There are several recipes. All of them differ in the composition of ingredients and base. Ingredients may include: sausage, cheese, tomatoes. The base may also vary. Namely: kefir, milk, water, sour cream, egg. Flour is added as desired.

Kefir dough

If, when preparing pancakes, you don’t want to bother with slaking soda with vinegar to increase the fluffiness of the dough, and even more so, adding industrial baking powder to it, fermented milk products will come to the rescue. Pancakes with sausage and cheese filling on kefir will be the most tender, delighting the whole family with their appearance and aroma.

Ingredients:

  • flour – 450 gr.;
  • kefir – 200 ml;
  • sausage – 100 gr.;
  • cheese – 60 gr.;
  • soda – ½ tsp;
  • salt – ½ tsp;
  • sugar - a pinch.

Kefir is “enriched” with soda, then it needs to be allowed to stand and the filling is poured in - finely chopped cheese and sausage. Next, flour and sugar are added and the dough is kneaded. You need to let it sit for 5-10 minutes, and then you can carefully spoon it into flat cakes onto the frying pan. Frying - over medium heat for 3-4 minutes, turning over.

Secret! Sugar and salt are included in the mandatory list of seasonings that must be added to pancake dough. It is important to remember that they are poured with constant stirring for optimal dissolution, or even better - into heated milk or kefir.

Pancakes with sausage and cheese, cooked in milk

Milk pancakes are certainly a delicious dish, but what makes it truly unforgettable is the addition of sausage and cheese. This combination will allow you to prepare a delicacy that is nourishing, juicy and incredibly appetizing.

Ingredients:

  • fresh milk – 150 ml;
  • flour – 120 gr.;
  • salami – 100 gr.;
  • cheese – 100 gr.;
  • egg – 1 pc.;
  • fennel – ½ tsp;
  • seasonings - to taste.

Beat the eggs with a whisk (you can also use a mixer), gradually pouring in the milk and adding the flour. Next, finely chopped salami and cheese are added to the mixture, fennel is poured in, after which it is mixed well. Place a tablespoon of the finished dough onto a heated frying pan and fry until caramelized on both sides over medium heat. Pancakes with raw sausage additives and sour milk will be no less tasty.

With sour milk

This option will allow you to use a sour product - up to 0.7 liters are needed. You will also need:

• 600 grams of wheat flour; • 2 medium eggs; • boiled smoked sausage – 300 g; • soda and salt – a teaspoon each; • sugar – 1 tablespoon; • hard cheese – 150 g.

The eggs are washed white with salt and sugar, about half the milk and all the flour are added to them. You will get a fairly thick dough, which is brought to the required consistency with the remaining liquid. This method is good because you don’t have to fight with lumps.

Coarsely grated cheese and sausage cubes are added to the prepared mass. Transfer the dough with a spoon to a hot frying pan with vegetable oil and fry until medium golden.

Yeast pancakes

Yeast pancakes remain soft, fluffy and airy for a long time, provided that they are not eaten immediately after cooking. Such delicacies go perfectly with any “fillings”, but are especially good with a hearty sausage and cheese addition.

Ingredients:

  • flour – 350 gr.;
  • egg – 1 pc.;
  • yeast (pressed) – 1 tsp;
  • sour cream – 2 tbsp. l.;
  • sugar – 1 tbsp. l.;
  • sausage – 50 gr.;
  • butter (butter) – 20 gr.;
  • cheese – 60 gr.;
  • water – 100 ml.

The yeast should be soaked in water, stirred, and left to infuse for 10 minutes at room temperature. Next, add flour and knead a dough similar in consistency to sour cream, then beat in the egg, add sugar and pour in sour cream. After mixing thoroughly, add the butter and put the dough in a warm place for 1-2 hours – “rising”.

You can add finely chopped cheese and sausage to the finished mass, then scoop it up with a spoon and place it in heated oil to fry on both sides, lightly pressing each pancake with a spatula after turning it over.

Pancakes with yogurt or kefir

The delicious version of pancakes described here is distinguished by its tenderness, fluffiness and simplicity. You don't need to quench baking soda with vinegar, whose presence in a dish often leads to heartburn. Natural kefir or yogurt will act as an acidity regulator.

