You can cook it any way you like - on the grill, in a frying pan or in the oven, but the sauce will give the main highlight to the taste of the fish. Some people make do with store-bought ketchups, others prefer high-calorie mayonnaise.

Nutritionists recommend using low-fat yogurt in the sauce recipe. Full ingredients for fish sauce:

  • 250 g unsweetened yogurt;
  • 1 small clove of garlic;
  • 1 fresh cucumber.
  1. Grind the cucumber and garlic (you can use a blender).
  2. Mix with yogurt.
  3. Salt and pepper.

Many people will recognize this recipe as Greek tzatziki sauce.

Another recipe for those who cannot refuse mayonnaise is Caucasian garlic sauce. According to the recipe you need to take:

  • 2-3 sprigs of fresh cilantro;

250 g of yogurt contains 200 kcal, and 100 g of mayonnaise contains 623 kcal, so the recipe for Greek tzatziki sauce can be considered dietary.

Fish selection

The freshness of fish is one of the important criteria for obtaining a dish with high taste characteristics. Fresh salmon has elastic flesh with a dense structure. Since frozen fish is mostly available for sale, you need to focus on its color: it should not be too pale or, conversely, too rich. Pallor means repeated defrosting and freezing, in which case the fish will turn out dry. Too bright a color may indicate the use of dyes. Natural salmon is not uniform, but has light veins.

Salmon steak in a slow cooker

Using a multicooker is an excellent solution for those who cannot afford to spend a lot of time at the stove. Moreover, the taste of the dish is in no way inferior to salmon steak baked in the oven or fried in a frying pan. Ingredients you will need to stock up on:

  • fish steaks;
  • mustard;
  • freshly squeezed lemon juice;
  • seasonings;
  • potatoes;
  • greens.

Each salmon steak is thoroughly rinsed under water and dried with a paper towel. Then the fish is rubbed with seasonings and generously covered with mustard. The preparatory stage ends with sprinkling with freshly squeezed lemon juice. Salmon in this state must be set aside for twenty minutes, during which time it will have time to soak in the dressing.

After the time has passed, the fish is placed in the multicooker bowl. When deciding to steam, it is recommended to add a few cups of regular drinking water. You can also add a couple of potatoes, pre-cut into medium-sized cubes, and finely chopped greens. Total cooking time is thirty minutes. The recommended multicooker mode is “Steaming”.

Grilled salmon steak

Perhaps one of the fastest ways to cook red fish steak. In addition to salmon, you will need the following ingredients:

  • lemon;
  • olive oil;
  • coarse sea salt;
  • chicken eggs;
  • dill;
  • thyme;
  • basil

Fish steaks, previously sprinkled with freshly squeezed lemon juice, are thoroughly rubbed with sea salt, and then left in this state for five minutes. Meanwhile, the remaining squeezed lemon is cut into small cubes. To make the dressing, mix the egg yolk and olive oil in equal proportions. As a rule, frying a salmon steak on a grill or grill does not take more than ten minutes. The final touch will be thyme sprigs and lemon cubes, served along with the finished salmon steak.

Secret from an expensive restaurant

In the middle of the last century, one of the Warsaw restaurants became famous for the fact that the chef fried amazingly tasty “red” fish. But it so happened that his secret soon became the property of many culinary specialists. And here's how to cook salmon steak according to a Polish chef's recipe.

In addition to four portioned pieces of fish, you need: vegetable oil, cucumber, 250 grams of classic unsweetened yogurt, salt, lemon, garlic.

Using tweezers, remove the bones from the washed and dried steaks. Sprinkle with lemon juice. After heating the pan, add the salmon, fry and add salt at the very end of cooking. The fact is that salt promotes the release of moisture and juice, and we need to preserve all the taste of the fish.

The subtlety is that in this recipe we do not turn the steaks over, but pour boiling fat over them in the process. As soon as the fish becomes noticeably paler on top, try pressing the piece with a knife; if clear juice comes out, you’re done! And now the most important thing is the sauce - mix the grated cucumber with yogurt, add some salt, add finely chopped garlic. The ideal side dish in this case is simple boiled potatoes and lettuce, on which, by the way, the steaks are placed. This is how the food looks exquisite, “restaurant style.” As you can see, everything ingenious is surprisingly simple.

