  • Onions – 200 gr.
  • Mushrooms – 100 gr.
  • Bell pepper – 400 gr.
  • Tomatoes in their own juice – 100 gr.
  • Garlic – 2 cloves
  • Chili pepper – 1 pc. (taste)
  • Cilantro – 1 bunch
  • Salt and black pepper - to taste
  • Dried garlic – ½ teaspoon
  • Ground cumin – ½ teaspoon
  • Cumin seeds – 1 teaspoon
  • Coriander seeds – 1 teaspoon
  • Dried chili peppers – 3 pcs. (or to taste)

Cooking method in stages:

Fry garlic, onions and mushrooms in a frying pan.

Add bell peppers and tomatoes in their own juice and continue frying.

Then add spices: dried garlic, ground cumin, cumin and coriander seeds, dried chili peppers, salt, black pepper. Mix everything well and simmer the dish for another 3-5 minutes over low heat.

Add beans and stir.

Add finely chopped fresh chili pepper and mix well again.

Then add chopped cilantro, mix and the dish is ready. Bon appetit!

Rice pudding with apples

To prepare the pudding you will need:

  • 3 tbsp. spoons of short grain rice;
  • 1 glass of milk;
  • 1 egg;
  • 1 teaspoon butter;
  • 1 large apple;
  • breadcrumbs for sprinkling.

Rice needs to be boiled in water, add milk to it and cook for another 10 minutes. When ready, add a pinch of salt and a teaspoon of sugar. The end result should be a sticky rice porridge with milk.

Separate the egg yolk from the white and rub with sugar, finely chop or grate the apple, then add everything to the porridge. Put butter there too. To stir thoroughly. Beat the whites until thick foam and pour into the mixture. Mix again.

The baking dish must be greased with butter and sprinkled with breadcrumbs. After this, transfer the rice-apple mixture into it and place in the oven for 20 minutes at 180 degrees. Bake until golden brown. Before eating, the pudding needs to cool slightly so that it is warm.

The recipe will help out when you don’t have any time to stand at the stove, and you need to prepare a hearty dish in the shortest possible time.

Ingredients:

  • Cottage cheese – 250 g.
  • Eggs – 1 pc.
  • Flour – 3 tbsp.
  • Ghee butter – 1 tbsp.
  • Sugar – 2 tsp.
  • Salt.

Preparation:

  1. Mix ghee, raw egg, granulated sugar and salt. Add grated cottage cheese, knead the mass well. Sprinkle with a little wheat flour. Sprinkle the work surface with flour and roll into “sausages”. Add enough flour so that your hands do not stick to the dough.
  2. Cut the finished “sausage” diagonally, put it in boiling water, wait for the lazy cottage cheese dumplings to float. Remove with a slotted spoon and serve with sour cream or honey.

Egg rolls with red fish

Rolls are most often prepared for the holiday table, but this recipe is very easy to make, so it can be included in your regular diet.

You will need:

  • 4 eggs;
  • 50 g parmesan;
  • 100 g curd cheese;
  • 200 g lightly salted salmon;
  • 40 g flour;
  • 10 g each of fresh parsley and dill;
  • salt and pepper as desired.

Preparation steps:

  1. Beat the eggs with a whisk in a deep plate.
  2. Chop greens, grate cheese, add to eggs. Salt and pepper. You don’t need to add a lot of it, since the recipe uses salted fish.
  3. The baking sheet is covered with parchment paper.
  4. Spread the prepared mixture on top.
  5. Heat the oven to 200 °C and place a baking sheet in it for 10 minutes.
  6. The resulting egg cake is cooled at room temperature and removed from the baking paper.
  7. The base is coated with curd cheese.
  8. The fish is cut into pieces and placed on top.
  9. Immediately, while still hot, carefully roll the workpiece using cling film and put it in the refrigerator for 2 hours (preferably overnight).

Ingredients:

  • Cottage cheese 9% – 500 g.
  • Strawberries – 400-500 g.
  • Butter – 50 g.
  • Eggs – 3 pcs.
  • Semolina – 1/2 cup.
  • Sugar – 1/2 cup.
  • Salt – 1 pinch.

For sprinkling:

  • Bread crumbs – 1 cup.
  • Butter – 2 tbsp.
  • Sugar – 1 tbsp.
  • Cinnamon/vanilla.
  • Flour.

