How to prepare okroshka with kefir and mineral water

Despite the fact that the base of the filling is kefir, the fermented milk product goes very well with spicy additives - try it, you will appreciate it. Ingredients for a 5-7 liter pan:
- Kefir – 3l.
- Water (still) -2-3l.
- Boiled sausage – 1-1.5 kg.
- Fresh cucumbers – 6-7 pcs.
- Eggs -17-20 pcs.
- Potatoes – 1-1.5 kg.
- Green onions - a lot (to taste).
- Dill/greens – a lot (to taste).
- Parsley/greens - a lot (to taste).
- Daikon – 1-2 pcs.
- Radishes – 2-3 bunches.
- Ready mustard – 170-200g.
- Ground black pepper - to taste
- Salt - to taste.
- We place kefir in the freezer, and it’s okay if it freezes; after adding it to the crumbled dish, it will add cool freshness to our dish.
- Boil the potatoes in their skins until tender. Crumble into a saucepan.
- We also boil the eggs hard-boiled, cool, separate them into whites and yolks: crumble the white into the total mass, but grind the yolk with a fork with mustard until a homogeneous thick mass.
- Wash the radishes and radishes thoroughly and peel them if necessary, grate the daikon on a coarse grater, and finely chop the radishes.
- Greens: onion, dill, parsley, wash and finely chop with a knife.

- 6-12 radishes depending on size;
- 5 eggs;
- 4 potatoes;
- 100 gr. spinach;
- green onions, parsley, dill to taste;
- 1 liter of kefir;
- 500 ml water;
- 100 gr. sour cream;
- 2 teaspoons prepared mustard;
- salt, black pepper to taste.
Pre-boil the chicken breast. When cooking, add salt, allspice, and bay leaves to the broth. Cool the chicken in the broth. Then remove the meat from the bones, remove the skin and cut into small cubes.
We also cook eggs and potatoes in advance. When the food has cooled, you need to peel it and cut it into cubes. Chop the greens. Sprinkle with a little salt and grind until the juice appears. Mix the greens and all other chopped products. Add diced fresh cucumbers and radishes to the mixture.

- 150 gr. fresh cucumbers;

Immediately prepare all the necessary ingredients; they should be at approximately the same temperature.
First, finely chop the greens, sprinkle them with a couple of pinches of salt and pound them well using a wooden masher. Grate fresh cucumbers and radishes. Cut potatoes and eggs into cubes. Mix everything well.
Cut the boiled meat into small cubes, cutting across the grain so that it does not fall apart. Mix the meat with the rest of the cold soup ingredients. Place the prepared mixture on plates and pour cold tan or ayran. Add salt to taste.

Boil 4 potatoes and cut them into cubes, boil 4 hard-boiled eggs and chop with a knife or mash with a fork. Wash 3 fresh cucumbers, cut off the bitter peel from them if necessary and also cut into cubes, like 300 g of boiled sausage. Finely chop a bunch of green onions, a few sprigs of dill and parsley.
Mix the products in a saucepan, add 200 g of mayonnaise and pour in 1.5–2 liters of water, constantly tasting. The taste of okroshka should be quite rich and pleasant. After that, salt it, pour in the juice of half a lemon and add a little horseradish, mustard or black pepper if desired. Decorate the okroshka with radish slices on top.
