“Curly” soup with noodles and eggs: step by step with photos

Home Chicken soups

Curly soup with egg looks funny and children really like it. But it is not as simple as it seems. It turns out that it is prepared in different countries, for example, in Georgia, Italy, China. It can be prepared from completely different products, but with one essential ingredient - a raw egg poured into boiling water, which makes the soup “curly”. But the taste of this soup will depend on which of our 15 recipes you choose.

Before adding a raw egg to the soup, beat it with a fork in a small bowl (or a cup). It should be poured at the end of cooking, in a thin stream, and only into the boiling soup, which is continuously stirred.

Let's cook the fry

Put a piece of butter in a preheated frying pan and when it melts, put the prepared onions and carrots in it.
Let the vegetables simmer for 7-10 minutes over low heat. Do not fry too much, as in the recipe Stewed pike perch in sour cream with vegetables, this is children's curly soup with egg, a recipe from our childhood, and fried foods are not advisable for children. So, the frames are cooked, take them out onto a dish with a slotted spoon and leave to cool. Let's also remove the onions and carrots from the pan; we won't need them anymore. In a boiling broth, the same as in the recipe Green nettle soup with dumplings, put chopped potatoes, let it boil and add broken vermicelli. As soon as it boils, add salt, reduce the heat and cook for ten minutes.

It's time to take apart the chicken bones. Separate the meat from the bones and add to the pan. Following the meat, add onions and carrots fried in butter. Add heat until it boils. Using the spoon or fork used to beat the egg, we will stir the contents in a circle, making a funnel. Take a bowl with a beaten egg and pour it in a thin stream into this funnel. The egg mixture, falling into such a funnel, twists and turns into curls.

Here's curly soup with egg, a recipe from childhood! Simmer over low heat for a couple of minutes. Serve with herbs and sour cream. Bon appetit!

Curly soup in chicken broth with fried vegetables

This is a simple but hearty and healthy soup made from traditional ingredients. Adding an egg makes it more interesting than regular chicken broth soup.

Ingredients:

  • half a kilo of chicken meat
  • two eggs
  • 4-5 potatoes
  • 1 onion and carrot each
  • pair of teeth garlic
  • 2 laurel sheet
  • salt, pepper and herbs
  • 30 g plant. oils

Preparation:

Place chicken meat in cold water (two liters) and put on fire.

Chop the potatoes into cubes, grate the carrots using a large-hole grater, finely chop the onion.

Chop the garlic cloves. Chop the greens. Beat the eggs.

Fry onions and carrots in oil until golden brown.

Skim the foam from the broth being prepared, cook the chicken until soft, remove to cool and cut into pieces.

Add potatoes.

After a while, add the chopped meat, frying, salt, pepper, cook for another five minutes.

Add eggs in a thin stream. Add garlic, bay, herbs and cook for another two minutes.

Cooking method

1.

We start preparing the soup with broth. We cook it with chicken meat. It is ideal to use meat on the bone. Chicken necks, wings, and back are good options - all this gives a good fat. We also add onions and carrots to the chicken, but we don’t use them in the soup later - they will give the broth everything they could give.

2.

While the broth is cooking, prepare the frying. Many people believe that frying “kills” the pleasant taste of chicken soup. But here opinions differ. I prefer to make curly soup with butter - the taste is softer.

3.

As you can understand, we will fry the carrots and onions in butter. Chop the vegetables as desired.

Note

The potato strings in the soup look like hair, which is where the soup got its name Zodeln - sort of like hair or hair.

This recipe for Vogtland cuisine is from the not very nourishing post-war years. The older generation doesn’t really like this soup - after all, wars mean not only cruel losses, but also hunger.

More often this dish is offered to tourists as a local exotic.

TATbRHA

Oh, how much I like it!!! Well, everything is mine – right down to the grated potatoes!! Thank you, MariV

!

MariV

Cheers, Tatyana! Yes, what’s important here is fast! These potatoes can be grated, washed, put in a plastic bag and in the refrigerator.

lie

Quick to prepare and quite tasty!

Wonderful recipe! Already cooked and eaten. It turned out to be two servings - the potatoes turned out to be rather large, and at first they were a little too salty. I added water and everything turned out to be normal - both thickness and salt.

I had no lard or bacon. They used pieces of ham that were squeezed out from the top of the ham press. Just today I was thinking about where to put them, and then the idea popped up. Potatoes prepared this way have a very unusual taste. Thank you Olya!

PS This recipe can also be posted in the “Axe Porridge” topic. Cheap, fast, tasty, unusual and cute!

Vera-Nica

very appetizing plate, broth, brisket, potatoes and greens - delicious! Thanks for the recipe

MariV

Girls, I'm glad you liked the soup.

I also really liked the taste and speed of preparation. I also often have pieces of ham left over from pressing in Tescom.

But cats line up behind them... And they refuse to eat the leftovers from the purchased boiled-smoked brisket......