Prepare the following ingredients:

• flour – 0.45 kg; • kefir – a glass; • hard cheese – 100 g; • smoked sausage – 150 g; • salt, sugar and soda – half a teaspoon each.

The entire volume of kefir is poured into a bowl, soda is added to it. When bubbles appear, add:

• sausage cut into small cubes and grated cheese; • flour and granulated sugar.

Knead the dough to the consistency of thick sour cream and leave to rise for 10 minutes. Next, heat a frying pan on the stove and pour oil into it. When it starts to crackle, reduce the flame to medium and start adding a tablespoon of the mixture.

Pancakes are fried for 2 minutes on each side. They are served hot, with sour cream or ketchup.

Yeast-free pancakes with sausage

Yeast pancakes have only one drawback - they take a long time to prepare, since the dough will have to sit well and rise before cooking. For those who are in a hurry to feed their family with delicious food, the following original yeast-free recipe is better suited.

Ingredients:

  • flour – 50-100 gr.;
  • eggs – 5 pcs.;
  • sausage (hunting sausages) - 200 gr.;
  • cheese (hard varieties) – 200 gr.;
  • mayonnaise – 2 tbsp. l.;
  • salt, spices, herbs - to taste.

Chop the sausage into small pieces, grate the cheese finely, and chop the herbs. In a separate container you need to beat the eggs, then add sausage with cheese, herbs and spices. After stirring with a fork, you should get a liquid dough that can be thickened with flour.

This mass should be scooped up with a tablespoon, and then placed in the form of a flat cake in a preheated frying pan over low heat. The pancakes should fry for 2-3 minutes on each side until they acquire an appetizing brownish crust.

With mayonnaise and herbs

You won’t have to fuss with these pancakes for as long as with yeast pancakes - this recipe does not contain any baking powder at all.

Ingredients:

• 5 eggs; • approximately 100 grams of flour; • sausage (preferably hard smoked) – 200 g; • “Dutch” type cheese – 200 g; • full-fat mayonnaise – 50 g; • fresh dill – 4-5 sprigs; • add salt and spices to your taste.

The sausage must be chopped very finely. Next, grate the cheese and chop the herbs.

Beat the eggs with a blender, but only until smooth. They are combined with other products. Flour is added last and only to thicken the mass a little.

Place the frying pan on low heat, pour in the oil, heat it and start frying the pancakes. Leave for about 3 minutes on one side.

Spicy pancakes: cheese, sausage and tomatoes

Pancakes with tomatoes are not the most common way to prepare this dish. But it deserves to be tried, because crispy pancakes with sausage, cheese and tomato pieces are very unusual and spicy.

  • flour – 400 gr.;
  • kefir – 500 ml;
  • eggs – 4 pcs.;
  • sausage (ham) – 200 gr.;
  • tomatoes – 2 pcs.;
  • sugar – 2 tbsp. l.;
  • salt – 1 tsp;
  • greenery.

Ham and tomatoes are cut into identical small cubes, the greens are chopped. Prepare the dough: sifted flour is mixed with beaten egg, kefir, sugar and salt, then mixed until smooth and free of lumps. Next, you need to add greens, cubes of ham and tomatoes to the mass, mix everything thoroughly and begin to place the dough cakes on a heated frying pan. The pancakes are fried on both sides until they become appetizingly golden brown.

Secret! Greens in pancakes with a sausage and cheese component will add notes of subtle taste and aroma to the finished dish. It is best to choose parsley, green onions, dill, and cilantro.

Recipe with garlic

The aroma of garlic goes perfectly with sausages and cheese. Thus, by adding literally 1-2 cloves to pancakes, we will get a completely new dish. It is, of course, better to serve it for dinner.

Required Products:

• 150 grams of boiled sausage; • 150 g hard cheese; • 0.6 kg of flour; • a bag of dry yeast; • garlic – 5 cloves; • water – one and a half glasses; • salt and sugar – a teaspoon each.

Chop the garlic in any convenient way, pour in a quarter glass of hot water. Cut the sausage into small cubes or lightly freeze in the freezer and grate coarsely. Do the same with cheese.

Using flour, water, salt, yeast and sugar, knead the dough a little thinner than for regular pies. Add the rest of the ingredients and let it rise for 2 hours.

