Dear comrades! Continuing the topic of healthy eating, I decided to inform you in this letter that, following many useless products (read about it here), I excluded white bread from my diet, since I consider it to be an “empty” product that does not bring any benefit to the body. In fact, I eliminated bread almost completely and replaced it with breadcrumbs. I try to dry crackers from homemade whole grain bread or buy Cretan barley without salt and sugar (my favorite).

To understand the difference between these two types of flour, you need to turn to biology. The grain structure is represented by several components:

  • the middle, consisting mainly of starch;
  • fruit and seed coats covering the outside of the grain;
  • germ of the grain.

The shells contain mineral and nitrogenous substances, fiber, and proteins. The germ contains proteins, minerals, and oils. The highest grade of white flour consists of centers, as it has been cleared of all shells. This gives white flour its caloric content since starch is a carbohydrate. The product has softness, a pleasant white-cream color, and excellent baking characteristics. But all useful substances have been removed from it, which makes it a useless product for the body.

Wholemeal flour retains all the components of the grain, becoming a source of energy for the body. It not only nourishes the body, but also supplies it with the fiber necessary for its cleansing. But in terms of baking quality, high-grade flour is superior to whole grain flour. Coarse flour does not rise so well and has a grayish tint. It is more suitable for baking bread, flatbreads and pancakes. It is recommended to bake more complex dishes with the addition of white flour.

First you need to heat the water in the pan to 40 degrees. It should be warm enough to dissolve the honey added to it.

All ingredients are added according to the instructions for the bread maker. The main program, the size of the prepared bread, and the shade of the crust are selected.

After 7 minutes, you can look in and see the consistency of the forming dough. Excessively liquid dough requires adding flour. Crumbly, disintegrating dough must be diluted with water.

Once the dough has reached normal thickness, you can close the lid and wait for the program to complete. After this, the bread is carefully taken out and cooled. You can eat.

Differences in preparing dough with sourdough and yeast

Bread has always remained the main food product for Russian residents. And it was usually yeast-free. Thanks to the leaven, it was always sour. She made the bread soft, fluffy and porous. The leaven made the dough move, and at this time the future bread became more and more healthy, richer in vitamins, minerals and valuable.

Yeast-free bread in a bread machine turns out especially tasty and aromatic. Yeast cannot compare with it in many characteristics:

  • sourdough bread is easier to digest;
  • becomes stale, not moldy;
  • promotes digestion;

But what is sourdough? In fact, this is the same yeast, which is based on lactic acid bacteria. Both sourdough and yeast work on the same principle. And the goal is the same - to rise the dough so that it is ready for baking. Only the scheme of action is different. With yeast, the dough will rise in a couple of hours. The starter will need a couple of days. Sourdough bread in a bread machine will take longer to bake than yeast bread. But it will also be stored longer.

Rye bread from whole grain flour in a bread machine

Rye flour even surpasses wheat flour in terms of the range of nutrients. In addition to fiber, it contains many vitamins and microelements. Components used:

  • whole grain rye and wheat flour – 250 g each;
  • milk – 380 g;
  • sugar – 1.5 tbsp. l.;
  • salt – 1.5 tbsp. l.;
  • vegetable oil – 1 tbsp. l.;
  • dry yeast – 2 tsp;
  • cilantro seeds, cumin - 1 tsp each.

Cooking time is approximately 30 minutes. Calorie content – ​​about 237 kcal.

Preparation begins by sprinkling the bottom of the bread machine with yeast, over which both types of flour are sifted. Then all other ingredients are added, milk is added last. After setting the program and executing it, the bread is ready.

Homemade whole grain bread - sourdough recipe in the oven

This product contains 80% whole grain wheat flour and only 20% premium white flour. The baked goods will turn out not only healthy, but also quite delicate in taste, compared to products made from rye product. Plus, bread is rich in iron, fiber and other beneficial substances.

