To get closer to Italy in our time, you just need to cook something Italian. But if you don’t have much time and really want to go to Italy, I recommend you a recipe for pasta with tomatoes and cheese.

Pasta with tomatoes stewed in a frying pan

This recipe from the series is simple, quick and economical. To cook pasta with tomatoes stewed in a frying pan, all you need is a frying pan - a significant plus when cleaning the kitchen. The finished side dish can be served with a cutlet or sausage - it turns out very tasty!

Ingredients:

  • Pasta – 400 g;
  • Tomato – 5 pcs.;
  • Onions – 1 pc. (big);
  • Vegetable oil – 2 tbsp;
  • Garlic – 3 cloves;
  • Parsley - 3 tbsp;
  • Salt - to taste;
  • Black pepper - to taste;
  • Water – 2 tbsp. (200 ml).

Preparation:

Peel a large onion and cut into small cubes. Finely chop the garlic cloves with a knife.

Remove the skin from the tomatoes (to do this you need to make cross-shaped cuts on the skin and pour boiling water over them - you can see more here) and cut into medium cubes. If the tomatoes are too watery, it is better to place them in a bowl so that the juice does not spread on the cutting board.

Heat vegetable oil in a large deep frying pan and fry the chopped onion until slightly golden, stirring occasionally to prevent it from burning.

Add tomato cubes and chopped garlic to the fried onions. Mix the vegetables well and simmer in a frying pan for 5-7 minutes.

Add pasta to the pan, I used cones (pictured), but any pasta will work for this dish: spirals, shells, farfalle or butterflies, fusilli, penne, etc.

Mix the pasta and vegetables well, add salt and pepper to taste, pour in 2 cups of boiling water, cover with a lid and place on low heat. Simmer the pasta under the lid until cooked, periodically checking the presence of water and the softness of the pasta (refer to the time indicated on the pasta packaging).

Add chopped parsley to the prepared pasta, stir, cover with a lid, turn off the heat and let the pasta steep for 4-5 minutes.

Delicious, aromatic and juicy pasta with tomatoes is ready, you can serve it with any meat dish.

By the way, in winter, such pasta can be prepared from frozen tomatoes or tomatoes in their own juice. Bon appetit!

The task becomes more difficult

You can make a sauce from fresh tomatoes for pasta with the addition of tomato paste and red wine. The alcoholic drink will give the sauce a spicy, magical aroma. You can make the sauce in the following sequence:

  1. Finely chop the onion and fry it in olive oil in a frying pan. As soon as the vegetable acquires a golden color, you can squeeze out 3 cloves of garlic and add a small bunch of parsley, after chopping it.
  2. While the preparation is stewing - the stewing time is no more than 5 minutes - you can prepare the tomatoes. To do this, 3 tomatoes are doused with boiling water and the skin is removed, the pulp is scrolled in a blender.
  3. Chopped tomatoes are placed in a frying pan and simmered for another 10 minutes.
  4. After the time has elapsed, add 2 tbsp to the almost finished sauce. l. tomato paste, pepper and other spices. Simmer like this for another 10 minutes.
  5. At the end of cooking, the workpiece is seasoned with red wine in an amount of no more than 50 ml.

The tomato and tomato paste sauce is ready. When serving, sprinkle with chopped herbs to taste.

Pasta with tomatoes and garlic

Ingredients:

  • Spaghetti - 400 grams;
  • Tomatoes - 6-8 pieces;
  • Garlic - 8 cloves;
  • Olive oil - To taste;
  • Ground red pepper - To taste;
  • Sea salt - To taste;
  • Red bell pepper - 1 piece;
  • Parmesan - To taste.

How to cook Pasta with Tomatoes and Garlic

Let the spaghetti cook. Without heating the pan, generously pour olive oil over the bottom. Chop the garlic well. Cut the tomato into medium slices. Cut the bell pepper lengthwise into thin strips. Now heat the frying pan over medium heat (2-3 minutes). Add the garlic, fry for 2-3 minutes, stirring constantly, not allowing it to turn brown. Add tomatoes and pepper to the garlic, sprinkle everything with ground red pepper and salt to taste. Mix well and reduce heat to low. Don't forget to keep an eye on the pot of pasta, it might be ready. Mash the stewed tomatoes with a tablespoon. Turn off the stove. Tear fresh basil leaves and sprinkle them over the tomatoes. Place the finished pasta in a colander and pour it into the pan with the prepared tomatoes. Stir everything over medium heat.

