The most famous American fast food dish is not so difficult to prepare at home for a friendly party or just for a Sunday family dinner, because both adults and children will be happy with it.

Ingredients

Mushroom burger

Ingredients:

  • Oil (olive) – ¼ cup
  • Vinegar (balsamic) – ¼ cup
  • Spices (oregano) – ¼ tsp.
  • Salt - to taste
  • Pepper - to taste
  • Onion (red) – 4 rings
  • Mushrooms (champignons) – 8 pcs.
  • Bread (buns) – 4 pcs.
  • Cheese – 4 pieces
  • Lettuce (green) – 4 sheets

Preparation:

  1. In a separate bowl, whisk together oil, vinegar, oregano, and a pinch of salt and pepper. Throw in the champignons and marinate at room temperature for 30 minutes to two hours.
  2. Heat the grill and place the mushrooms on it, do not pour out the marinade - you will need it later. Cook each side for five minutes until the mushrooms are browned.
  3. Dip four pieces of red onion into the remaining marinade and place on the grill. Cook with champignons for 3-4 minutes.
  4. Cover four champignons with cheese and wait until it melts.
  5. Assemble the burger in this order: bottom bun, lettuce, fried red onion, mushroom with melted cheese, plain mushroom and top bun.

How to choose ingredients

The secret to a delicious burger recipe lies in the right ingredients. They must be fresh and of high quality.

  • When purchasing a bun, pay attention to the baking date. An old bun will be dry and tough. Burnt or pale baked goods are also not suitable for this dish. By the way, you can bake the bun yourself. Take the recipe for unsweetened yeast dough as a basis.
  • The tomato must be ripe, but not soft, otherwise it will leak . A white or green center may indicate incorrect growing technology or the content of any chemicals in the tomatoes.
  • Onions can be very bitter or sweetish. Choose this vegetable according to your taste. When choosing a bow, pay attention to its weight. If the onion is too light, it means it has dried out from the inside. Sprouted onions can also be spoiled.
  • To prepare this dish, pickled cucumber is used ; it may have a sweetish taste. But if you like sour things, you can take pickled ones. Their taste is different due to different technologies for preparing these vegetables.
  • When buying processed cheese, pay attention to its composition. The first place should be either milk or other dairy products such as cottage cheese. If the ingredients start with water, vegetable fats or similar ingredients, do not purchase this product.

Step-by-step recipe for a burger (hamburger) at home with photos

  1. Wash the tomato and cut it into thin slices.

  2. Slice the pickled cucumber into thin slices. It is advisable to cut lengthwise.

  3. Peel the onion and cut it into rings. Try to cut as thin as possible.

  4. Wash and cut 0.5 bunch of lettuce leaves.

  5. Cut 3 buns in half.

  6. Take 350 g of minced meat and mix it with a mixture of dry spices and salt. It is more convenient to mix with your hands so that the spices are distributed as evenly as possible.

  7. Make 3 flat cutlets from the minced meat.

  8. Grease the bun and grill pan with vegetable oil.

  9. Heat a frying pan and fry the buns on the cut side for about a minute. The buns will be ready when they have a crispy crust.

  10. Grease the pan with oil again and fry the cutlets on it for 3-4 minutes on one side.

  11. Then turn the cutlets over and continue cooking on the other side. Meanwhile, place a slice of melted cheese on each cutlet. While they cook, the cheese will melt.

  12. Place the finished cutlets on paper towels to absorb excess fat.

  13. Brush the fried part of the buns with a mixture of tomato and mustard sauce in a 1:1 ratio.

  14. Place the cutlet on a bun, top with a tomato, then onion rings and a few slices of pickled cucumber.

  15. Place lettuce leaves on top. Cover with the other half of the bun.

  16. Homemade burger is ready.

Hamburger buns

Soft, tasty and elastic buns can be prepared at home. In this case, you will be sure that there are no preservatives in the dough. The most common option is yeast dough.

Mix a glass of warm milk with a glass of warm water, add 1 tbsp to the liquid. l. sugar and 1 tsp. salt. The water should not be too hot, otherwise the yeast will die and the dough will not rise. You can knead the dough with water, but milk gives it tenderness and a creamy aroma.

Now add an 11 gram packet of instant yeast and mix the liquid with 2 tbsp. l. soft butter. Mix well and leave the mixture for 5 minutes until it comes to life and bubbles. Once you see the yeast working, gradually add 5.5 cups of flour using a food processor. This will take you 7–10 minutes.

Cover the bowl with the dough with a damp towel and leave it alone for an hour. During this time, it will increase in volume by approximately 2 times. Divide it into 10-12 parts and form beautiful and smooth balls. To do this, stretch the dough down the ball and pinch it - the surface of the future bun will stretch and become smooth. Now, pressing the buns with your palms, turn the balls into flat cakes 1 cm thick.

Place the buns on a baking tray covered with baking paper and place the dough pieces on it at a distance of at least 3 cm from each other. The fact is that in the oven the products will become more fluffy and therefore may stick together.

Allow the buns to rise a little longer before baking. Brush the surface of each product with egg yolk mixed with 1 tbsp. l. water and sprinkle with sesame seeds. The seeds will not stick to a dry surface, and the yolk will make the buns rosy and appetizing.

The average baking time is 15 minutes at 200°C, but it all depends on the oven, so keep an eye on the buns and, as soon as they acquire a nice golden color, remove them from the oven.

Yeast buns can be stored in the refrigerator for a week in cling film and spoil your beloved family with healthy homemade burgers every day! Some housewives prefer to add eggs to the dough, because then the buns hold their shape better, although they are stored much less.

Cooking tips and tricks

  • The taste of this dish directly depends on the proportions of the ingredients. Customize your burger according to your taste preferences. If you don't like onions, replace them with bell peppers or thinly sliced ​​garlic. Pickled cucumber can be replaced with fresh one. Instead of lettuce leaves, you can use parsley. Tomato can also be replaced with any other vegetable.
  • You can add more sauce such as ketchup. But it is undesirable to add mayonnaise; it will add extra calories to an already filling dish.

Proper meat, perfect minced meat

The most important thing in preparing the right burger is the beef patty, which is made according to special rules and only from homemade minced meat. Store-bought minced meat is not suitable for this dish, because you do not know what kind of meat it is made from. It’s good if it’s made from marbled beef, in which 80% is meat and 20% is fat. And if not? Therefore, it is better to buy high-quality beef yourself - for example, let two-thirds of the minced meat be lean meat from the shoulder blade and a third from the fattier abdominal part (flank). The upper part of the hind thigh (rump) and the fleshy part near the three outer ribs (rump) are also suitable for the cutlet. These places contain just the right amount of fat! As a last resort, you can add some pork to lean beef. This, of course, is not a classic, but the proportions will be respected.

Slice the meat along the grain, and then grind it in a meat grinder with a larger attachment. Minced meat should not look like puree, because small grains of meat make it juicy and especially tasty. The less the meat structure is damaged, the better! All you need to do is add salt and black pepper to the minced meat - no more spices or additional products! A cutlet cooked with the addition of soaked buns, eggs, onions and garlic is not a burger. And one more important point - salt the cutlet before frying, and not before, because salt leads to the release of juice and the burger will turn out dry and harsh.
