What is cobbler, crumble, crisp. And how to cook them


Any housewife will say that now is a wonderful time, because you can cook not only national traditional dishes, but also master the recipes of other peoples and countries. Thus, crumble appeared from English cuisine in Russian spaces, and immediately found many fans.

Local chefs did not translate the English crumble into Russian, although the translation would rather explain what the essence of the dish is. The word can be translated as “crumb, crumble,” and the dish itself is somewhat reminiscent of an upside-down pie made from fairly dry dough and a filling, usually fruit or berry. For example, crumble is prepared with apples, apricots, pears, cherries, strawberries, as well as a wide variety of other fresh and frozen berries.

The finished pie has a low calorie content, only 125-150 kcal per 100 grams of product, and can add pleasant variety to the menu of those who are on a diet or trying to get back in shape. Below are some crumble recipes.

Classic apple crumble - step-by-step recipe

An important component of English crumble is fruits and berries; this dessert is especially good with apples, which add juiciness to the dish, but do not allow it to turn into porridge.

Products:

  • Flour (high grade) – 250 gr.
  • Sugar – 100 gr.
  • Oil – 150 gr.
  • Lemon (for zest) – 1 pc.
  • Soda – 1 tsp.

Filling:

  • Apples – 8 pcs. (very dense).
  • Sugar – 1 tbsp. (or less if the apples are sweet).
  • Lemon – ½ pc. for squeezing out juice.
  • Rum – 100 gr.
  • Cinnamon.

Technology:

  1. Wash the apples, remove the stems and seeds. Slice, sprinkle with lemon juice, squeeze from half a lemon.
  2. Place in a frying pan and sprinkle with sugar. Simmer for 10 minutes. Add rum and cinnamon, simmer for another 5 minutes.
  3. Soften the butter, combine with flour, soda, sugar and lemon zest. Grind until more or less homogeneous crumbs are obtained.
  4. Grease a baking dish with melted butter. Lay the apples out in an even layer. Sprinkle them with crumbs.
  5. Bake in the oven, temperature – 190 °C, time – 25 minutes.

Serve slightly chilled; this dessert goes well with ice cream!

Traditional English pie

The classic technology of preparing the dish has come down to the present day almost unchanged since the colonization of America by British settlers.

Ingredients:

  • apples – 4 pcs.;
  • flour – 170 g;
  • lemon – ½ part;
  • butter – 100 g;
  • granulated sugar – 100 g;
  • cinnamon – 2 teaspoons.

You can complement the dish with vanilla ice cream if desired.

Cooking method:

  1. First, mix flour and sugar. It is better to do this at the first stage, because after adding the oil, the crystals will begin to melt and stick together. This will cause the sweetness to be distributed unevenly.
  2. Then you can add butter, but to facilitate the “crumbing” process, you need to cut it into small cubes. Use the product chilled.
  3. Using your hands, rub the dough into crumbs.
  4. Peel the apples from all excess (skin and core) and cut into pieces to taste. Small cubes and slices will do. The main thing is not to make the pieces too large, otherwise they will remain raw inside. Place in a heat-resistant form.
  5. To prevent the pieces from darkening, you should immediately sprinkle them with lemon juice. Then you can sprinkle with cinnamon.
  6. Sprinkle the first crumble layer evenly with the crumbled dough. You should not press it on top with your hands, because in this case the dessert will lose its inherent crumbliness. If you wish, you can press the dough deeper into the fruit or simply tap the mold on the table.
  7. The crumble is usually baked at 200 degrees for no more than 20 minutes. Moreover, it will take half as much time if you make it in small molds designed for one serving. If the oven is equipped with a grill function, then a couple of minutes before the end of preparation you can set the appropriate mode.

The dish is usually served with vanilla ice cream. But even without it, the dessert turns out quite tasty.

How to make oat crumble

The next crumble recipe is even more dietary, since oatmeal is used instead of wheat flour. You can use less sugar to reduce the calorie content of the dessert.

Products:

  • Oatmeal – 100 gr.
  • Oil – 80 gr.
  • Flour – 1 tbsp. l.
  • Sugar – 100 gr.
  • Salt.

Filling:

  • Apples – 3-4 pcs.
  • Sugar – 2-3 tbsp. l.
  • Cinnamon – ½ tsp.

Technology:

  1. Knead the dough using the ingredients indicated in the recipe. Soften the butter first. The consistency of the finished dough resembles crumbs.
  2. Wash the apples, remove peels and seeds. Cut into thin slices.
  3. Grease the mold with a piece of butter. Arrange the apple slices beautifully. Sprinkle with cinnamon and sugar.
  4. Sprinkle the crumbs evenly over the top of the apples. Bake at 180°C for 40 minutes.

This wonderful dessert can be served hot or chilled, with ice cream or milk!

Recipe with cognac in English

If the dessert is intended only for an adult audience, then it can be safely supplemented with a small amount of alcohol. Wine, liqueur and stronger drinks are suitable. However, in the classic British version, cognac is most often found.

