Hello! Delicious and juicy minced chicken cutlets are one of my family’s favorite meat dishes. Therefore, I try to cook them often for my family. But to prevent them from becoming boring, although this is unlikely, I add variety to the cooking recipes.

We generally love various dishes made from this meat. A lot of dishes can be prepared quickly and tasty from breast meat. Including minced meat. You can make it yourself by grinding it through a meat grinder. It does not take a lot of time. But, however, you can buy a ready-made product in the store. The main thing is to look at the expiration dates.

Today I have prepared for you several interesting recipes that I use myself, starting with the classic version and ending with more complicated methods with various additives.

To begin with, I want to give some tips to make your cutlets juicy and tasty:

  • The cutlets will be more tender if you beat the minced meat first. Take it with your hands and throw it to the bottom of the dish or on the table. Do this for 10 minutes. You can beat off several handfuls.
  • Do not add more than two eggs per 1 kg of ground meat.
  • For juiciness, put onions there. It can be put both raw and fried.
  • For the same purpose, add white bread softened in water or milk. Don't squeeze it too hard, just let some moisture remain in it.
  • When forming cutlets, you can place a small piece of butter in the middle.

Well, I've prepared you a little. Now let's start looking at the cooking methods themselves.

Step-by-step recipe for minced chicken cutlets in a frying pan

The simplest cooking option. It is considered a classic. In the evening, after work, you will spend very little time frying this meat dish.

Ingredients:

  • Minced chicken – 500 gr
  • White bread - 3 slices
  • Milk – 100 ml
  • Garlic - 2-3 cloves
  • Onion - 1 pc.
  • Egg - 1 pc.
  • Salt, pepper - to taste
  • Vegetable oil - for frying

Preparation:

1. Pour milk over white bread and mash it into a paste with your hands. Peel the onion and garlic and chop finely. Place all this in a dish with minced meat.

2. Break an egg into it. Salt and pepper to taste. If desired, add your favorite spices such as ginger and coriander. And mix with your hands to form a homogeneous meat mass.

3. Place the frying pan on the fire, pour vegetable oil into it and heat it up. Wetting your hands, form the cutlets and place them on it.

4. Fry until golden brown on one side. Then turn over and fry the other side. Then cover with a lid, turn down the heat, and simmer until done. Then simply remove and serve delicious tender cutlets with a side dish.

You can check readiness with a wooden stick or fork. Pierce the surface and look: if clear juice flows out, then they are ready.

Classic recipe for Pozharsky cutlets

So, the preparatory part is over. The minced meat has been sufficiently infused in the refrigerator. The crackers are ready. It's time to proceed to the next stage of preparing our cutlets:

1. Break the eggs into a dish and pour the milk into it. Mix everything until smooth. Then, wetting your hands each time, form the minced meat into blanks for future cutlets.

2. Pour vegetable oil into the frying pan and heat it up. First dip the meat pieces into the egg mixture and dip them thoroughly. Then dip in breadcrumbs and cover the cutlets with them.

3. Next, add to the pan. Fry them on each side until golden brown. This is about 2 minutes per side.

Recipe for delicious and juicy chicken cutlets with semolina and mayonnaise

With this option they turn out very juicy and tender. And the taste is simply amazing. Real jam. Don’t be afraid to add semolina, it won’t be felt at all, but it will add additional tenderness.

Ingredients:

  • Minced chicken – 1 kg
  • Onion - 2 pcs.
  • Sour cream (mayonnaise) - 1 tbsp.
  • Egg - 1 pc.
  • Semolina - 7-8 tbsp.
  • Salt, pepper - to taste
  • Vegetable oil - for frying

Preparation:

1. Finely chop the onion and add it to the meat. In any order, add salt, pepper, semolina and break the egg. Mix thoroughly until smooth.

2. Leave the finished mixture for 15-20 minutes. This is necessary so that the semolina swells well. Thanks to this they will become plump.

