The main rule: in order for cheesecakes (cottage cheese) to turn out fluffy and airy - in cottage cheese. It should be moderately dry and not “drip” at all. That is, if it is too wet, then you need to drain all the excess liquid.
An ordinary gauze cloth, which you place over the cup, will help you in this matter. If the moisture is not removed, then when frying the curd cakes will not hold their shape well, spread out and run. Accordingly, splendor cannot be achieved. And the most interesting thing is that the wetter the cottage cheese, the more flour or semolina you will have to add. Thus, you will fill the dough with unnecessary ingredients, which you can do without in principle.
Add granulated sugar to taste, I indicated 2 tbsp, you can add 5 tbsp, but no more, because then when frying, the curds will darken very quickly, sugar syrup will be released, and the inside will not be fried. They will also stick to the pan easily.
Beat in one egg (one is enough, because it is needed to bind the ingredients together) and add 2 tablespoons of flour (do not add more, otherwise you will kill the true taste). Stir the mixture until smooth, but do not stir it for long.
Step 2.
Using your hands, roll small balls from the resulting mass.
A little secret, choose cottage cheese for cheesecakes with a fat content of 6-9%, this is the best option for preparing this dish.
At this stage, you can put steamed pieces of raisins or dried apricots, as well as a piece of chocolate or candy, in the middle of each curd. Then you will get a culinary product with filling. Cool, kids love experiments like this.
Step 3.
Sprinkle the surface with flour. Dip each ball in flour and flatten it slightly with your hand or knife. Take a regular glass, but it should be wide, and work on the table in a circular motion. During cooking, make sure that the first side has well-fried edges, achieve golden brownness and only then turn over. If this is not done, then the finished delicacies will not turn over well and they will begin to fidget around the pan.
And one more rule, the cooking time for cheesecakes is about 4-5 minutes; if you overcook them, the cottage cheese will become harsh and dry inside. Tenderness and softness can no longer be achieved later.

These are the beauties I got. It's blazing hot, and the smell is wonderful throughout the kitchen. All that remains is to sprinkle them with powdered sugar or pour milk filling or condensed milk over them.