Ingredients:

  • 30 g wheat starter;
  • 100 g of premium wheat flour;
  • 400 g whole grain wheat flour;
  • 200 g wheat sourdough;
  • 320 ml water;
  • 10 g salt.

Step by step recipe:

1. Combine wheat starter, premium flour and 100 ml of water and mix. This dough should “ripen” for 8 hours.

2. After the specified period, place the dough in a bowl, pour 220 ml of water into it, and add salt.

3. Add whole grain flour to a bowl and knead the dough until it has an elastic consistency.

4. Form the dough into a ball, place it in a bowl greased with vegetable oil, cover with a damp towel and leave it to proof for 3 - 4 hours.

5. After the specified time, the dough will rise. Place it on a floured board and form into the desired shape.

6. Leave the dough for a second proofing for 1.5 hours.

Yeast-free whole grain bread in a bread machine

Unleavened dough brings more benefits to the body than yeast dough. Previously, it was necessary to wait 15 to 24 hours to allow the unleavened dough to rise. A bread maker greatly simplifies the process, saving time required for kneading and baking.

Required ingredients:

  • rye flour – 300 g;
  • wheat flour – 100 g;
  • salt – 1 tsp;
  • sugar – 2 tbsp. l.;
  • oil (olive or sunflower) – 2 tbsp. l.;
  • water.

Cooking time is about 40 minutes. Calorie content – ​​about 177 kcal.

Mix rye and wheat flour in a container, add sugar, salt and mix well. To get the ingredients perfectly mixed, you can use the dumplings kneading mode. In 15–20 minutes the mixture will be ready. Pour water and oil into the resulting mixture and mix again. The mixture should be homogeneous. The yeast-free dough is placed in a warm place to rise for about a day. The risen dough is baked for about 50 minutes on the “baking” mode. Once the bread is cooked, it should be cooled, since only warm whole grain bread without yeast has the most beneficial properties.

Salt and sugar are important components of proper bread

Now I’ll make a small digression and tell you what the experiment was . As you can see in one of the pictures above, I have salt and yeast in the container in the corners. This is because I don't have sugar. I replaced it with the same amount of honey, which I put directly after the sunflower oil. As a result, everything worked out. The experiment was a success. But I want to warn you that you cannot completely eliminate sugar or honey. I tried to do this last time, although I knew that without sugar the yeast would not activate well. As a result, I got a dense and moist bread with a sticky texture, quite edible in principle, but not very pleasant when chewed. Although it was just right for the crackers. I also don’t recommend eliminating salt completely, since in addition to taste, it also affects the texture of the bread. Therefore, you should always add at least half a spoonful of salt.

  • 0.2 kg of premium wheat flour;
  • 50 g sunflower seeds;
  • 0.15 l of water;
  • 0.15 l milk;
  • 1 tbsp. Sahara;
  • 1 tsp salt;
  • 7 g dry instant yeast;
  • 2 tbsp. vegetable oil;
  • 1 tsp honey

How to do:

1. Place all the whole wheat flour and half the all-purpose flour into a bowl. Add sugar, yeast, salt, and seeds. Mix everything.

2. Dissolve honey in milk. Pour the milk mixture into the flour and knead the dough until smooth.

3. Pour oil into the dough and mix again. Add the remaining premium flour and mix again.

4. Form the dough into a ball and place it in a bowl greased with vegetable oil. Cover it with a damp towel and leave it to proof for an hour.

5. After the specified time, the dough will rise. Place it on a floured board, knead it again and form into a flattened ball.

6. Transfer the workpiece into a greased multicooker bowl and set it to “Warm” or “regular” Heat mode. Prove the dough for another 20 minutes.

7. Then set the “Baking” mode and cook for 30 minutes.

8. After this, remove the product from the bowl, turn it over to the other side and cook again in the same mode for another half hour.

9. After finishing the mode, keep the finished bread in the slow cooker for 10 minutes with the lid open.

10. Then remove the bread and cool it under a towel.
