At the same time, preparing the dish is simple, even a novice cook can handle it. And this recipe is suitable if the cottage cheese has disappeared and has turned a little sour.

Ingredients:

  • a pack of sour cottage cheese;
  • 50 g granulated sugar;
  • 1 egg;
  • 50 g butter;
  • 50 g wheat flour;
  • raisins, vanillin.

Pour boiling water over the raisins and leave for half an hour. Rub the cottage cheese through a sieve, mix with the egg and sugar. Stir, add vanillin and softened butter, and then, stirring constantly, add flour. You may need a little more or less, depending on how much the dough takes. It should remain elastic, fairly moist, but uniform.

Lastly, steamed and slightly dried raisins are introduced, and the mixture is mixed again. Small cakes are formed from it, about 5 mm thick. They can be cooked in a frying pan, frying on each side. You can bake it in the oven for about 15 minutes. Finally, you can adapt a multicooker for this, using the “Frying” mode (the cheesecakes will also have to be turned over) or “Baking”.

Option 5 Soft cheesecakes with raisins in the oven

Raisins are an ideal and much-loved ingredient by many housewives, which they include in cheesecakes. Therefore, we could not ignore this option. True, this time we will cook the baked goods not in a frying pan, but on a baking sheet.

Ingredients:

  • a couple of tablespoons of dry raisins;
  • 505 grams of cottage cheese (fat);
  • three tablespoons of flour (dessert);
  • vanilla to taste;
  • chicken (one) egg;
  • salt/soda in the dough;
  • baking sheet oil;
  • 35-37 grams of sugar;
  • boiling water for steaming raisins.

How to cook

Step 1:

Wash dry raisins. Place in a bowl and pour in boiling water. To cover with a lid. Leave to steam.

Step 2:

After half an hour (approximately), transfer all the cottage cheese into a bowl. Beat until fluffy using a mixer.

Step 3:

Then add fine sugar, soda, vanilla and a small pinch of salt. Also beat in a chicken egg.

Step 4:

Whisk the contents of the bowl and sift the flour. At the last stage, add the raisins that have been squeezed out of moisture.

Step 5:

Dust the kitchen table (very generously) with flour. Place the thick dough, forming a “sausage”.

Step 6:

Cut the workpiece into several (about 20) pieces. Give each one the shape of a classic cheesecake.

Step 7:

Now heat the refined oil in a flat-bottomed frying pan. One by one, send the soft cheesecakes inside. Fry for two minutes over medium heat with the lid closed.

Since raisins are quite sweet, take this fact into account when determining the amount of sugar you use. In addition, check if dried grapes have seeds.

This is important, because including fruits that contain them in a recipe is unsafe.

Cookie

The recipe for these cookies includes not only cottage cheese left in the refrigerator, but also old, dried out oatmeal cookies. This can often be found in almost every kitchen - there are a few pieces left at the bottom of the box that no one eats anymore, but it’s a pity to throw them away.

Compound:

  • half a pack of cottage cheese (120-150 g);
  • 4-5 pieces of oatmeal cookies;
  • 2 eggs;
  • sugar to taste.

The cookies need to be turned into flour. To do this, you can roll it out with a rolling pin, after putting it in a bag. It’s easier to break it into pieces and punch it with a blender.

The finished product remains soft inside, but with a crispy crust. You need to add very little sugar, because oatmeal cookies are also sweet.

The next recipe is unsweetened sesame cookies. It resembles more of a snack or appetizer. And it can also be made from old cottage cheese. To do this, take:

  • briquette of sour cottage cheese;
  • 100 g butter;
  • 1 egg;
  • 1.5 cups flour;
  • 1 teaspoon salt;
  • sesame seeds.

Grind the cottage cheese and add salt. After this, add flour and butter. Form butter crumbs, roll the dough into a ball and put it in the refrigerator for half an hour. Then roll out into a layer, cut out the cookies (using cutters or just a knife).

For the casserole, like all the dishes presented here, you should use slightly expired cottage cheese. That is, when we say that a dish is prepared from sour cottage cheese, we mean that its expiration date expired 2-3 days ago. If the product has an overly sour aroma, a lot of liquid has formed in the packaging, or it has changed color, it should not be eaten in any form.

Compound:

  • 250 g sour cottage cheese;
  • 150 g butter (first remove from the refrigerator so that it becomes soft);
  • 2 eggs;
  • 400 g flour;
  • 150-200 g sugar;
  • 1 lemon;
  • half a teaspoon of baking powder.

You need to make a dough from flour, half the amount of sugar, baking powder and butter. It will look like butter crumbs. Scald the lemon with boiling water and then remove the zest from it. Add it to the cottage cheese and break the eggs there. Mix everything thoroughly. Add the remaining sugar and beat the mixture with a mixer.

After greasing it with oil, place butter crumbs on the bottom of the round mold, compacting it with the bottom of the glass. You also need to form sides from the dough. Now you should pour the cottage cheese with eggs into the mold. Bake the dish for half an hour at a temperature of 170-180C.

We will prepare it like this:

    • 2 cottage cheese briquettes;
    • 4 eggs;
    • 7-10 tablespoons (focus on the acidity of the cottage cheese and your own taste preferences);
