Meat balls in the most delicate creamy dressing are a very tasty and nutritious dish that can be served at a holiday table or a regular family lunch.

Ingredients:

  • Breadcrumbs – 100 g;
  • Minced pork and beef - 400 g each;
  • Large egg;
  • Flour – 70 g;
  • Garlic – three cloves;
  • Milk – 70 ml;
  • Ground black pepper – 1/2 small spoon;
  • Parsley - a few sprigs;
  • Vegetable oil for frying - three large spoons.

Cream sauce:

  • Sour cream - three tablespoons;
  • Butter and flour - two large spoons each;
  • Chicken broth - 1/2 liter;
  • Ground nutmeg, pepper and salt - to taste.

Cooking instructions:

  1. In a large bowl, combine both types of minced meat, onion, ground pepper, chopped herbs, raw egg, breadcrumbs and mix well;
  2. Pour in cold milk, stirring the resulting meat mass;
  3. Let it stand for about 15 minutes, then form balls of the same size (3 cm in diameter);
  4. Heat vegetable oil in a frying pan and roll the minced meat balls in flour. Then fry the pieces in small portions over high heat until golden brown on each side. Place the fried items on a paper towel to absorb excess oil;
  5. Now let’s prepare the dressing for the dish. Add butter to the frying pan in which we fried the “balls” and melt it over medium heat. Add flour, stirring thoroughly with a whisk, and heat the mixture until it reaches the consistency of thick cream;
  6. Without ceasing to stir the flour mixture, pour in the hot broth in a thin stream. Boil the sauce until slightly thickened at a low boil, stirring all the time with a whisk. Add sour cream and mix everything again;
  7. Next, add ground nutmeg, pepper, salt and any spices to taste. We add our preparations and bring to a boil. Simmer them for about 30 minutes with the cream sauce simmering slightly.

Meatballs in a creamy sauce can be served hot with various side dishes, such as rice or mashed potatoes.

Spicy BBQ Sauce Ingredients

Classic barbecue cooking allows you to create a sauce that suits the entire family. If someone likes a spicier option, you can prepare a spicy composition with an exquisite spicy note.

Ingredients:

  • onions – 2 pcs.;
  • garlic – 2-3 cloves;
  • lemon juice – 100 ml;
  • chili pepper – 2 pcs.;
  • mustard (ground) – 1 tsp;
  • ketchup or tomato paste – 200 gr.;
  • Tobasco sauce or chili sauce - 1 tbsp. l.;
  • peppers (black and red, ground) - a pinch;
  • sugar (brown, cane) – 1 tsp;
  • salt - to taste;
  • olive oil);
  • water – 150 ml.

Chop the onion and garlic and sauté in hot oil in a frying pan, gradually adding ketchup, sauces, lemon juice, mustard, sugar and seasonings. If the mixture is too thick, you can dilute it a little with water. When the mixture boils, add chili peppers cut into small pieces, after which the sauce should be boiled for 15-20 minutes with constant stirring. The finished barbecue must cool thoroughly before use.

Many housewives often confuse meatballs in tomato sauce with meatballs or meatballs, but there is not much in common between them. The main difference between these dishes is their size: meatballs and meatballs are almost always no larger than a chicken egg, while meatballs are the size of a tennis ball. We rinse the beef pulp in water, be sure to cut off all the films and veins, cut them into small cubes so that they can be more easily inserted into the meat grinder pipe. Peel the onion, rinse and cut in half. We will leave one half for the sauce.

Grind the second half together with a piece of lard and chopped beef in a meat grinder.

Salt and pepper the minced meat and crack a chicken egg into it. Mix thoroughly.

Add ricotta and breadcrumbs and mix thoroughly again.

With our hands we form a meatball according to the size of our palm. Let men decide for themselves or be content with the size of your portion.

Let's create the rest of the meatballs in the same way.

Grease the pan with vegetable oil and place a portion of meatballs in it; the rest can be frozen if you do not intend to cook them all.

In a small bowl, dilute the tomato paste in a small amount of water, grate the remaining half of the onion on a fine grater, add a little salt and pepper. Add 2 pinches of granulated sugar. Add thyme and stir.

Pour the tomato sauce onto the meatballs with a tablespoon and place in the oven, preheating it to 180-200 C. Bake the dish for 25-30 minutes.

And so let's start cooking. By the way, you don’t need much time to prepare meatballs.

