Making your own Chinese noodles is a labor-intensive process that requires manual dexterity in every sense. First, knead a stiff dough from 250 g of flour and 100 ml of water, cool it thoroughly and roll it into a thin rope. Next, it is stretched to the sides, tossed up and down. When the tourniquet reaches its maximum length, fold it in half, but so that it does not tangle, and continue to stretch. Such manipulations are repeated until the finest threads are obtained.

Preparing Chinese noodle dough

Among the inhabitants of the Middle Kingdom, noodles rank second in popularity after rice. The recipe for Chinese noodles itself is quite simple, but preparation requires some skill. For the dough, you will need to knead 250 g of rice flour and approximately half a glass of water, after which the mass will need to be thoroughly cooled and rolled out into a rope. With deft movements to the sides and up and down, the dough is stretched to its maximum length, after which it is folded in half and stretched again. The result should be super thin “spaghetti”. Since not everyone is able to master making Chinese noodles at home, you can limit yourself to rice noodles from the store. The easiest and fastest way to cook it is with vegetables. Fry the chopped onion, 4 cloves of garlic and 1 tbsp in vegetable oil. l. ginger root. Place the zucchini, carrots and bell peppers cut into strips. Stirring constantly, simmer the vegetables for 7 minutes. Meanwhile, pour boiling water over 200 g of noodles and steam for 5 minutes. Then we put it in a colander, combine it with vegetables and simmer for another 3 minutes. Cover the dish with a lid and let it brew for 10 minutes. Classic Chinese recipe

The classic Chinese noodle recipe calls for the use of veal, as well as several herbs and spices.

Ingredients:

  • 380 g Chinese noodles;
  • 350 g veal;
  • onion;
  • two cloves of garlic;
  • ginger;
  • ½ tsp. brown sugar;
  • spoon of tomato puree;
  • three tablespoons of sesame oil;
  • two spoons of soy seasoning.

Cooking method:

  1. Cut the meat into strips and cook in salted water until cooked.
  2. In heated oil, saute chopped ginger, garlic and onion half rings.
  3. Literally after half a minute, add the boiled veal and season the ingredients with sugar, sesame oil and tomato paste.

A more satisfying variation is a recipe for Chinese noodles with chicken and vegetables. Cut 2 chicken breasts into cubes and marinate them for 20 minutes in a mixture of 3 tbsp. l. soy sauce and 3 crushed cloves of garlic. Soak 200 g of rice noodles in boiling salted water for 5 minutes, drain in a colander and rinse under cold water. Fry the chicken in a hot frying pan with oil. As soon as it turns white, add the chili pepper cut into thin rings and 1 small onion, cut into half rings. After a couple of minutes, add the noodles and fry for 5 minutes. At the end, pour in 1 tbsp. l. apple cider vinegar and 2 tbsp. l. soy sauce. We simmer the noodles for another minute and call the household members to the table. Recipe for Chinese noodles with chicken and vegetables

Kitchen utensils: a pan for boiling noodles, a colander, paper towels, a cutting board and a sharp knife, a Korean carrot grater (you can do without it), a deep frying pan (preferably a wok), a silicone or wooden spatula, a serving dish on the table.

Step-by-step preparation

Preparation

  1. Pour 1 liter of water into a saucepan and place it on the stove, let the water boil.

  2. Take 100-120 g of Chinese noodles and gradually lower them, as they soften, into boiling water. When the water with the noodles in it boils again, reduce the heat and let the noodles boil for about 7 minutes. Then we put it in a colander and set it aside for a while.

  3. We cut a slice of chicken fillet several times lengthwise into slices and then crosswise to form small cubes.

  4. We rinse two leaves of Chinese cabbage with water, dry them (to speed up the process, you can blot them with paper towels) and cut them first crosswise, fold the halves on top of each other, then lengthwise. We fold the resulting quarters of the sheet again and cut them into thin strips.

  5. We clean the washed bell pepper from the core with grains and cut first lengthwise into slices, then crosswise into thin strips.

  6. A clove of garlic, peeled from its hard shell, is crushed with the wide side of a knife and finely chopped. You can also use a garlic press, but for this recipe it is recommended to chop it.

