Cooking method
Pour oil (butter and vegetable) into a frying pan and heat it, then pour in the pasta. If you take spaghetti, it is better to break it.
Fry the pasta in a frying pan until golden and brown. The pasta is not fried evenly, so it will be a different color.
Place the pasta in a pan and add salt. Pour boiling water over the pasta; the water should cover the pasta by 1 finger. Cook the pasta over medium heat until the water has evaporated. Remove the pasta from the heat and cover with a lid, let it brew for 10 minutes.
Ingredients:
• 200 g arishta;
• 70 g butter or vegetable oil;
• 1 clove of garlic;
• 5 tbsp. l. matsuna;
• salt and pepper to taste.
Arishta is usually sold in long strips, like spaghetti.
It should be broken into pieces 6–8 cm long.
Then pour salted boiling water over it like pasta and cook with the lid ajar for 5-8 minutes. Readiness is checked in the same way as when preparing other pasta. The water needs to be drained and the arishta placed in a sieve or colander. Cool the arishta with cold water.
In the same pan where the arishta was cooked, melt the butter. If you want to prepare a lean dish, you can use vegetable oil.
Place the arishta into the pan and stir quickly. Close the lid and simmer over low heat for 10 minutes.
Prepare the sauce separately. To do this, crush a clove of garlic in a mortar.
Then mix it with a few spoons of matsun. That's all the sauce.

You just need to peel a large fresh cucumber, grate it on a coarse grater, mix with a clove of garlic passed through a press and finely chopped 3 sprigs of dill. The resulting vegetable mixture just needs to be diluted with unsweetened yogurt and salt to taste.

This recipe was shared with me by Uncle Armen from Yerevan, who is the closest relative of my sister’s husband. That’s why I called this wonderful dish Armenian pasta.
Armenian pasta is extremely easy to prepare, since even a schoolchild can easily prepare this dish, and in 15 minutes! For work we need vermicelli, water, salt, sunflower oil, butter.
Place 150 grams of vermicelli in a frying pan along with 15 ml of sunflower oil.
Fry over medium heat, stirring constantly, until the noodles are a firm caramel color. Do not cover the lid with the frying pan. This will take approximately 3-4 minutes.
At the same time, bring 275 ml of water with 2 grams of salt to a boil. As soon as the vermicelli is ready, pour boiling water into it, stir and immediately cover the pan with a lid. Reduce heat to just below medium and cook for about 4 minutes.
Add 20 grams of butter, stir and cook covered for about 4 minutes until all the water is absorbed by the noodles.
