices, pouring them into a bowl. If you wish, you can even remove the top layer from each mushroom if it is very dirty.
- Fry the mushroom slices in a hot frying pan in hot vegetable oil for about 8-10 minutes until golden brown. Do not add a lot of fat, as the salad will still be dressed with mayonnaise. Be sure to cool the entire roast.
- While the mushrooms are frying and cooling, defrost the crab meat sticks in warm water for 5 minutes, then remove the cellophane wrappers from them and cut into strips, adding to the container. You can purchase this product in advance and place it in the freezer so that you always have it on hand.
- Rinse the cucumber in water and cut off the edges of the vegetable. Cut it into the same thin strips. Add to the container with the crab sticks along with the fried mushrooms. In the absence of fresh cucumber, you can use pickled or salted, but then reduce the amount of salt in the list of ingredients.
- Add the eggs to the salad last. Peel and rinse them in water, and then cut into large pieces. Chicken eggs can be replaced with quail eggs.

Ingredients:
- Crab sticks – 250 grams
