Dairy products lose their pleasant organoleptic qualities before they become unsuitable for consumption. At the same time, they retain high nutritional value and many beneficial properties. Thrifty housewives are in no hurry to throw them away, even if the expiration date indicated on the packaging has expired. Tasty dough comes out of sour milk. Cottage cheese can also become the basis of many delicious dishes, even if it has already turned sour. An experienced cook knows several answers to the question of what can be made from expired cottage cheese, and this list is not limited to cheesecakes and casserole, which come to mind first.
Cheese pancakes made from expired cottage cheese
Most mothers know that cheesecakes are an easy and tasty dish for children in which they can “hide” the cottage cheese they don’t like. Delicate golden cheesecakes can be served for breakfast, afternoon snack and even dinner, and offered to children instead of less healthy store-bought cookies and sweets.
And if you decorate cheesecakes with powdered sugar, cream and fresh or canned berries, you will get an exquisite dessert. At the same time, preparing the dish is simple, even a novice cook can handle it. And this recipe is suitable if the cottage cheese has disappeared and has turned a little sour.
Ingredients:
- a pack of sour cottage cheese;
- 50 g granulated sugar;
- 1 egg;
- 50 g butter;
- 50 g wheat flour;
- raisins, vanillin.
Pour boiling water over the raisins and leave for half an hour. Rub the cottage cheese through a sieve, mix with the egg and sugar. Stir, add vanillin and softened butter, and then, stirring constantly, add flour. You may need a little more or less, depending on how much the dough takes. It should remain elastic, fairly moist, but uniform.
Lastly, steamed and slightly dried raisins are introduced, and the mixture is mixed again. Small cakes are formed from it, about 5 mm thick. They can be cooked in a frying pan, frying on each side. You can bake it in the oven for about 15 minutes. Finally, you can adapt a multicooker for this, using the “Frying” mode (the cheesecakes will also have to be turned over) or “Baking”.
Option 5 Soft cheesecakes with raisins in the oven
Raisins are an ideal and much-loved ingredient by many housewives, which they include in cheesecakes. Therefore, we could not ignore this option. True, this time we will cook the baked goods not in a frying pan, but on a baking sheet.
Ingredients:
- a couple of tablespoons of dry raisins;
- 505 grams of cottage cheese (fat);
- three tablespoons of flour (dessert);
- vanilla to taste;
- chicken (one) egg;
- salt/soda in the dough;
- baking sheet oil;
- 35-37 grams of sugar;
- boiling water for steaming raisins.
How to cook
Step 1:
Wash dry raisins. Place in a bowl and pour in boiling water. To cover with a lid. Leave to steam.
Step 2:
After half an hour (approximately), transfer all the cottage cheese into a bowl. Beat until fluffy using a mixer.
Step 3:
Then add fine sugar, soda, vanilla and a small pinch of salt. Also beat in a chicken egg.
Step 4:
Whisk the contents of the bowl and sift the flour. At the last stage, add the raisins that have been squeezed out of moisture.
Step 5:
Dust the kitchen table (very generously) with flour. Place the thick dough, forming a “sausage”.
Step 6:
Cut the workpiece into several (about 20) pieces. Give each one the shape of a classic cheesecake.
Step 7:
Now heat the refined oil in a flat-bottomed frying pan. One by one, send the soft cheesecakes inside. Fry for two minutes over medium heat with the lid closed.
Since raisins are quite sweet, take this fact into account when determining the amount of sugar you use. In addition, check if dried grapes have seeds.
This is important, because including fruits that contain them in a recipe is unsafe.
Cookie
The recipe for these cookies includes not only cottage cheese left in the refrigerator, but also old, dried out oatmeal cookies. This can often be found in almost every kitchen - there are a few pieces left at the bottom of the box that no one eats anymore, but it’s a pity to throw them away.
Compound:
- half a pack of cottage cheese (120-150 g);
- 4-5 pieces of oatmeal cookies;
- 2 eggs;
- sugar to taste.
The cookies need to be turned into flour. To do this, you can roll it out with a rolling pin, after putting it in a bag. It’s easier to break it into pieces and punch it with a blender.
Grind the cottage cheese through a sieve, add eggs and sugar and mix. Now you need to gradually add the resulting oatmeal into the curd-egg mass and knead a fairly dense “dough”. If necessary, you can add a little milk (if your friend poured too much oatmeal).
Line a baking tray with baking paper, pinch off small pieces of the “dough”, form them into a ball, and then into a flat cake. Bake the cookies for about half an hour at 180C until golden brown.
The finished product remains soft inside, but with a crispy crust. You need to add very little sugar, because oatmeal cookies are also sweet.
The next recipe is unsweetened sesame cookies. It resembles more of a snack or appetizer. And it can also be made from old cottage cheese. To do this, take:
- briquette of sour cottage cheese;
- 100 g butter;
- 1 egg;
- 1.5 cups flour;
- 1 teaspoon salt;
- sesame seeds.