Salmon with herbs

This recipe produces juicy fish with a pleasant and fairly strong aroma. To prepare red fish steak in the oven, you need to take the following ingredients:

  • one steak;
  • a couple of tablespoons of olive oil;
  • a tablespoon of breadcrumbs;
  • 50 grams of white bread;
  • a couple of pinches of grated cheese;
  • parsley and basil to taste;
  • four cloves of garlic;
  • salt and pepper.

First, prepare a fragrant herbal sauce. To do this, use a blender to chop parsley and basil. The bread is poured with warm water, then squeezed out and sent to the herbs, add crackers and a tablespoon of butter. Grind again using a blender.

Garlic is peeled and cut into pieces. Add it, the remaining butter and cheese to the sauce. Mix again. The salmon sauce should be smooth.

One side of the steak is coated with sauce. The baking sheet should be covered with parchment. Place the steak on it, sauce side down. Then they coat the piece again, but this time on top. Place the red fish steak in the oven for five minutes at a temperature of 260 degrees, then reduce it to 180 and maintain this mode until the fish is ready.

Dishes for celebrations and banquets

Now for some more complex recipes suitable for lunch and dinner parties. A little secret, the cooking technology does not become much more complicated in these cases, but salmon acquires its exquisite taste due to additives and sauces. Steaks from this fish can be easily and quickly marinated by adding to the above ingredients: white pepper (an ideal companion to any seafood), mustard, olive oil, soy sauce, and not only lemon, but also orange juice.

Let’s take a special look at the original recipe, according to which salmon steak is baked in a creamy sauce with mushrooms. For a portioned piece you need: a spoonful of vegetable oil, a teaspoon of lemon juice, a handful of champignons, 50 grams of butter, half a medium-sized onion, half a glass of cream 10-15%, a tablespoon of flour, salt to taste, dill if desired.

We wash and blot (from excess moisture) a portion of salmon. Place a baking pan on a baking sheet and grease it with vegetable oil. The container should have sides because later we will add creamy mushroom sauce. Place the steak and place in the oven at 180 degrees for 10-15 minutes.

We cut the onion and simmer it, without frying, in a frying pan in butter. There we add the champignons according to the recipe, pre-cut into slices. Dissolve a spoonful of flour and salt in the cream and pour the mixture into the frying pan with the mushrooms and onions, stirring. Bring to a boil and leave, without stopping stirring, on the fire for another 2-3 minutes.

Then pour the resulting sauce over the steaks and leave in the oven for another 5 minutes. Lunch or dinner worthy of a gourmet - ready!

And finally, the most complex and unusual recipe from the arsenal of wonders of Mediterranean chefs. For it you will need: 4 pieces of salmon, a spoonful of corn or wheat flour, saffron, rosemary, 3 cloves of garlic, an orange, 8 allspice peas, the juice of half a lemon, 4 tablespoons of vegetable oil, herbs (parsley, dill).

We wash the salmon and blot it very (!) thoroughly with napkins

This is important because we will be “sealing” portioned pieces of fish by frying them in a frying pan over very high heat, and excess “water” is not our ally in this! As soon as we notice the crust, we immediately turn the fish over. It may be half-baked inside, but we will finish it in the oven.

We make portioned “boats” out of foil, place baked pieces of salmon in each, on the sides of which we place orange slices (without films). Pour in the sauce and cover the boats with foil on top. Fried salmon is a very tasty and healthy dish. Regular consumption of this fish will significantly reduce the risk of diabetes, strokes, arthritis and even cancer. Salmon is rich in potassium and calcium, which have a beneficial effect on bone tissue, as well as phosphorus, which normalizes liver function. Even an inexperienced housewife can cook fried salmon.

Pan-fried salmon with lemon juice

  • salmon – 1 kg;
  • pepper, salt - to taste;
  • coriander – 1 tsp;
  • vegetable oil – 50 ml;
  • lemon juice – 1-2 tbsp;
  • flour.

Wash the salmon thoroughly, dry it and cut it into steaks with a sharp knife. The thickness of each of them should not exceed 2-3 cm.