Preparation:

  1. Beat the eggs with the sugar until the sugar is completely dissolved and a creamy mixture is formed. Rub the cottage cheese through a strainer, preferably several times, so that it is homogeneous and airy. Pour semolina into the cottage cheese, then melted butter, salt, then beaten eggs, mix, put in the refrigerator for about sixty minutes.
  2. At first the dough will be viscous and not stiff, but when the semolina swells (in the refrigerator), the dough will get stronger. If you have any doubts, you can add a little semolina or flour - you shouldn’t get carried away, as the dough will not be tender and the dumplings will turn out hard.
  3. Prepare the topping: grate the loaf or grind in a food processor. Melt the butter in a frying pan and fry the crumbs with sugar until golden brown. You can sprinkle the finished crumbs with vanilla, cinnamon, orange or lemon zest, and cardamom.
  4. Wash strawberries (plums, apricots, etc.), remove stems, twigs, leaves (seeds). Boil salted water in a wide saucepan.
  5. To make dumplings, flour the board and hands. Take a piece of dough the size of a large walnut, flatten it into a flat cake, and carefully wrap the berry. Roll to form a ball. Place cottage cheese dumplings with strawberries in water, cook for three minutes, after it floats to the surface. Remove with a slotted spoon and roll in breadcrumbs.

But it happens that the child doesn’t like all the pancakes... you try for them, “hang around” at the stove to please them... they sit, gobble it up on both cheeks (you look at them and you’re happy!!!) and they say to you: “Mom.” , and bake us such pancakes as in kindergarten...” (yeah, the mood didn’t drop much right away... you understand that the child in the kindergarten likes pancakes more). And in order to “fulfill the child’s request, I had to visit the kindergarten’s catering department (I really didn’t dare for a long time, but... I went). But now “my treasures”, when eating these pancakes, they say with their mouths full: “Yummy, just like in kindergarten!!!”... Now I want to share recipes with you, and there are 2 of them...

Prohibited products

Dishes prepared for a child's dinner should complement the food received during the day at home or in kindergarten. But you can’t feed a 3-year-old baby all kinds of food in the evening. Some foods eaten in the evening may be difficult to digest. Others cause increased gas formation, while others increase the activity of the nervous system, which will disrupt the baby’s sleep.

In order not to harm the child’s health, you should not give him before bedtime:

  • fatty foods;
  • fried foods;
  • pickles;
  • semi-finished meat products;
  • fast food;
  • sweets;
  • chocolate;
  • dishes with spicy seasonings;
  • pearl barley and millet porridge (they are difficult to digest);
  • ice cream;
  • carbonated drinks;
  • baking;
  • strong tea.

As a drink, it is better to give yogurt, jelly, kefir, compote or herbal tea.

Omelette with filling

Do you want something unusual and tasty after a hard day at work, but have absolutely no energy for kitchen chores? No problem, we'll still cook a quick dinner. We'll put together the recipe from what we have on hand.

Beat 2 eggs with a fork and add a little cold water. Place a greased frying pan to heat up. Pour in the egg mixture, reduce the flame, and cover with a lid. While the omelette is frying, prepare the filling: grate a piece of cheese, chop bacon or boiled chicken (in general, anything that is in the meat refrigerator will do). A spoonful of green peas, olives, pickled cucumber or a couple of pickled mushrooms will come in handy. Of the entire list, only cheese is mandatory. We cut all products. Transfer the omelette to a plate, quickly unload the filling onto one half, sprinkle with grated cheese and cover with the other half. All that’s left is to decorate with herbs and our quick dinner is ready. The recipe is very simple, and it took about 15 minutes.

Lentil porridge with vegetables and rice in a slow cooker

Lentils are a cereal that contains so much protein and vegetable fats that its nutritional properties can replace meat. Porridge with lentils and vegetables gives children all the necessary minerals and vitamins in one dish. And to prepare it, you will need:

  • 1 cup lentil cereal;
  • 1 cup Hawaiian mixture (rice, bell pepper pieces, green peas, carrots);
  • vegetable oil;
  • salt to taste.

If there is no Hawaiian mixture, then the vegetables will need to be prepared in advance: thoroughly washed and chopped. Lentils should also be rinsed in cold water before cooking.

Pour both cereals and vegetables into the multicooker bowl, add salt, you can sprinkle with black pepper, but just a little, just for the smell. Pour water over the ingredients so that it is about two fingers higher than the cereal.

After this, you need to turn on the multicooker, select the “porridge” mode and wait until the program finishes cooking. When the porridge is cooked, mix it thoroughly and add 1 tbsp. a spoonful of milk thistle, cedar or macadamia oil. When the porridge has cooled slightly, you can crumble the dill into it.

This dish is prepared quickly, requires almost no effort, and if you need a quick dinner, lentils are an excellent option. Just remember that this porridge should not be given to your child more than twice a week.

Casseroles

You can decide what to cook for your children for dinner by choosing the appropriate recipe for a tasty and satisfying casserole. This healthy dish can be meat, dairy, flour or vegetable.

Zucchini Casserole

Zucchini is very “convenient” for cooking: it goes well with many foods, has no calories, but is also rich in nutrients.

Required:

  • 1 large or 2-3 small zucchini;
  • 1 cup dry short grain rice;
  • 200 g cheese;
  • 150 ml yogurt without additives;
  • 150 ml sour cream;
  • 2 eggs;
  • ½ tsp. baking powder;
  • ½ tbsp. white bread crumbs;
  • ½ tbsp. chopped green onions (optional);
  • a pinch of dried basil, oregano, thyme, marjoram and rosemary;
  • salt.

