Ingredients

For the dish you need to take:

  • fresh pumpkin – 330-350 g;
  • ground cinnamon – ½ tsp;
  • water – 75-80 ml;
  • beet sugar – 55-60 g;
  • apple – 130-150 g.

The weight of vegetables and fruits in the recipe is indicated in already peeled form. In addition to cinnamon, you can use other spices if desired. For example, nutmeg or vanilla. It will be enough to add 1 pinch of the latter to the treat.

The cooking process includes several stages:

  1. If the pumpkin is initially taken whole, then you will need to peel it in a thin layer and cut out the seeds. The remaining clean pulp will be cut into large cubes. Their optimal size is 2 by 2 cm.

  1. A whole ripe pumpkin should be washed under running water. Preferably using a stiff brush.
  2. Afterwards, you can cut off the top of the fruit. It must be removed along with the tail. It is convenient to do this using a sharp wide knife. But don't throw away the top. In the future, it will replace the lid for the dish.
  3. At the next stage, you will need to use a large spoon to remove all the pulp from the pumpkin along with the seeds. In this case, the skin should not remain too thin. Otherwise, it may break through during baking or when cutting ready-made treats into portions.
  4. You will need to wash the apples and cut out the core with seeds. Afterwards, the fruit should be cut into cubes of approximately medium size. The apple pieces should be slightly smaller than the pumpkin pieces.
  5. The fruit cubes must then be poured into a frying pan with a thick bottom and heated melted butter. The apples should be lightly fried so that all excess moisture evaporates from them.
  6. Next, rinse the raisins with warm water, then pour them onto a napkin and dry them slightly.
  7. Walnuts or other selected nuts must be shelled. Afterwards they are chopped into small pieces with a sharp knife. If desired, you can first lightly fry the nuts in a dry frying pan without oil until a bright aroma appears.
  8. You will need to combine the apple slices in the frying pan with nuts and raisins. Afterwards the filling is sprinkled with ground cinnamon. You can also use other spices.
  9. All that remains is to combine the sour cream with the entire amount of granulated sugar in a separate bowl. The resulting sweet sauce is poured into the filling.
  10. The prepared pumpkin needs to be filled with sour cream mixture. Next, it must be closed with the previously cut “lid”.
  11. The treat will be baked at 195-200°. After approximately 50-55 minutes, you can check the readiness of the pumpkin. This can be done conveniently with a knife or fork. If after the specified time the vegetable turns out to be still a little hard, the baking time should be increased by another half hour.

The cooking process includes several stages:

  2. At the next stage, you should wash the apples, peel them, and then remove the seed boxes. The remaining parts are cut into semicircular slices.

Pumpkin and chicken meatballs

Take:

  • 4-5 potatoes
  • 600 g pumpkin
  • 500 g chicken fillet
  • 1 egg
  • 100 g barley
  • 1 onion
  • sour cream - to taste
  • salt - to taste

Preparation:

  1. Rinse the chicken fillet thoroughly, dry it and mince it twice.
  2. Peel the pumpkin, peel the onion, mince the vegetables, then mix them thoroughly with the minced meat.
  3. Add barley and egg to the minced meat, salt to taste. Leave for 10-15 minutes (to swell the cereal).
  4. Form meatballs and place in a frying pan or baking dish. Pour some water into the bottom and brush each meatball with sour cream.
  5. Preheat the oven to 180°C, bake the meatballs for 25-30 minutes. The dish is best served with mashed potatoes and a salad of fresh vegetables.
