- 400 g cottage cheese 9% fat;
- 400 g sour cream 20% fat;
- 180 g granulated sugar;
- 100 ml milk 3.2%;
- 25 g gelatin.
How to make curd jelly:
1. Pour gelatin into a saucepan and fill it with cold milk. Leave for 20-30 minutes for the gelatin to swell and soften.
2. Place the saucepan over medium heat and, stirring constantly, heat until the gelatin is completely dissolved. Be careful not to let the mixture boil! Otherwise, the gelling properties will be impaired.
3. Combine cottage cheese with sugar and mash with a fork. Add sour cream and use a blender to beat the mixture until smooth. Try to break up all the curd grains to get a delicate creamy consistency of the finished dish.
4. Add diluted gelatin to the mixture and beat again until smooth.
5. Pour the mixture into portioned containers or into one large mold. Place in the refrigerator until completely frozen. How long curd jelly hardens depends on its volume. Dessert in small molds will be ready in 2 hours, but it may take 5-6 hours to harden in a large container.
6. Before serving, immerse the mold in warm water for 20 seconds to make the jelly easy to remove. Or you can serve directly in the molds. Garnish with fresh berries, your favorite sauce or grated chocolate.

- The less fatty the sour cream, the better it will whip. This means that store-bought sour cream is much better suited for the dish than homemade.