In a separate container, mix ground black pepper, salt and coriander. Sprinkle the mixture generously over the steaks. Leave the fish to marinate for 20 minutes.

Roll each piece in flour and place in a frying pan with heated vegetable oil. Sear the steaks on all sides without reducing the heat temperature. The readiness of the fish is determined by the formation of a golden brown crust.

Fried salmon in honey sauce in a frying pan

  • salmon – 1 kg;
  • salt and pepper - to taste;
  • vegetable oil – 50 ml;
  • garlic – 2 cloves;
  • liquid honey – 2 tbsp;
  • wine vinegar – 2 tbsp;
  • soy sauce – 6 tbsp.

Clean the salmon fillet, rinse under running water and dry well with a paper towel. Season with salt and pepper to taste and refrigerate for half an hour. After this time, cut the fish into portions.

Prepare the sauce. To do this, mix honey, soy and wine vinegar until smooth.

Pass the garlic through a press, place it in a frying pan with vegetable oil and place on low heat. After some time, remove the garlic. Instead, place pieces of fish so that the skin is on the bottom. Fry until a light crust forms. Turn the salmon over to the other side and pour the honey sauce over it. Repeat the steps several times.

The finished dish can be served both cold and hot. A fresh vegetable salad is ideal as a side dish.

Asian fried salmon in a frying pan

  • salmon – 1.5 kg;
  • vegetable oil;
  • fresh dill or parsley;
  • French mustard – 1-2 tbsp;
  • olive oil – 6 tbsp;
  • soy sauce – 2 tbsp;
  • garlic - 2 cloves.

Prepare the marinade. Using a blender, beat the soy sauce, mustard, garlic and oil.

Rinse the salmon fillet under running cool water, dry and cut into portions. Place the prepared fish on a flat plate and pour half of the prepared marinade over it. Wait approximately 15-20 minutes.

Place the marinated fish in a frying pan with heated vegetable oil and fry on each side for 5 minutes. Transfer the finished salmon to a plate, pour over the remaining marinade and leave for 10-15 minutes.

Garnish the fish with sprigs of fresh herbs and serve. As a side dish you can take mashed potatoes, vegetable salad or rice.

Fried salmon in cheese batter in a frying pan

  • salmon steaks – 10 pcs;
  • boiled chicken egg – 1 pc;
  • sesame – 2 tbsp;
  • cheese – 50 gr;
  • sour cream – 3 tbsp;
  • flour – 2 tbsp;
  • salt, pepper - to taste;
  • olive oil – 2 tbsp;
  • milk – 1 tbsp.

Rinse the steaks with running water, sprinkle with salt and pepper and leave in the refrigerator for several hours.

Prepare the batter. Grind the boiled egg on a fine grater. Mix it with sesame seeds, grated cheese, sour cream, olive oil and milk. Roll the steaks on all sides in the resulting batter and place in a frying pan with vegetable oil. Fry the fish on each side until golden brown.

  • salmon steaks – 5 pcs.;
  • red cabbage – 100 g;
  • butter – 50 g;
  • onions – 1 pc.;
  • apple – 1 pc.;
  • raisins – 1 tbsp. spoon;
  • pickled ginger – 1 tbsp. spoon;
  • broth – 300 ml;
  • soy sauce - to taste;
  • vegetable oil – 2 tbsp. spoons;
  • fresh ginger – 10 g.

Preparation

Take a head of red cabbage, chop it finely and add salt to taste. Peel the onions and cut them into half rings. Then carefully peel the apples (do not throw them away) and cut them into slices.

Melt a little butter in a frying pan, add the onion and fry for 5 minutes, stirring constantly.

Without wasting any time, let's start preparing the sauce for the fried salmon. Take a saucepan, add the remaining butter and melt over low heat. Add the apple peels and fry them for 5 minutes. Then add soy sauce, chicken broth and reduce by half. Strain well, add grated fresh ginger and mix well. Now it's the fish's turn.

How to fry salmon steak? Salt the fish, pepper to taste and fry in vegetable oil over high heat on both sides for 5 minutes. Place the finished fish on the cooked cabbage and pour plenty of sauce over it. Well, that's all, delicious, aromatic and juicy fried salmon is ready!
