  3. The bag must have a lot of folds. They are made in a special way, not just by molding the dough around the cheese, but by laying the folds with the other hand. There should be at least 18-20 of them. Therefore, sculpting khinkali is an art; real craftswomen make up to 36 folds.
  4. The tastiest thing is khinkali with suluguni cheese. But you can take any salty variety, as long as it melts easily.
  5. You need to prepare enough cheese khinkali to cook it right away. After all, the juicy filling can make the dough soggy.
  6. During cooking, cheese khinkali should not be stirred, otherwise they will tear and the filling will leak out. To prevent them from sticking, shake and turn the pan. To prevent khinkali from sticking together, you need to cook them in small portions in a wide saucepan.
  7. People eat khinkali stuffed with suluguni cheese using their hands. You need to take it by the tail, carefully bite it and drink the juice. Then eat the whole bag, but without the tail. It usually remains a little soggy.

Knead stiff dough for kveri. Let it rest a little, meanwhile prepare the filling.

Grate Suluguni and Imeretian cheeses on a coarse grater, add egg whites, butter and flour. Mix the resulting mixture thoroughly.

Pinch off 40 g of dough, form into a ball and roll out thinly.

  • water - 1 tbsp. (boiled, cooled to room temperature);
  • salt – ½ tsp;
  • dill and parsley (fresh) - 1 small bunch each.

You can also use spices for this recipe (for the filling). A mixture of ground colored peppers or just white and black peppers work well.

Step-by-step cooking process

The cooking process includes several stages:

  1. First, be sure to pass the flour through a sieve.
  2. Afterwards it will be poured into a wide bowl in a heap in the middle. A recess is created in the center of this structure.
  3. The egg is broken into a glass. Water is poured to the very top of the dish. The liquid temperature should be approximately 35-40 degrees. The mixture is salted and mixed well.
  4. The mixture from the last step needs to be carefully poured into the middle of the flour slide. In this case, it will be convenient to mix the components with a fork. When it becomes difficult to work with such cutlery, you can start using your hands. The result should be a pleasant soft base that does not stick to your fingers. If you happen to have a bread machine with the appropriate function in your house, you can speed up the dough kneading process by using it. This will greatly simplify the cook's task.
  5. The resulting base is covered with a bag or a clean natural towel and left on the table for about 35-45 minutes.
  6. For the filling, Adyghe cheese is grated. You should get medium-sized chips. Afterwards it is mixed in a deep container with cottage cheese. You can first mash it with a fork or break the lumps with your finger.
  7. Salt and a raw egg are then added to the resulting filling mixture. She's salty. And pepper or other spices are added as desired.
  8. The greens are first washed and dried. Afterwards you need to chop it finely. It is allowed to take either a mixture of dill and parsley, or just one.
  9. When the chopped greens are mixed with the cheese and curd mass, the filling will be completely ready. You can use it further.
  10. The dough should be rolled out into a thin layer. The optimal base thickness is 1-1.5 mm. If it is difficult to work with the entire volume of dough at once, you can divide it into parts, and only then roll out each one. While one is being processed, the rest must be covered with film so that they do not become airy.
  11. Neat circles of the desired diameter are cut out from the already rolled base. If the hostess does not have a special device at hand for this, you can even take a wine glass. A serving mold with a diameter of 6 cm works well.
  12. The filling is placed in the middle of each piece. All that remains is to pinch the edges of the dumplings in any convenient way.

Rules for serving dishes, decoration

It is convenient to steam the resulting dumplings in a slow cooker. To do this, pour water into the bowl of the device according to the instructions. An oiled steamer container is placed on top. It is best to take butter fat for it. Then the dumplings will definitely not stick during the process.

All that remains is to lay out the fillings in the container and close the “kitchen helper” with a lid. You should not cook more than 12-14 pieces at a time. The device selects the steam cooking mode. You can simply cook them in a program intended for soup, in salted water.

7. Cook the kvari for about 7 minutes in lightly salted water, like regular dumplings.