Italians consider pasta to be their national dish and its origins began in Italy.
Although it is documented that Marco Polo, an Italian traveler, brought pasta from China. The Italians answer in this regard that Polo just said that the Chinese also eat pasta. You can’t argue with the Italians here, such is their hot temperament! Two poets of ancient Rome - Cicero and the no less famous Horace - argued that pasta should be cooked only in salted sea water. Nowadays, such culinary experiments would hardly take root, and pasta is still prepared not in sea water, but in fresh, salted water. By the beginning of the 9th century, the first presses for making pasta appeared. Such a device makes a huge contribution to the development of pasta: it helps to preserve pasta much longer. Italian pasta is quickly winning the hearts of Europeans, who are beginning to add it to a wide variety of dishes: salads, soups, desserts and even baked goods. By the end of the 9th century, pasta making technologies improved, and pasta with tomatoes became a truly popular and affordable dish for all residents of Italy.

Pasta with garlic and tomatoes

This dish can be served with grated cheese, and you can do without cheese by including this spaghetti in your meatless and vegetarian (dairy-free) dishes.

Ingredients for Pasta with Garlic and Tomatoes:

  • Pasta / Pasta (spaghetti) - 500 g;
  • Tomato (long ones recommended) - 4-5 pcs;
  • Onion - 1 piece;
  • Garlic (and more, to taste) - 3-4 pcs;
  • Olive oil - 100 g;
  • Basil (dry or 2 tbsp fresh) - 1 tsp;
  • Hard cheese (For a non-lenten recipe (Parmesan) - to taste, whoever wants it).

Recipe for Pasta with Garlic and Tomatoes:

1. Boil pasta in water with 1 tbsp. l. salt

2. Finely chop the onion. Finely chop the garlic, crush it, or grate it on a fine grater. Fry in olive oil until golden brown.

3. Remove the finished spaghetti from the water (half a glass of this water will be needed to prepare the sauce)

4. Place tomatoes in hot pasta water and leave for 2 minutes.

5. Remove the tomatoes, peel them (2 minutes in boiling water will help do this), chop finely.

6. Place peeled and finely chopped tomatoes in a frying pan (wok, saucepan), where the onions and garlic are fried and stewed. Simmer, stirring, for several minutes. Add a little pasta water if needed. The tomatoes should not be cooked, but very well soaked in the sauce of olive oil, onion and garlic.

7. Add pasta, mix well. Remove from heat and leave to soak for 5 minutes. You can serve with grated hard cheese, preferably Italian Parmesan, or sprinkle with dried or fresh basil and skip the cheese by including this spaghetti in your meatless and vegetarian (dairy-free) dishes.

  1. First you need to prepare the sauce. To do this, you need to take the garlic, peel it, finely chop it or chop it with a sharp kitchen knife, rinse the chili pepper under cold water, cut out the seeds and cut into small pieces.
  2. After this, you will need to wash the tomatoes, make several cross-shaped cuts on its peel, immerse them in boiling water for 2 minutes, cool slightly and carefully remove the skin. Peeled tomatoes should be chopped into small pieces.
  3. Next, you need to grease the frying pan with olive oil, heat it well, add chopped garlic and chopped chili peppers, stir, fry a little, then add chopped tomatoes, mix again and cook until all the moisture has evaporated.
  4. Then you need to dry the olives a little, cut them into rings, pour them into the frying pan, add capers, add a small amount of regular salt, mix well, turn on moderate heat and cook the sauce for 3-5 minutes, without stopping stirring.
  5. Now you can wash the basil, dry it, chop it finely, add it to the pan and after 1 minute. remove from heat. After this, you need to cook the pasta by placing it in boiling salted water. They will need to be cooked for 7 minutes, stirring. Then you need to transfer the pasta to a colander to get rid of the water.
  6. Pour a little olive oil into the pasta, stir, pour in tomato sauce and serve.

The smaller the pasta, the faster it will be ready and the sooner the dish can be served. This advice will be relevant for the future. Just remember to remember it in time.

If you want to get as close to Italian cuisine as possible, use a lot of basil, rosemary, mozzarella and definitely Parmesan. It can be said that Italian cuisine is built on these ingredients.