Ingredients:

  • shortbread crumbs made according to a traditional crumble recipe – 300 g;
  • green apples – 3 pcs.;
  • cane sugar – 50 g;
  • cognac – 120 ml;
  • steamed raisins – 50 g;
  • butter – 20 g.

Cooking method:

  1. Cut the apples into pieces (you can leave the peel).
  2. Pour brown sugar into the pan (it will make the dessert more flavorful), add fruit and butter and heat through.
  3. As soon as the apples have softened a little, add raisins and cognac to them. At this moment, you need to increase the power of the fire so that the alcoholic part of the alcohol evaporates, leaving a characteristic aftertaste.
  4. Place the resulting filling in a deep baking pan, add a second layer of sand and bake until browned.

Apple crumble according to this recipe takes a little longer to prepare. At an identical temperature of 180-200 degrees, the dessert is baked for about an hour.

Cherry crumble recipe

Not everyone likes to eat cherries because of their rather sour taste, but they are good for making crumble, where sweet dough and slightly sour berries create a great duet.

Products:

  • Flour – 1 tbsp.
  • Sugar –50 gr.
  • Brown sugar – 100 gr.
  • Butter – 100 gr.
  • Oatmeal – 3 tbsp. l.
  • Baking powder – 1 tsp.

Filling:

  • Cherries – 1 tbsp.
  • Starch – 1 tbsp. l.
  • Sugar – 1-2 tbsp. l.

Technology:

  1. It is best to use a blender to prepare the dough. Pour dry products into the bowl, with the exception of cereals - flour, salt, baking powder, two types of sugar. Mix.
  2. Send the chilled butter there, cutting it into small cubes first.
  3. Place the dough in a bowl and add oatmeal. Grind until crumbs form.
  4. Grease the mold with oil. Gently spread the dough into an even layer, pressing lightly to form a crust. (Reserve some of the crumbs for sprinkling on top.)
  5. Wash the cherries, dry them, add starch and sugar, mix. Spread the berries in an even layer over the crumb topping.
  6. Sprinkle with remaining dough. Baking time – 20 minutes, temperature – 180 °C.

Starch, mixed with sugar and cherry juice, will turn into a very tasty sauce and add juiciness to the dish.

Gordon Ramsay's apple crumble with muesli and dried cranberries

A very simple recipe from the book “Elementary Cooking Courses” by Gordon Ramsay, consisting of budget ingredients. At the same time, it is very tasty, with a juicy fruit filling on a caramel crust on the bottom, covered with crunchy muesli with butter on top.

Ingredients:

  • 6 large sweet and sour apples
  • 2 tsp with a pile of sugar
  • 0.5 tsp ground cinnamon
  • 1 vanilla pod or regular vanilla (on the tip of a spoon)
  • 3 tbsp. dried cranberries
  • 1 lemon

For the baby:

  • 100 g flour
  • 4 tbsp. muesli (or granola)
  • 2 tbsp. brown sugar
  • 50 g butter
  • 0.5 tsp ground cinnamon
  • a pinch of salt

1. Grate two apples along with the peel on a coarse grater. Turn the oven to 200° to preheat it.

2. Place the saucepan over medium heat, pour 2 tsp on the bottom. sugar (heaped) - it will help soften the fruit acid. For spice, add a little cinnamon. Open the vanilla bean, collect the seeds inside and also add to the pan. Shake the mixture occasionally to ensure it melts evenly.

3. As soon as you see the sugar darkening and turning brown, add the grated apples. Immediately stir everything with a spatula, reduce the heat slightly.

4. Take 2 more fruits, cut them into small cubes along with the skin. Mix in a saucepan with the puree and continue simmering.

5. Then add dried cranberries and lemon zest. Cut a lemon and squeeze the juice from one half. This will add citrus freshness and flavor to the filling. Turn off the heat and leave to infuse on the stove.

6. In a bowl, mix flour, cane sugar, softened butter. Add a little salt and cinnamon. Using your hands, rub the mixture into crumbs. Stir it into muesli or granola.

7. Sprinkle the resulting crumbs onto the stewed apples, completely covering them. Turn on the heat under the saucepan so that the filling inside is properly heated. As soon as it starts to boil, immediately place the crumble in a preheated oven for 12-14 minutes.

When the crust appears golden brown, take out the dessert. Cool slightly and treat your family to a delicious breakfast.

Homemade pear crumble

Of all the fruits, apples and pears are considered the most suitable for crumble: they do not fall apart when baked, and also produce juice that caramelizes with sugar. You can add nuts and chocolate to the pear crumble to create an exquisite delicacy, prepared exclusively at home.

Products:

  • Flour – ½ tbsp.
  • Oatmeal flour – 1 tbsp.
  • Butter – 120 gr.
  • Sugar – 1 tbsp. l.
  • Vanillin - on the tip of the knife.
  • Cinnamon – ½ tsp.
  • Nutmeg – a pinch.
  • Chocolate – 50 gr.
  • Nuts – 50 gr.