3. Next, heat the frying pan and pour oil into it. Form your patties and place in it. Fry over medium heat on one side first. When you see that they are golden, turn them over to the other side and fry in the same way.

4. Then serve with your favorite side dish. To be honest, it’s hard for me to fry them; at the same time I have to fight with my family. So they try to steal it from the dish and some of it doesn’t make it to the table. There’s just such an amazing aroma in the apartment during frying that it’s impossible to resist.

How to fry chicken Kiev cutlets from breaded minced chicken

A very interesting recipe for lazy chicken Kiev. Why lazy? Because in the original version they are made from well-beaten whole pieces of breast fillet. But cooked this way, you will like them no less. Very tasty and juicy.

Ingredients:

  • Minced chicken – 1 kg
  • Onion - 2 pcs.
  • Butter - 100 g
  • Egg - 6-8 pcs
  • Breadcrumbs - 200 gr
  • Salt, pepper - to taste
  • Curry - 1 tsp.
  • Dill - to taste
  • Vegetable oil

Preparation:

1. Add onion, salt and pepper chopped in a blender to the minced meat. In other matters, you can finely chop the onion with a knife or pass it through a meat grinder, as you prefer.

2. Cut the butter into small pieces and form into a small sausage. Place in the refrigerator for 30 minutes. Then roll in finely chopped dill.

3. Lubricate your hands with vegetable oil. Take some of the minced meat, form a flat cake and put the dill oil in the middle. Close the edges and form into a patty shape.

4. Add salt and pepper to the eggs, then beat until smooth. Mix bread crumbs with curry. Heat the frying pan. Now dip the formed cutlets in eggs, then roll well in breadcrumbs. Again, dip in eggs and roll in breadcrumbs. Place in a frying pan and fry until golden brown on both sides.

5. When they are fried until golden brown, transfer them to a baking sheet covered with foil and place in an oven preheated to 180 degrees.

7. Leave them to cook in the oven for 15-20 minutes. Then take it out and treat your family and friends to delicious, juicy chicken Kiev cutlets.

Holiday recipe

Chicken cutlets stuffed with breadcrumbs are suitable as a snack dish on a holiday table and will not leave anyone indifferent.

Ingredients

  • mushrooms (it is better to take champignons) – 200 g;
  • boneless chicken meat – 600 g;
  • hard cheese – 80 g;
  • onion – 1 head;
  • eggs – 2 pcs.;
  • breadcrumbs - 3 tbsp;
  • vegetable oil – 50 ml;
  • ground white pepper and salt - to taste.

Step-by-step preparation

  1. Rinse the champignons in water and cut into cubes. Finely chop the onion and sauté in 1/3 of the vegetable oil for 10 minutes.

  2. Cool and mix with grated cheese. This will be the filling.
  3. It is better to take chicken meat in a 1:1 ratio (white from the breast and red from the thighs), without skin. Pass 2 times through a fine grinder.
  4. Add 1 egg, ground white pepper and salt. Mix the minced meat and divide into 6 parts.
  5. Make a flat cake out of each with your hands dipped in cold water. Place the filling in the middle and form semi-finished products.

  6. Beat the second egg, drop the cutlets into it one at a time, and then roll in breadcrumbs.
  7. Place on a greased baking sheet and bake at 200 degrees for 25 minutes.

Tip: You can make the breading yourself. It is enough to fry the slices of bread in a frying pan without oil or dry them in the oven. Grind the crackers in a meat grinder or blender.

Place on a plate and garnish with sprigs of fresh parsley.

Even a novice housewife can make breaded chicken cutlets. If you follow all the recommendations, the finished products will turn out juicy. Those who do not like a golden brown crust can use a double boiler or cook the fried semi-finished products in gravy.

Prepared according to this recipe, they turn out incredibly tasty and tender. Actually, you can take not only minced beef, but also pork. Although you can mix three types together. It will be even better. Usually I take “homemade” and mix it with chicken.