Grind the cottage cheese and add salt. After this, add flour and butter. Form butter crumbs, roll the dough into a ball and put it in the refrigerator for half an hour. Then roll out into a layer, cut out the cookies (using cutters or just a knife).
Line a baking sheet with parchment and transfer the cookies. Beat the egg a little and brush the future pastries with it. Sprinkle with sesame seeds. Place in the oven for 20 minutes at 200-220C.
Option 1 Classic recipe for soft cheesecakes
How do the soft cheesecakes presented today differ from ordinary ones? Firstly, we suggest adding a minimum of flour just to prevent the dough from falling apart. Secondly, we recommend not to blot any oil from the finished baked goods. So, it will be enough just to shake off the fat when transferring from the pan to a plate. And thirdly, if the dough turns out to be a bit dry, we recommend adding sour cream rather than additional eggs. What will happen in the end? Let's find out now!
Ingredients:
- 450 grams of cottage cheese;
- one egg;
- 2-3 tbsp. wheat flour;
- 1-2 tbsp. Sahara;
- vanilla to taste;
- frying oil (refined);
- a spoonful of sour cream if necessary.
Step-by-step recipe for soft cheesecakes
Step 1:
Pour the cottage cheese into a container. Using the whisk of a regular mixer, beat until fluffy.
Step 2:
Next add sugar. If it seems like it's not enough, add more.
It is important to take into account that when heated, it will begin to melt and make the dough liquid. This means that the workpieces “will not set” and will burn
Step 3:
In addition to sugar, add vanilla. Break a fresh (preferably large) chicken egg. Continue beating.
Step 4:
At the next stage, sift the flour. Using a spatula, knead the viscous (sticky) dough. If the cottage cheese is too dry and the dough is not viscous, add a little rich sour cream to it.
Step 5:
Place a few tablespoons of flour in a heap on the kitchen table. At the same time, place a thick-walled frying pan over medium heat.
Step 6:
Pour in one and a half tablespoons of oil. Warm up.
Step 7:
Now scoop out a small amount of dough with wet hands. Form a round piece with several movements.
Step 8:
Bread in a heap of flour on all sides. Place 3-5 pieces depending on the width of the pan. Cook soft cheesecakes for 1-1.5 minutes. Turn over. Continue frying for the same amount of time. The entire process must take place under a closed lid.
After you remove the baked goods from the pan, it is not necessary to blot off the oil. This way the crust of the cheesecakes will remain soft, which is what we actually need. But it is recommended to serve them warm with any suitable drink.
Casserole recipe
For the casserole, like all the dishes presented here, you should use slightly expired cottage cheese. That is, when we say that a dish is prepared from sour cottage cheese, we mean that its expiration date expired 2-3 days ago. If the product has an overly sour aroma, a lot of liquid has formed in the packaging, or it has changed color, it should not be eaten in any form.
Compound:
- 250 g sour cottage cheese;
- 150 g butter (first remove from the refrigerator so that it becomes soft);
- 2 eggs;
- 400 g flour;
- 150-200 g sugar;
- 1 lemon;
- half a teaspoon of baking powder.
You need to make a dough from flour, half the amount of sugar, baking powder and butter. It will look like butter crumbs. It is important that the dry ingredients are thoroughly mixed and that the resulting crumbs are as fine as possible. If the mixture seems too oily, you can add another 50 g of flour.
Scald the lemon with boiling water and then remove the zest from it. Add it to the cottage cheese and break the eggs there. Mix everything thoroughly. Add the remaining sugar and beat the mixture with a mixer.
After greasing it with oil, place butter crumbs on the bottom of the round mold, compacting it with the bottom of the glass. You also need to form sides from the dough. Now you should pour the cottage cheese with eggs into the mold. Bake the dish for half an hour at a temperature of 170-180C.
The casserole is delicious both hot and cold. It will replace breakfast or an afternoon snack, and when cold it goes well with tea and coffee, serving as a dessert.
If the casserole according to this recipe is more reminiscent of a royal cheesecake or a light pie, then the following recipe may well qualify for the title of “classic”. The casserole is light, airy, and has a uniform consistency.
Ingredients:
- 250 g (pack) sour cottage cheese;
- 2 eggs;
- 50 g semolina;
- 100 g sugar;
- 30-40 g butter.
Cottage cheese should be ground through a sieve and mixed with sweetener. Then add eggs, semolina and butter. Mix everything well again. Grease the mold with vegetable oil, sprinkle a little semolina and place the dough in it. Bake at 170C for 20-25 minutes.
How to cook cottage cheese casserole?
Casserole is an ideal dessert that is prepared very quickly and easily. This dish will come in handy when guests unexpectedly arrive and there is nothing to treat them with. If you don’t know what you can make from sour cottage cheese, then this recipe is for you.