Filling:

  • Pears – 3 pcs. (large).
  • Sugar – 1 tbsp. l.

Technology:

  1. Add 1 tbsp to the oil. l. sugar, add flour (wheat and oatmeal), nutmeg, cinnamon, vanillin. Mix with your hands until crumbly.
  2. The mold should be greased with oil. Sprinkle sugar on the bottom. Wash the pears, remove the stems and seeds. Cut into slices.
  3. Place in mold. Sprinkle dough crumbs on top.
  4. Grate the chocolate on a grater with large holes. Place on top of the crumble.
  5. Wash the nuts and lightly fry them in a dry frying pan to improve the taste. Make a beautiful pattern of nuts on the surface of the crumble.
  6. Place the dessert in a well-heated oven. As soon as the dough acquires a beautiful golden hue, the crumble is ready.

Cooking with almonds

Another winning combination is almonds and cinnamon. They complement each other perfectly. If you add them to a classic crumble, the taste of the dessert will sparkle with completely new colors.

Ingredients:

  • apples (it is better to take sweet and sour varieties) – 450 g;
  • almonds – 50 g;
  • powdered sugar – 160 g;
  • flour – 180 g;
  • butter – 120 g;
  • cinnamon - according to taste.

You can make a pie with regular sugar, but using powder (especially with the addition of vanilla) will allow you to get a lighter and more aromatic dough structure.

Cooking method:

  1. Boil water and pour it over the nuts for about 10 minutes. After that, you need to remove the skin from them and chop them with a knife. You can, of course, use a blender, but then the almond crumbs will turn out too fine and will lose most of the oils.
  2. Peel the apples and cut into small cubes. Then place them in a bowl where they will be cooked. Again, it is better to use small molds.
  3. Sprinkle fruit slices with a mixture of powdered sugar and cinnamon.
  4. Separately prepare crumbs from flour, butter, chopped almonds and powder. Spread the batter over the apples in an even layer.
  5. The baking parameters here are slightly different, since the dessert needs to spend a little more time in the oven (30 minutes at 180 degrees).

Serve the crumble warm so that the scoop of ice cream placed on it begins to melt.

Plum crumble recipe

The original plum crumble requires very simple ingredients and a little time. It is easy to prepare, so even a housewife taking her first steps in cooking can master the recipe.

Products:

  • Wheat flour (high grade, naturally) – 150 gr.
  • Butter – 120 gr.
  • Granulated sugar – 4-5 tbsp. l.
  • Salt is on the tip of the knife.

Filling:

  • Plums (large, dense) – 10 pcs.
  • Granulated sugar - 2-3 tbsp. l.

Technology:

  1. First you need to take the butter, cut it into pieces, add sugar, salt, and add flour. Rub with your hands until more or less homogeneous flour crumbs form.
  2. Turn on the oven to preheat thoroughly before baking the crumble.
  3. Grease a beautiful form in which the dish will be baked and served.
  4. Rinse the plums and dry with a paper or linen towel. Cut in half, remove seeds.
  5. Place the fruits beautifully in a mold. Lightly sprinkle with sugar. Spread the dough evenly on top.
  6. Place in the oven. Baking time is approximately 20 minutes, temperature is at least 180 °C.

Delicious plum dessert is ready! You can add a scoop of ice cream to each portion of the pie, so that your family will remember the culinary magic created by your beloved mother more than once!

Apple crumble with cinnamon and lemon

Despite the fact that the standard recipe initially includes lemon juice, you can add an additional citrus accent by adding zest.

Ingredients:

  • sour apples – 6 pcs.;
  • lemon juice – 2 tbsp. spoons;
  • zest – 1 teaspoon;
  • flour – 6 tbsp. spoon with top;
  • butter – 50 g;
  • sugar – 4 tbsp. spoons;
  • cinnamon, vanillin and salt - to taste.

Cooking method:

  1. Caramelize peeled and chopped apples in 1 tbsp. spoon of butter and the same amount of sugar.
  2. Simmer the mixture over moderate heat until the fruit softens (4 to 5 minutes).
  3. In a separate container, mix the sifted flour, zest, remaining butter and sugar, salt, vanillin and cinnamon. After this, grind the composition with your hands to obtain a grainy structure.
  4. Place the apple caramel in a glass dish and sprinkle with lemon juice. It is better not to use iron utensils for preparing dessert, since contact of fruit juice with a metal surface will inevitably begin to cause oxidation processes, which will worsen the taste of the dish.
  5. Spread the crumbs over the fruit in an even layer. It is convenient to do this with a fork. Treat the surface of the product again with lemon juice.
  6. The dish is prepared at the same 180 degrees for 20 minutes.

An indicator that it is time to remove the dessert will be a golden brown crust and boiling apple juice that has soaked the dough.