  7. Next we prepare the carrots: wash, peel and grate them on a Korean carrot grater into long thin strips. If you don’t have such a grater, cut the carrots with a knife, but try to make the stripes as thin as possible. As a last resort, you can grate the carrots on an ordinary coarse grater, but in this case the appearance of the dish will no longer be quite Chinese, although this, of course, will not affect the taste.

  8. Peel one small onion, rinse with water if necessary and cut into thin half rings. If you are afraid of such large pieces of onion in a dish, then you can cut the onion halves in half before chopping.

Having finished preparing the products, you can proceed directly to cooking.

Cooking

  1. Pour two tablespoons of vegetable oil into a heated frying pan (if you have a wok, it’s better to use it) and fry the chicken fillet cubes in it, keeping the frying pan over medium heat. Fry, stirring, for a very short time, about two minutes, until the meat changes color on all sides.

  2. As soon as the color of the meat has changed, add a tablespoon of soy sauce and fry for another 3-4 minutes.

  3. After the specified time, add chopped onions, garlic, peppers, carrots, cabbage to the frying pan, mix everything and leave to fry for another 3 minutes.

  4. After 3 minutes, add the previously cooked noodles to the vegetables, pour teriyaki sauce over them and mix thoroughly so that the noodles are saturated with sauces and the aroma of the vegetables.

  5. Once the noodles have absorbed the juices of the vegetables, they are ready.

  6. Now transfer the contents of the frying pan onto a beautiful plate and enjoy the prepared dish.

If you can’t find rice noodles, egg or wheat noodles can easily replace them. How to cook Chinese noodles at home in this case? Mix 4 tbsp. l. light soy sauce, ½ tsp. salt, 1 tsp. corn starch and 1 tbsp. l. water. Cut 450 g of pork neck into thin slices, fill them with marinade and put them in the refrigerator for 30 minutes. Fry the pork in a deep frying pan in a large amount of oil until golden brown. Transfer it to a paper towel to drain all the fat. Pour ½ cup of water, 4 tbsp into a clean frying pan. l. dark soy sauce and 3 tbsp. l. hoisin sauce. Place the pieces of pork here, bring the mixture to a boil and immediately remove from the stove. Boil 400 g of noodles, place them on plates and add pork.

Cooking with shrimp

Chinese cuisine is not complete without seafood, which is why national noodles are often prepared with such ingredients. For the recipe, you can use any sea creatures or a ready-made seafood mix, but be sure to add vegetables and soy sauce.

Ingredients:

  • 320 g noodles;
  • 650 g shrimp;
  • six tablespoons of oil (sesame);
  • 20 ml each of rice vinegar and soy seasoning;
  • carrots and sweet pepper;
  • two garlic cloves.

Cooking method:

  1. We cut the vegetables into strips, chop the garlic into slices and fry in oil. If there is no sesame, then we use regular vegetable, but odorless.
  2. As soon as the vegetables become soft, add the seafood and fry them until golden.
  3. Add the boiled noodles to the other ingredients, season everything with sauce and vinegar, keep on the fire for a couple more minutes and serve.

Sea holidays

Fish gourmets will be pleased with the recipe for Chinese noodles with seafood. For a richer taste, you can take an assortment, but you can also limit yourself to shrimp - 150 g. Water them with a mixture of 2 tbsp. l. soy sauce and 2 tbsp. l. lemon juice and marinate for 20 minutes. Soak 200 g of rice noodles in boiling water and, as soon as they swell, drain in a colander. Fry the onion in vegetable oil until transparent, add one carrot and bell pepper, cut into strips. When the vegetables have softened, add shrimp and noodles to them and, stirring constantly, simmer for no longer than 2 minutes. This dish will decorate your table both on weekdays and on holidays.

Soba

Buckwheat noodles come from Japan. In traditional culture, the color of soba depends on the season: summer (green or reddish) noodles are prepared from unripe buckwheat, while for winter and autumn noodles, ripened grains are taken, which means their color is gray-brown. The light nutty flavor of soba rhymes well with duck and pork, as well as fresh vegetables - peppers, green peas. Soba is also found in miso soup. It is sometimes served cold along with soy sauce mixed with dashi broth.
