Dough for dumplings made from whole grain flour is suitable for almost everyone: those who are on PP (proper nutrition), who have diabetes, who love white flour, who love culinary experiments.

I think it’s no secret to anyone that this flour is much healthier than ordinary premium flour, which contains exclusively the inner part of the grain, that is, starch. In whole grain flour, all the value is in the grain shell, since it contains vitamins B and E, proteins, fiber, minerals, iron, manganese.

On the pages of Online Baking, I already told you about how I prepare dough for dumplings from whole grain flour and premium quality. Then I took the ratio 1:4. This time I have exclusively c/z, that is, a PP recipe.

Features of dough preparation

Dough for dumplings made from whole grain flour, like any other, can be prepared with any liquid - water, milk, curdled milk, kefir, sour cream, and so on. You can use one thing or combine it with something else. This time I kneaded it with fermented baked milk to somewhat soften the structure.

Should I add an egg to dumpling dough? Every housewife here has her own opinion. I cook differently - when I put it in, when I don’t. From which you can conclude that I like both options equally. With eggs, such semi-finished products swell somewhat when cooked. I don’t recommend using a lot, but 1-2 pieces per kilogram of dough is okay.

The kneaded dough should be given time to “rest”. Minimum - 30 minutes. Preferably 5-6 hours. You can store it in the refrigerator for up to two days. From the ingredients listed below, I got exactly 1100 g.

Filling recipe options


The filling has, of course, more options than the dough recipe.
First of all, it concerns meat. It is better to avoid fatty pork during the diet, but young veal, chicken or turkey fillet are ideal. You can even use a mixture of them. In addition, you can add a large number of your favorite seasonings to the meat, the main thing is that all the spices and herbs are natural and contain a minimum of salt. Herbs can be either fresh or dry.

An obligatory ingredient in minced meat is an onion; it can also be supplemented with garlic minced through a meat grinder. In addition, some craftsmen, during a diet, for nutritional value and for the “strength” of minced meat so that it does not fall apart in their hands, modify the recipe and add to it a small amount of any flour that was used to prepare the dough. This procedure does not affect the taste of future dumplings in any way, but it helps improve some of its general characteristics.

It is quite possible to turn dumpling dough into dumpling dough by replacing the meat filling. Of course, here you should also not forget about the diet, and choose a recipe not with potatoes, but, for example, with low-fat cottage cheese, cabbage or mushrooms. Sweet filling, due to the presence of sugar, also remains prohibited. This option should also turn out very tasty and attractive. Such variety is especially important for those losing weight, whose table is usually not replete with a large number of desirable but forbidden delicacies.

Cooking technology

Since wheat flour is replaced by bran in Dukan dumplings, the dough is molded well, but does not stick together so easily. To increase stickiness, you need to slightly moisten the dough pieces with water.

Otherwise, the process of sculpting and preparing dietary dumplings is standard:

  1. Roll out the dough into a thin layer, cut out circles with a glass, put the filling in their center, and seal the edges well. You can use a dumpling maker - this will speed up the modeling process.
  2. Cook in boiling water for eight to ten minutes.
  3. Serve the dumplings hot, sprinkled with herbs and pepper to taste. Instead of sour cream, you can use low-fat natural yogurt.

Dumplings can also be frozen.

Homemade diet dumplings according to Dukan are healthier and healthier than store-bought ones made from wheat flour. If you know some tricks, then the process of preparing them will not differ in any way from the standard one, and as a reward for your efforts you get a tasty and healthy meal that even those who do not adhere to the Dukan diet will appreciate.

Other parameters of ideality are uniform consistency, density - optimal for modeling, juiciness (but not “fluidity”!). The finished minced meat must be mixed and left to “saturate”. The method of preparation affects. You need a meat grinder with a large attachment - this way you will get juicy minced meat, not a paste-like mixture. It is better to chop the fish with a knife.

There are different fillings: fish, meat, vegan. But the main ones are meat and fish. Further without restrictions: lamb with mint, fish and cream, meat with vegetables or cheese, in the Siberian style - with black pepper, Asian motifs - fish with soy sauce, ginger, and dozens of creative improvisations. Don't be afraid to experiment, but remember proportions. For example, for the Ural ones - we mix beef, pork and lamb 1 to 1, and for non-classical combinations, like the fashionable surf&turf - pork with shrimp - we take pork, shrimp and onions in equal proportions.