Preparation:

  1. Preheat the oven to 200 degrees. Grease a baking dish with oil.
  2. Boil the rice.
  3. Grate the cheese on a fine grater.
  4. If the zucchini fruit is not young, you should cut off the skin and remove the seeds. Young vegetables can be used whole. Grate the zucchini on a coarse grater, lightly add salt and place in a colander to drain excess liquid.
  5. Mix the squeezed zucchini in a bowl with sour cream, yogurt, add baking powder, eggs and mix well. Combine the resulting mass with boiled rice, add 100 g of cheese, salt, green onions and seasonings.
  6. Transfer the mixture into the mold and spread in an even layer.
  7. Mix the remaining grated cheese and bread crumbs, mix well and spread the resulting mixture over the surface of the squash-rice mixture.
  8. Bake until done (about 30-35 minutes).

Mac and Cheese Casserole

The familiar and very popular macaroni and cheese among children can be even tastier: this dish can also be baked.

To prepare this original casserole you will need:

  • 3 tbsp. milk;
  • 2.5 tbsp. l. flour;
  • 250 g hard cheese;
  • 150 g mozzarella (or Adyghe cheese);
  • 200 g pasta;
  • salt;
  • nutmeg;
  • ground black pepper.

Cooking steps:

  1. Boil pasta according to instructions and drain in a colander.
  2. Preheat the oven to 180 degrees.
  3. Grate both types of cheese.
  4. Pour flour into a heated frying pan and, stirring continuously, pour 1 tbsp into the flour. milk. Stir well until smooth, then pour in the remaining milk. Salt, pepper and sprinkle the milk-flour mixture with freshly grated nutmeg, then reduce the heat and, continuing to stir, evaporate the sauce for 10-12 minutes.
  5. Add the grated cheese to the sauce, reserving ½ tbsp. grated hard cheese, mix. Add pasta.
  6. Line a muffin tin with paper cups and fill them with the macaroni and cheese mixture. Sprinkle the remaining cheese over the pasta.
  7. Bake until golden brown for 12-15 minutes.

Fish casserole with cottage cheese

Ingredients: 500 gr. lean boneless fish fillet (hake, tilapia, pollock), 2 eggs, 30 gr. cottage cheese, salt to taste.

Place the cottage cheese in a cup and mash with a fork until smooth, and cook the fish fillet in lightly salted water until tender. While the fish is cooking, add eggs and salt to the cottage cheese, mix thoroughly, or even beat with a blender.

When the fillet is cooked, the water must be drained and the fish itself must be mashed with a fork until it resembles a paste. Then place in a greased form and fill with a mixture of cottage cheese and eggs.

Place the pan in the oven and bake the dish until golden brown. When ready, remove from the pan, cool slightly and eat. Although fish casserole is good cold.

A quick and delicious vegetable dinner

Vegetable stew is quick, tasty, and healthy.

You will need:

  • quarter head of cabbage
  • 1 small eggplant
  • 1 onion
  • 100 g suluguni
  • seasonings

Cut the peeled eggplant and soak in cold salted water for 10-15 minutes to remove the bitterness. Fry the onion in a frying pan, add finely chopped cabbage, then eggplant. Simmer over low heat for about 20 minutes. 5 minutes before readiness, add chopped suluguni. The stew can be served as a side dish or as a main course.

You can prepare another option.

Vegetable stew with mushrooms and tofu cheese

You will need:

  • 120 g tofu
  • small carrot
  • bulb
  • 2-3 champignons
  • parsley

Chop the ingredients, simmer in olive oil mixed with soy sauce (1 tsp each)

As an option for a vegetable dinner, you can steam carrot or cabbage cutlets.

Cabbage cutlets (4 servings)

Products:

  • 0.5 kg cauliflower or white cabbage
  • 1 egg
  • 2 tbsp. decoys
  • breadcrumbs

Finely chop the cabbage, add salt, simmer in a frying pan, adding the required amount of water. Add semolina to the finished cabbage, mix thoroughly, and cool. Add the egg to the cooled mixture and stir. Form small cutlets from the prepared minced cabbage and roll in breadcrumbs. Cook in a steamer for 15 minutes.

Milk soup with buckwheat

Milk soup is not only an easy and very quick to prepare dish, but also a rich source of iodine, iron and calcium, which a child’s body needs for growth. And to prepare it you will need:

  • half a liter of milk;
  • 2 tbsp. spoons of buckwheat;
  • 1 tbsp. spoon of butter;
  • salt to taste.

For cooking you will need two pans. In one, you need to boil buckwheat in water, and in the other, boil and lightly add salt to the milk. Pour boiled milk into the buckwheat, mix thoroughly, and let simmer for about 5 minutes.

After this, you need to add butter, and to add color, if you wish, you can chop carrots or add corn into the soup. If the child is still very small and does not know how to chew properly, the soup can be whipped in a blender.
