- Next, you need to load the remaining ingredients into the container. It is recommended to pour the yeast last so that it ends up on top of the entire mass.
- Now you need to turn on the “French bread” mode on the unit display, select the desired crust color and weight 1 kg.
- During operation of the machine, you need to monitor the batch being produced. It may be necessary to add flour or drinking water. The resulting bun should be well formed, but not dry.
- When the bread base meets the specified requirements, you need to allow the device to operate independently, for which you should keep the unit closed until the end of the specified program.
After the sound signal indicates the completion of the process, you should wait a few minutes, then open the device, remove the bread from the container, and wrap the hot product in a clean towel.
What can I add?

This component of the recipe is a 100% natural product, which is a rather thick and viscous liquid with a sweet and sour taste.

- drinking water (warm) - 140 ml;
- concentrated kvass wort - 20 ml;

- wheat and rye flour - 35 and 120 g, respectively;
- granulated sugar - 3 tbsp. l.;
- wine vinegar - 13 ml;
- ground coriander - ½ tsp.

- The first step is to place the quick yeast and 1 tbsp in a bowl. l. white sugar, pour 40 ml of warm water over the products, mix the mixture well, then pour it into the machine’s bucket.
- Now you need to pour the pre-sifted wheat flour into the container.
- After this, you need to select the “Quick bread” mode (first knead) on the device. After 7 min. You should turn off the bread machine and leave the unit for 50 minutes. in a closed form so that the dough has time to “ripen” and increase in volume.
- In the meantime, the liquid component of the product needs to be prepared. To do this, you need to pour 100 ml of warm drinking water into a separate bowl, add the wort, the remaining sugar and vinegar to it.
- The resulting mass must be thoroughly mixed until the sweet component is completely dissolved, then pour the liquid mixture into a container with the risen dough, while simultaneously adding ½ of the sifted rye flour.
- Next, you need to turn on the “Dough” program on the device, continue to add the remaining bulk product, doing this already in the process of kneading the entire mass.
- After a flour ball has formed on the blade of the unit, you need to continue operating the device in the same mode.
- The dough will proof for 1.5 hours.
- All that remains is to turn on the “Baking” program on the device, after 20 minutes. Continue operating the device until the end of the technological cycle.
Ideally, Borodino bread should rest for 15–16 hours. To prevent the product from becoming stale, it is recommended to store it in a porcelain container with a lid. The appearance of mold will be prevented by pouring coarse salt on the bottom of the dish.

Its disadvantages:

I advise you to immediately buy a kitchen scale (I got one from Lenta) in order to measure the flour more accurately. If you want to treat yourself to whole grain rye bread, then scour the Internet and order panifarin (gluten), dry sourdough and other interesting additives. That's exactly what I did. Since I’m not a fan of putting out dough, I think that bread makers are bought by those who save their time and love convenience. - Lastly, both types of sifted flour should be added to the placed products.
- Next, you need to turn on the “Russian Chef” program on the device. After the first batch, you will have to carefully monitor the process. If the dough turns out liquid, you need to add a little wheat flour.
Cumin can be used in a slightly different way by sprinkling the spice seeds onto the risen dough.
Cooking cupcake

- wheat and rye flour - 300 and 250 g;
- kvass wort - 4 tbsp. l.;

- First, you need to pour the kvass wort into a separate bowl, then you should brew the product with 70 ml of boiling water, then you need to mix the composition well and give it the necessary time to cool.

To prepare bread in the MOULINEX oven, take and place the ingredients in exactly the following order:
- First, 5 tablespoons of dry malt.
- Then ground coriander 2.5 teaspoons, granulated yeast 1.5 teaspoons.
- Pour 420 ml of water on top.
- Add 100 grams of rye flour, 400 grams of baking flour (wheat), and 1.5 teaspoons of finely ground salt into the water.
- Pour in 2 tablespoons of oil, apple cider vinegar and natural honey.
Choose the “Borodinsky Bread” program, so baking lasts about two and a half hours. After kneading, do not forget to add coriander seeds on top. If after baking you notice that the top of the bread has sagged, next time add a little more flour or a little less yeast.

This version of the resulting bread can only be called “Borodinsky” only approximately, but the taste and aroma of the product are as good as its original counterpart.