To prepare the casserole, you need to take the following products: 0.5 kg of cottage cheese, 3 tbsp. spoons of sour cream, butter and sugar, 0.5 tbsp. berries or chopped fruits, 2 tbsp. spoons of semolina, an egg, 100 g of raisins, breadcrumbs, and a pinch of vanillin.
We will prepare it like this:
- To begin with, you also need to grind the curd to get rid of lumps. You can use a sieve, meat grinder or blender. Melt the butter in a steam bath and add it to the prepared mass. In a small bowl, using a whisk, beat the eggs with the addition of granulated sugar. Add the resulting mixture to the curd mass. Put semolina, vanillin and salt there;
- The finished mass must be kneaded very well to obtain a homogeneous mixture. Dip the raisins in flour and then fold into the dough. Thanks to this trick, the dried fruits will be evenly distributed throughout the mass. Take a baking dish, grease it with oil and sprinkle with breadcrumbs. If there are none, then just put a sheet of parchment. Pour the prepared dough and place sour cream on top. Place the pan in the oven, which must be preheated to 200 degrees. Cooking time – 30 minutes. Serve the casserole by pouring condensed milk or jam over it.

Moreover, such delicacies turn out surprisingly appetizing, aromatic and tender. Take into account the suggested recipes. Perhaps they will help you overcome situations when money is tight.
Determining the degree of spoilage of cottage cheese
The level of deterioration of a given product is quite easy to determine:
- color change - from white or cream (depending on the percentage of fat content) to yellow;
- the presence of a bitter taste;
- the appearance of an unpleasant sour smell (the cottage cheese should smell pleasant);
- formation of a mass of mucus on the surface;
- intensive proliferation of moldy fungi, as evidenced by greenish inclusions in curd grains.
The presence of the first three points in the curd mass indicates that such a product can be eaten only after heat treatment. And the appearance of the following points means that cottage cheese is categorically not suitable for food in any form. Eating spoiled cottage cheese is fraught with serious food poisoning and intoxication.

Why does homemade cottage cheese turn out sour?
Many fermented milk products are prepared in the traditional way. To do this, the milk must be fermented and then heated. The resulting mass is filtered. Sometimes this procedure goes wrong, and the taste or consistency of the product deteriorates.
Reasons for a product tasting too sour:
- long ripening process;
- delayed cooling;
- weak heating of the fermented milk product, as well as poor separation of whey from it;
- storage in too warm conditions.
Low-fat fermented milk products are also often sour. It usually has a dry and crumbly consistency.

How to determine whether cottage cheese is sour or spoiled
To understand whether you can eat a sour product, you should pay attention to the following signs:
- Appearance. Fresh cottage cheese with low fat content has a white tint. The appearance of yellowishness on it indicates that the product has begun to disappear. When the percentage of fat content is increased, a slightly yellow color is normal, but if it becomes more pronounced, it means that the curd has gone bad.
- Structure. The product may be spoiled if its consistency begins to change, becoming uneven, for example, too soft in some places and hard in others. You can check this with a spoon by picking at the curd mass.
- Taste characteristics. Cottage cheese is characterized by sourness to one degree or another, but it is not always an indicator of the freshness of the product. If the mass has a pronounced sour smell and bitter taste, it should not be eaten.
Spoiled fermented milk products are harmful to the body, as they serve as a breeding ground for dangerous bacteria. They interfere with the digestion process and lead to serious problems with the gastrointestinal tract. This is what happens if you eat spoiled cottage cheese.
If the product has begun to sour, but the expiration date has not yet expired, you can still cook something from it.
Pancakes
Sour milk pancakes are a fairly well-known recipe. But if the cottage cheese is sour, it can also be added to the dough. The result is hearty and fluffy pancakes that go harmoniously with sour cream, fresh berries or jam. To do this you need to take:
- a pack of sour cottage cheese;
- 150 ml milk;
- 2 eggs;
- 1.5 cups flour;
- a little more than half a glass of granulated sugar;
- half a teaspoon of baking powder;
- a pinch of salt.
Sift flour with baking powder, saturate with oxygen. Beat the cottage cheese with a whisk or mixer at low speed with milk. Add sweetener, salt, eggs.
Mix the liquid ingredients with the dough, knead the liquid dough (the consistency of sour cream) and leave it for a quarter of an hour.
Pour a thin layer of oil into a thick-bottomed frying pan (cast iron is ideal) and wait for it to heat up. Pour the batter into the pan and start frying the pancakes.
As soon as holes appear on the top surface of the pancakes and the bottom surface is golden, it’s time to turn them over. The second side will fry faster, after which you can cover the pan with a lid for a couple of minutes. This will allow the dish to cook completely from the inside.
It is important to adjust the intensity of the fire. It should be moderate. If you fry over high heat, the pancakes will burn, leaving the inside raw. If the fire is low, the pancakes will lie in the oil for a long time and as a result will not rise.