Scops Owl

Olya, I was always looking for cabbage in the ingredients. How unusual, I’ll definitely take it into service. After all, you can quickly cook when you don’t have time. Also surprise. Let them look for cabbage too

MariV

No, there is no cabbage here. Only potatoes. I repeated it yesterday - delicious!

MariS

What a delicious photo! “Shaggy, you say, but he looks very neat.

irysikf

The soup in the photo turned out so sunny, I just want to eat it

MariV

irysikf

, thank you, it’s also delicious - why do we need Asian instant soups? We ourselves have a mustache!

MariS

, Marina, I’ve been looking for a translation for this name for a long time - I don’t have a huge dictionary with me, what the Internet offers is to die and not get up... I had to start from the verb - to shaggy, to shaggy - to dance.

Arka

Olga, thanks for the idea!!! I was cooking noodle soup and saw your “shaggy one.” I decided to grate the potatoes the same way and it turned out great! Mercy!!!

MariV

Cheers, Nata! Let's make our own quick soups!

An easy soup from childhood... Here it is, a great recipe for a nutritious soup that I usually use when one of my family members has a cold. The soup is light and tasty and won’t take much of your time to prepare. It is prepared without frying. Children especially adore it for its “curliness”. This effect is created due to the addition of a beaten egg. I highly recommend trying to cook it.

The soup turns out to be of medium thickness, more rare than thick. I like to use vermicelli of the “spider web” variety or something like “mivina”; this vermicelli is very thin and does not boil, giving the soup a decent appetizing look. The “curly” soup with noodles and eggs tastes simply amazing. Cooked in chicken broth, it will benefit the body and fill you up for the whole day.

Chicken fillet - 300 g potatoes - 2-3 pcs. Spider web vermicelli - 50 g chicken egg - 1 pc. onions - 1 pc. carrots - 1 pc. seasoning from a mixture of dry vegetables and herbs - ½ tsp. bay leaf - 1 pc. salt - to taste ground black pepper - to taste fresh dill - a couple of sprigs

1. Prepare chicken broth. Place 1.5 liters of water in a saucepan, place on the stove and bring to a boil. After boiling, add the chicken fillet there and cook until it is ready, remembering to remove the foam. Then remove the chicken meat, cool and tear into pieces.

2. Peel the onions and cut them into fine cubes.

3. Peel the carrots, wash and cut into small cubes.

4. Peel the potatoes and cut into medium-sized cubes. I had two large potatoes, so if you have small potatoes, you may need to increase the quantity of potatoes. Then place the potatoes in a saucepan with the broth, let it boil, reduce the heat and cook for 10 minutes.

5. After 10 minutes, add the onions and carrots to the pan. 6. Grind the dill. Beat the egg. When the potatoes are almost ready, add noodles to the soup and pour in the beaten egg in a thin stream, stirring continuously with a fork. 7. Add chopped dill at the very end, bring to a boil, hold for half a minute and turn off.

Stracciatella

This Italian soup is probably the fastest egg soup we have described (well, maybe comparable in speed to pink salmon soup). It can be cooked with both meat and vegetable broth.

Ingredients:

  • half a liter of broth of your choice
  • two eggs
  • tablespoon semolina
  • a piece of cheese
  • lemon for juice
  • salt and pepper to your taste
  • parsley

Preparation:

Heat the broth and add salt.

Break the eggs into a separate bowl and add grated cheese. Shake with a whisk.

Chop the parsley.

Add semolina to the hot broth while stirring. Let it boil.

At a medium simmer, stirring vigorously, pour in the egg and cheese mixture, simmer for one and a half minutes, add chopped herbs and lemon juice, and remove from heat.

When serving on top, you can also sprinkle with herbs.

A charming girl shows how to do all this in this video:

Chinese tomato soup with egg

This recipe, despite its origin, is similar to some we have already given, but stands out in that it requires starch and sesame oil.

Ingredients:

  • 1 liter of water
  • two eggs
  • two tomatoes
  • green onions
  • one tooth garlic
  • green cilantro
  • ground black pepper
  • salt
  • 1 tbsp. l. starch
  • any vegetable oil for frying
  • Sesame oil

Preparation:

Cut a bunch of onions as follows: white lower parts separately, green feathers separately. Grind the cilantro. And separately garlic.

Chop the tomatoes fairly finely.

Break the eggs into a bowl and mix (without beating).

Mix 1 tablespoon of starch into one liter of cold water.

Heat 2-3 tablespoons of vegetable oil in a wok, throw in the white parts of the onion, and brown. Add tomatoes and salt. Fry until the tomatoes become soft. Pour water with starch, mix. While it is boiling, add salt and pepper. Remove the foam. When it boils more, reduce the heat. While stirring, pour in the eggs in a thin stream. Switch off. Add chopped garlic and add a few drops of sesame oil.

When serving, sprinkle with cilantro and onions.
