  • a handful of raisins;
  • a handful of roasted walnuts.

Cooking process:

  1. For the cakes, mix sour cream with granulated sugar, then add soft butter, then soda, slaked with vinegar, and wheat flour. Mix the products thoroughly to obtain a dense mass.

Place the mixture in a round baking dish, approximately 20 cm in diameter, grease it with butter and sprinkle with flour. The thickness of the cake should be about half a centimeter thick. We bake a light cake. Place the mold with the dough in an oven preheated to 200 degrees for 10 minutes. After that, remove the cake from the oven and set aside to cool.

Add 1 tbsp to the rest of the mixture. spoon of cocoa, stir. Sprinkle the mold with flour and fill it with the brown dough mixture. Bake the cake for about 15 minutes at a temperature of 200 degrees.   • Place the dough into the pan to make a light crust and bake for about 20-25 minutes. It is important that it is not advisable to open the oven for the first 10-15 minutes. Cold air can cause the cake to settle;
  • Next, you need to wait until the finished cake has cooled slightly and remove it from the mold;
  • After this, you need to rinse the mold well, dry it and coat it with oil again. The dark cake is baked in the same way.

Making the cream:

  • cooled sour cream should be transferred to a deep dish and granulated sugar should be poured into it;
  • Next, the ingredients need to be mixed using a mixer. It is advisable to choose medium speed so as not to accidentally whip butter from the sour cream;
  • The readiness of the cream is determined by the homogeneous dense state of the sour cream. In this case, the granulated sugar should have time to dissolve.

Glaze decoration:

  • break the chocolate into pieces and place them in a container (preferably with a thick bottom);

We celebrated the New Year, my New Year's menu went off with a bang, and even such an unusual dish for Turks as duck with apples and prunes also created a sensation.

But the highlight of the program was, of course, the cake - “Curly Guy”, or “Pincher”.

It's very easy to prepare, the only thing that takes time is assembly. Although, judging by some photos on the Internet, many don’t even bother with assembly - they throw on pieces of cake at random, fill it with cream (sometimes even very liquid), and the “curly head” is ready. I, an idealist, can’t do that - I need everything to be smooth, beautiful, and at the same time homely.

For lovers of this cake, I am posting a recipe with photos.

For the sponge cake: 6 eggs, 1 cup sugar, 2 cups flour, 2 packets vanilla sugar, 1 packet baking powder, 5 tbsp. spoons of cocoa

For cream: 5 packets (200 g each) of heavy (for whipping) cream

5 table. tablespoons natural unsweetened Turkish yogurt (or regular sour cream) 2 cups sugar

For filling: 3 bananas

4 kiwi

For decoration: 200 gr. dark chocolate bar

Springform baking dish 24 cm.

Preparation:

Preheat the oven well, then turn it down to 180 degrees.

Dough: Mix eggs and sugar in a deep mixing bowl, beat with a mixer until the sugar dissolves. Add cocoa, baking powder, vanilla sugar, and beat with a mixer until the cocoa lumps dissolve.

Add flour, and use the mixer again to bring the dough until smooth (you can do everything by hand, it will take longer).

Baking: Grease a springform pan with NOT melted butter. Pour the dough into the mold. Place in a well-heated room at 180 degrees. oven, bake for about 40 minutes.

Check the readiness with a toothpick - pierce the cake; if the toothpick is dry, the cake is ready.

Remove the crust from the oven, separate from the pan, and place on the counter to cool.

Meanwhile, prepare the cream: Pour cream, yogurt (sour cream) into a deep mixing bowl, add sugar - beat for 5-7 minutes until thick (so that the cream does not drip from the spoon). Place the cream in the freezer for 10 minutes so that it does not freeze, but “sets” a little and becomes even thicker in appearance.

Assembly: Cut bananas and kiwi into cubes. From the cooled cake, cut off the base for the cake - half the cake or 1/3. Cut the remaining part of the cake into small cubes. Place the cake base in a springform pan.

Grease the top of the cake base with cream. Next, lay out the cake cubes (not very thickly) in a chaotic order.

Place kiwi and banana cubes in the free spaces between the cubes.

Fill the top generously with cream.

Repeat the procedure two more times. In total, the cake will be 3-level, although these levels will not be visible later. The third level should reach just to the edge of the springform pan.

Using a knife with a thick blade or a spatula, generously coat the last layer with cream. If the cubes of cake or fruit “stick out” somewhere, press them with a knife, so the top of the cake should be smooth.

Place the cake in the freezer for 10 minutes until the cream sets.

After 10 minutes, remove from the freezer, carefully running a knife along the edge of the pan from the inside, and also carefully remove the baking pan.

Brush the edges of the cake with the remaining cream. If necessary, add it on top and smooth it out well.

Place in the freezer again for 5 minutes.

Meanwhile, melt the chocolate in a water bath. Add a couple of tablespoons of water, stir until smooth and elastic.

Remove the cake from the freezer. Using a spoon, pour chocolate on top in random order on top and sides.

Place in the refrigerator for soaking.

And it would be nice to have an accent, but even those few Russian phrases that the heroine uttered were extremely difficult for me, a Russian, to understand, because There were mistakes in many of them; Turkish subtitles helped out. Either the text was not written by a native Russian speaker, or the actress did not have time to learn her Russian lines at a decent level - one of two things. It was a little upsetting.