If you want to make the minced meat more marbled, brisket will do; you can add lard separately. For lighter options - rabbit, turkey fillet, chicken thighs. To avoid dryness, add mushrooms or more onions - be sure to cut them into small cubes. It is important that the bow does not draw the emphasis onto itself. Other “juicy” techniques: add broth to meat, add onions fried in butter to fish, cream or butter at room temperature. Another option is to freeze the prepared minced meat balls until an ice crust forms or add crushed ice.

Diet dumplings recipe

First of all, you will have to face the terrible, unbearable truth: it is impossible to buy diet dumplings in the store. Just like good dietary minced meat. Our advice is to buy meat

oh to suit your diet.

And from the products you will need:

  • 1 egg;
  • Water;
  • 200 g chicken fillet;
  • 3 tbsp cornstarch;
  • 1.5 tablespoons wheat bran;
  • Salt and spices to taste.

Minced meat is prepared in the following way: first you disinfect the meat by rinsing it under hot water. Then you can cut it into pieces and pass through a meat grinder. Then do the same with the onion, and, already chopped, add it to the minced meat, along with the spices.

We will look at the dough recipe below. Now let's move on to cooking the dumplings themselves! So, we sprinkled enough flour on the table so that the dough does not stick to the surface. Next, you need to roll it out into a circle, and cut into many small circles (large enough to wrap them in a dumpling). Next, lay out the meat and wrap our little meat friends! If the edges do not meet well, they can be wetted with water.

Afterwards, put them in boiling water. When the dumplings float to the surface, you need to wait another 10 minutes and then put them on a plate or a special dish. Voila, the food is ready! It is recommended to eat dietary dumplings with chicken with low-fat cottage cheese.

Dumplings for future use

If you are freezing dumplings, put them in a bag (make sure it is whole!) and put it in the freezer. It is better to pre-freeze for 2 hours on a tray or board sprinkled with flour (to prevent them from sticking), and then package it - this way the dumplings will not stick together. Store for up to 6 months at -18°C.

IMPORTANT: freeze the dumplings as soon as possible after making them, otherwise the juicy filling will soak into the dough and it will tear.

Spices included in the dietary composition will help organize healthy and flavorful dishes. We present to your attention a simple recipe for lazy dumplings. To prepare them correctly you will need:

  • 200 g cottage cheese, without liquid and fat;
  • 1 chicken egg;
  • 1 tbsp. a spoonful of oat bran;
  • 1 tbsp. spoon of wheat bran;
  • 2 tbsp. spoons of starch.

Step-by-step instructions for preparing dietary “sloths” look like this:

  1. Combine cottage cheese and egg, mix thoroughly.
  2. Add bran and starch, then beat the mixture thoroughly with a whisk. If the mass comes out liquid, you need to add another spoonful of starch.
  3. Roll out the dough for lazy dumplings and cut into circles. Place a teaspoon of cottage cheese inside the dough and seal the edges.
  4. Place the dumplings in pre-boiling water; after they float to the surface, they can be served.
  5. The sauce for this dish can be made from low-fat yogurt. For those who have a sweet tooth, you can sprinkle the sloths with cinnamon or orange zest.

We generally consider the optimal proportion to be 3 parts minced meat to 2 parts dough - the thinner the dough, the tastier the dumplings. But the GOST provided for an equal share, but now they have already allowed 60% dough for 40% of the meat. The reason is clear - the price of dumplings depends on this proportion - production in our times is focused on profit. By the way, if there is less than 40% meat, it is already ravioli. It makes you smile when you read the recipes - for 500 grams of flour, 250 grams of meat! What's this? You will inevitably remember General Ivolgin, played by the brilliant actor Alexei Ivanovich Buldakov, who clearly distinguished between what dumplings are and what ravioli are. We will also differentiate. Either we eat real meat dumplings, of which you can eat a hundred of them in a sitting and not gain weight, or we fill our stomachs with dough. But everyone has their own taste and we will give different recipes.