Ingredients:

  • Minced beef – 500 gr
  • Minced chicken – 500 g
  • White bread without crusts – 250 g
  • Cream – 250 gr
  • Onion – 1 pc.
  • Spices and salt - to taste
  • Flour for breading – 2 tbsp. l.
  • Sunflower oil for frying

Preparation:

1. Place white bread in a dish and pour cream to soften.

2. Combine both types of minced meat and add chopped onion, salt and spices. Place soft bread there and mix it all thoroughly until smooth.

3. Heat a frying pan and add oil. Wet your hands in cold water and form into patties. Dip them in flour and place in a frying pan.

4. Fry one side until golden brown and turn over. Then reduce the heat and cover with a lid. Fry until done.

5. If desired, you can put it out. Pour 100 ml of water into it and keep it covered for 15-20 minutes. After which they can be served.

Multicooker option

This dish can be included in the menu for children or people watching their figure. You will need a special grill included with the multicooker.

Step-by-step preparation

  1. Cut the film off the chicken breast, rinse it under the tap and let all the water drain, placing it in a colander. Remove any remaining liquid by blotting the piece with napkins.
  2. Cut the meat and grind in a blender along with the peeled onion. Adjust the consistency of the minced meat as desired. You can leave small pieces or achieve uniformity.

  3. Break the egg into the resulting mass, add salt and spices. Mix thoroughly. Leave for 15 minutes.
  4. Divide into 6 identical patties at the rate of 2 patties per serving. Form semi-finished products and roll in prepared breadcrumbs.
  5. Grease the steaming stand a little with vegetable oil and lay out the products. Pour 1 liter of water into the multicooker bowl and let it boil in the “Steam” mode.

  6. Place a basket with cutlets. It will take 10-15 minutes to prepare the dish.

Tip: if the minced meat turns out liquid, add 2 tbsp. rolled oats and put the cup in the refrigerator for half an hour.

You can serve it on the table as a separate dish or put fresh vegetables on a plate. Kids love to eat it with mashed potatoes.

Cooking juicy bird's milk cutlets with cheese

But these cutlets are the most favorite in my family. The filling they contain makes the taste simply unique; it melts in your mouth. And the dish itself turns out very juicy. I like to serve them with mashed potatoes and herbs. Be sure to try it.

Ingredients:

  • Minced chicken – 600 gr
  • Salt, ground pepper - to taste
  • Onions - 1 pc.
  • Breadcrumbs - 2 tablespoons
  • Egg - 1 pc.
  • Garlic - 1 clove

Filling:

  • Boiled eggs - 2 pcs
  • Dill, parsley and onion - a bunch
  • Hard cheese - 100 gr
  • Butter - 50 g

For breading:

  • Egg - 2 pcs
  • Milk - 2 teaspoons
  • Flour - 3 tablespoons
  • Breadcrumbs

Preparation:

1. Add salt, seasonings, raw egg, finely chopped onion and garlic and breadcrumbs to the meat mixture. Mix everything until smooth.

2. Now let's make the filling. Grate the boiled eggs and cheese on a fine grater. Finely chop the greens. Cut the butter into small pieces and add to the rest of the ingredients. Mix everything well. The filling should have the consistency of plasticine. Taste and add salt if necessary.

Remove the butter from the refrigerator in advance so that it melts and softens.

3. Form small cutlets from the filling and place in the freezer for 15-20 minutes.

4. Break the eggs into a separate bowl, add a little salt and milk, and beat until smooth. Divide the flour and breadcrumbs into different dishes.

5. Wet your hands. Take some minced meat and form a flat cake. Place the filling in the middle and wrap it up. Level and shape into a cutlet.

6. Roll it thoroughly in flour. Then roll in egg. Then roll it thoroughly in breadcrumbs. Do this with all the minced meat.

7. Heat a frying pan, pour oil into it and place the cutlets. Fry on both sides over medium heat until golden brown. Then transfer to a baking sheet and cook in an oven preheated to 180 degrees for about 15-20 minutes.

You can also bring it to readiness in a frying pan. Make a small fire and, turning several times, fry under the lid.