To prepare meatballs we need:

  1. Kilogram of ground beef
  2. Ricotta cheese (sold at regular grocery stores in the dairy section)
  3. Parsley, salt, spices
  4. 100 grams breadcrumbs
  5. Olive oil
  6. Eggs

Many people use mixed minced beef and pork to prepare meatballs. Based on the classic recipe, such an approach would be a mistake. Take more time to choose the minced meat, or better yet, make it yourself. Otherwise, the impression of meatballs will be spoiled due to bad minced meat (I think everyone knows how to make the minced meat that is in stores).

And so take a medium-sized container and place the minced meat in it. The minced meat must be mixed with Ricotta cheese (ricotta is a traditional Italian dairy product, in fact it is not even cheese). Next, chop the parsley and add it to the minced meat. Also add salt and spices. Spices must be added in the quantity you consider necessary, but not to overdo it. Add breadcrumbs and 6-7 tablespoons of olive oil to the resulting mixture. Mix the resulting minced meat thoroughly and add one raw egg. After this, stir the mixture again.

The minced meat for meatballs is ready. We begin to roll small balls (35-45 millimeters in diameter) from the resulting minced meat. Place the finished balls on a greased baking sheet. Place the filled baking sheet in an oven preheated to 200 degrees for 20-25 minutes.

An Italian dish cannot be complete without sauce. Let's look at a small recipe for meatball sauce.

Ingredients for the sauce:

Fry finely chopped onion and garlic in olive oil. Add finely chopped tomatoes to them. If you are too lazy to cut the tomatoes, you can grind them in a mixer to form a paste. Simmer all this for 30-40 minutes over low heat. Stir the sauce and add spices during cooking. The sauce should thicken towards the end of cooking.

  2. The egg white must be beaten with salt so that the foam holds its shape, and smoothly introduced into the bowl with the minced meat. Pour in the yolk, the last thing to add is a chopped bunch of dill, after which you need to knead all the ingredients with your hands and check the raw minced meat for taste.
  3. Divide the finished minced meat into several parts, rolling them into smooth balls. You choose their size yourself, but remember that the duration of their preparation will depend on the size.
  4. Heat sunflower oil in a large saucepan - it should fill it to 2 heights of meatballs. As soon as the oil is hot, the balls are carefully placed there and fried until they turn reddish. At the same time, you should not lower all the meatballs at once - it is better to break them into portions, since the balls should not touch each other in the pan.
  5. After a beautiful crust appears, the meatballs need to be caught with a slotted spoon and transferred to a dry frying pan. When all the molded balls are pre-fried, a little warm boiled water is added to the frying pan with them, and the dish is simmered under the lid for another 20 minutes so that the center is baked.
  6. It is worth saying that the last stages can be swapped: first, simmer the meatballs in a frying pan, bringing them to half-cookedness, and then deep-fry them to give a reddish-brown crust. Before serving, you can roll the balls in ground paprika, and prepare the classic tomato sauce with basil for the dish. Traditional Italian meatballs (and the American version) are always served with sauce.

Preparation:

  1. Salt the minced chicken, add beaten egg white and ricotta, mix carefully with your hands.
  2. Grind the cracker in a blender. If desired, cookies can be replaced with oatmeal or buckwheat bread, which also need to be crushed. Combine with minced meat, knead thoroughly with your hands, divide into equal parts, from which you need to roll into balls.
  3. Place the balls on a baking sheet lined with parchment, cover with foil, after making several holes in it, and leave for 25-30 minutes. into the oven, on the middle level. Place a bowl of cold water under the baking sheet on a rack to create steam in the oven.
  4. While the meatballs are baking, you should scald the tomatoes, remove the skin, and leave the pulp on a cutting board or in a saucer.
  5. Heat olive oil in a frying pan, fry the chopped onion in it, and add peppercorns. After 2-3 minutes. add the tomatoes, mash them with a fork, cover the pan with a lid and reduce the heat to low. Simmer the sauce until thick. As soon as this happens, add basil leaves crushed between your fingers.
  6. If the oven time is up, the meatballs need to be transferred to a frying pan and cooked in it for 10-15 minutes. If not, remove the pan from the stove before the balls are baked so as not to overcook the sauce.

Serve with chopped lettuce.

Tomato BBQ

Many barbecue sauce recipes call for ingredients such as Tobasco, chili, Worcestershire (Worcestershire) or teriyaki sauces. Of course, these products can be found on store shelves, but the most convenient way is to prepare a delicious tomato mixture from what is always available in any kitchen.

Ingredients:

  • tomato paste – 500 gr.;
  • honey (melted) – 2 tbsp. l.;
  • mustard (Dijon grains) – 2 tbsp. l.;
  • onion – 1 pc.;
  • sugar (cane) – 100 gr.;
  • ginger (dried) – ½ tsp;
  • paprika (dried) – 1 tsp;
  • garlic – 3 cloves;
  • water – 150 ml;
  • starch - 1 tbsp. l.

