I met this representative of marine fauna quite recently - I bought it on the advice of a saleswoman in a store. She praised the delicious meat of this fish - soft, tender, not tough, very little fat, except perhaps in the fins. And from an ecological point of view, dory is considered one of the cleanest, since it lives at great depths.
To be honest, the appearance of this sea creature is unattractive - a large head, bulging eyes and a flat body. But behind the frightening “appearance” lies a real delicacy with very tasty pulp and a small number of bones. Another advantage is the absence of scales, so you don’t have to bother with cleaning. On the shelves, this fish is sometimes found under the name sunfish, and is sold without a head, so as not to confuse buyers with its appearance.