  • sausage – 100 gr.;
  • cheese – 100 gr.;
  • flour – 600 gr.;
  • yeast (dry) – 11 g;
  • garlic – 4-5 cloves;
  • water – 350 ml;
  • salt – 20 gr.;
  • sugar – 20 gr.

First, make the dough: mix yeast, sugar and salt into warm water, gradually add flour, then thoroughly knead the not too thick mass. Next, the filling is added - finely chopped cubes of sausage and cheese.

The finished dough should stand for 1-2 hours, rise and increase in size. At the same time, you need to peel the garlic cloves and add hot water and let it brew for 15 minutes.

After resting, the dough can be cut and rolled out to a thickness of about 1 cm. Even circles are cut out of the layers using a glass and fried on both sides in well-heated oil. When the pancakes are ready, they should be soaked in garlic water.

Advice! Garlic-soaked pancakes with sausage and cheese can be eaten immediately, or they can be heated in the oven over medium heat for 5-7 minutes.

How to make a pile of snack pancakes with sausage and cheese, and a whole pizza from 1 liter of kefir

We only need a liter of kefir or sour milk to get several dishes at once. For the filling we will take sausage, tomatoes, cheese and herbs. But you can experiment using, for example, mushrooms, green peas, chicken and other suitable products.

Ingredients

  • kefir or sour milk – 1l;
  • chicken eggs – 3 pcs.;
  • salt – 0.5 tsp;
  • flour – 600-800g;
  • soda – 1 tsp;
  • hard cheese – 200g;
  • fresh tomatoes – 1 pc.;
  • boiled and smoked sausage – 150g each;
  • tomato sauce – 4 tsp;
  • green onions - 1 bunch.

Yield: 20-25 pcs. pancake + pizza (26 cm).

Preparation: 40 minutes.

  1. Pour kefir or sour milk into a bowl. Add soda, wait for the reaction - a little foam should appear on top. Add salt and eggs, mix until smooth. Gradually add sifted flour. We create a thick dough that drips off the spoon. Once the desired consistency is obtained, do not add any more flour.

  2. Both types of sausage, chop the tomato into small cubes, chop the onion finely, grate the cheese on a coarse grater.

  3. We put one third of the cheese aside - we will need it a little later, and put the rest of the filling ingredients into the dough. Mix.

  4. Fry the pancakes in the standard way, spooning the dough into a frying pan with hot oil. Keep the fire low so they have time to cook.

  5. When about half of the dough remains, we finish with the pancakes and start making the pizza. Grease the baking dish with oil and pour out the dough.

  6. Distribute tomato sauce over the entire surface, sprinkle with grated cheese, which we previously set aside.

  7. Place the pizza in a hot oven (200 degrees) for 20-30 minutes.

Snack pancakes and pizza are especially good warm and hot. If they have cooled down, the microwave will always come to the rescue.

Potato pancakes with cheese and sausage

Another experimental recipe is potato pancakes with cheese and sausage, more filling than using zucchini, but at the same time more flavorful. The aromas of fried potatoes and melting sausage mingling with the creamy smell of cheese will make the whole family gather in the kitchen.

Ingredients:

  • potatoes – 2-3 pcs.;
  • sausage – 100 gr.;
  • cheese – 80 gr.;
  • flour – 170 gr.;
  • eggs – 2 pcs.;
  • seasonings - to taste.

Peeled potatoes need to be grated, do the same with cheese, cut the sausage into cubes. Next, eggs and seasonings are added to the mixture with the mixed ingredients, as much flour as needed for optimal thickening of the dough. The viscous mass can then be scooped up with a spoon and placed on a hot frying pan for frying on both sides.

Zucchini and tomatoes

This recipe is quite original and allows you to feed your family even with a small amount of sausage and cheese. You only need 50 grams of both ingredients. Also take:

• flour – 200 g; • zucchini – 0.5 kg; • medium egg; • tomatoes – 2 small; • garlic – 3 cloves; • sugar – teaspoon; • salt and black pepper to your taste.

Grind the zucchini on a grater. Do the same with cheese. Chop the sausage with a knife. Cut the tomatoes into cubes and press the garlic with a press. Combine the ingredients with the egg and flour, add sugar and salt. The result will be a medium thick mass. Place it on a hot frying pan with a spoon and fry until golden brown.