Peel and finely chop the onion, place in melted butter in a saucepan, stir in tomato paste, honey and mustard, garlic, add ginger and paprika, pour in water. Into the mixture, boiled over low heat with frequent stirring for about 30 minutes, starch can be added to increase the thickness, and then heated for another 3-5 minutes. It is best to serve the finished sauce chilled.

Chicken meat balls with mozzarella

Meatballs with chicken cheese are very juicy and nutritious with an unusually delicate taste and aroma.

You will need:

  • Mozzarella balls – 12 pieces;
  • Two egg whites;
  • Chicken fillet – 2 pieces;
  • Spices (mixture of peppers, salt).

Cooking process:

  1. Using a food processor, grind the fillet into a mousse;
  2. Whip the whites yourself until foamy (not to peaks). Add them to the minced meat along with spices, taste them, mix;
  3. Cover the board with cling film. Place a spoonful of minced meat on it, make a depression in the center and place a cheese round in it;
  4. We carefully take the film by the ends and twist it into a round piece. We do this until the end;
  5. While we are rolling up the bags, put the water on gas and wait until it boils. Place the bags themselves in it and cook over medium heat for 15 minutes. Do not overcook, otherwise the cheese will leak out. Our product should cool down a little, then remove the film from it.

Chicken meatballs are served with various side dishes and sauce. Tomato dressing and paste work best here.

3. Cut zucchini and pepper into cubes. Finely chop the onion, garlic, ginger and hot pepper.

4. In a wok or deep frying pan over high heat, heat 2 tbsp. l. vegetable oil.

5. Fry the minced meat in several batches (a couple of minutes per batch). Transfer everything to a plate.

6. Place zucchini and bell pepper into wok. Fry, stirring, for 3-4 minutes (add more oil if necessary).

7. Add onion, garlic, ginger and hot pepper. Fry, stirring, for another minute.

8. Return the minced meat to the wok, pour in the sauce and cook, stirring, for half a minute until the sauce thickens slightly.

9. Add noodles and stir.

Serve sprinkled with chopped green onions and toasted sesame seeds.

  2. Pour olive and vegetable oil into a frying pan. Add the prepared vegetables and fry, stirring occasionally, until golden brown. then add red wine and simmer a little more.
  3. Then add tomatoes in their own juice and water to the vegetables. Season the sauce with salt and pepper to taste, and add sugar and basil. Simmer the sauce over low heat for 3-5 minutes.
  4. Place minced meat in a bowl, add salt and pepper to taste.
    Then we peel the garlic, chop it and add it to the minced meat. Beat in a chicken egg and add chopped parsley and grated Parmesan. And also add bread crumbs. Add a little olive oil and mix everything.
  5. Sprinkle the board with wheat flour.
    We form small meatballs from the minced meat and place them on the board. Sprinkle the finished balls with flour and fry until golden brown in a hot frying pan.

Today I prepared meatballs in sauce, which are very fashionable these days, or meatballs, as we used to call them. Although, meatballs are also not entirely true - they are usually stewed, and not meatballs - they are usually boiled in broth. The most appropriate name for meatballs is probably meatballs baked in the oven.

They came to us from Italy and gained incredible popularity around the world, especially in America. Computer game characters even know how to cook them there. Well, if they can, then you and I can do it even more! The only thing I would like to recommend is to use minced beef for meatballs.

Don’t try to dilute it with fatty pork - the taste will not be so pure, don’t worry about juiciness, it will be enough!

Meatballs with berry sauce

Ingredients:

  • 500 g minced chicken (you can take chicken fillet and make minced meat yourself),
  • 1 onion,
  • 100 g butter,
  • salt, pepper, smoked paprika.

For the sauce:

  • 100 ml heavy cream,
  • 20 g ketchup,
  • 20 g soy sauce.

For lingonberry jam:

  • 100 g lingonberries (or cranberries),
  • 20 g sugar,
  • a pinch of salt and chili pepper flakes.

Preparation:

1. Make jam. To do this, throw all the ingredients into a small saucepan and cook, stirring, for 7-10 minutes. After this, you can taste and, if necessary, add more salt and chili pepper.

2. Add the onion to the minced chicken (after chopping it in a blender), butter, salt, pepper and paprika, knead well.

3. After this, beat the minced meat: take it in your hands and throw it back into the bowl - and so on 10 times.

4. Form meatballs from the finished minced meat. Fry them in oil on several sides.

5. Prepare the sauce. To do this, mix cream, ketchup and soy sauce in a saucepan. Cook until desired consistency, stirring.

Serve with any side dish - preferably mashed potatoes.
