If you’re not sure you can handle a loin, use a pork neck
- Pork loin – 1 kg
- Tomato – 2 pcs.
- Mushrooms – 200 g
- Hard cheese – 200 g
- Garlic – 3 cloves
- Soy sauce – 2 tbsp. l.
- Mustard – 2 tsp.
- Vegetable oil – 3 tbsp. l.
- Salt – 0.5 tsp.
- Ground black pepper – 0.25 tsp.
- Lemon juice – 1 tbsp. l.
- Rinse the meat and dry with a paper towel.
Turn the meat over with the fattest side up and cut it into equal portions, but do not cut 1-1.5 cm to the edge.
The width of each piece should be about 1 cm.
You can use pork loin, tenderloin or neck for this recipe.
- Preparing marinade for meat.
Combine all the ingredients for the marinade and mix well. The garlic must first be passed through a press.
I used mustard from white mustard seeds; its taste is closer to sour and almost not spicy.
- Using a pastry brush, coat each piece of meat well on all sides.
Cover it with cling film or place it in a bag and put it in the refrigerator for at least 3 hours. It is best to leave the meat to marinate overnight.

We must take into account that we have as many as 3 ingredients for the filling, and since the meat slices are not cut all the way through, the space for filling is somewhat limited. Therefore, it is better not to make too thick pieces.
- Transfer the marinated meat to foil. It is better to immediately place the foil in a mold of a suitable size, since there will be a lot of liquid during the baking process.
If you have a mold the size of a meat accordion, you can put the meat directly into it and cover only the top with foil.
- In each cut we place a slice of tomato, cheese and several mushroom slices.
Try not to put too much filling at once, since as you stuff it, the free volume for it will be significantly reduced. If desired, you can add the filling at the end, or fold it tightly along the sides.
- Adjust the accordion meat and filling with your hands and give it the correct shape.
Press the foil tightly onto the meat on all sides.
- Cover the meat with another piece of foil on top.
Place the meat in a preheated oven and bake at 190-200ºC for an hour.
Time and temperature may vary depending on your oven.
- After an hour, remove the top foil and, if necessary, free the meat a little on the sides. Return the meat to the oven and bake it for about 30 minutes until golden brown on top.
The finished meat should be allowed to cool slightly so that the juices are distributed.
- The accordion meat is ready.
Serve hot with sauce, vegetable salad or side dish to taste.
