If you see orange (yellow) lentils, then these are the peeled “cores” of the plant; such lentils are enough to lie in water for three hours; some housewives do not soak the peeled lentils at all. This is not an acquired taste - unsoaked lentils will remain in pieces after cooking and will not boil into a porridge, although they will become soft.

The lentils lay in the water for the allotted time. We drain this water and transfer the beans to the pan with the prepared broth. Any broth will do; in extreme cases, you can use ready-made bouillon cubes. For the right smoked lentil soup, you need to choose the right ingredients - if you have smoked meat in the form of a pork ham, then cook pork broth, if you take smoked beef, then there should be beef broth. After pouring the broth over the lentils, put them on the fire; even before the boil begins, a thick foam will form, which must be collected with a slotted spoon.

Salt

Pay attention to the time when you add salt to the dish being prepared - if you add salt at the beginning of cooking, the product will be more loose, because salt is a catalyst in this process

Place a dry thin-walled frying pan over high heat, add 1 tablespoon of wheat flour, stirring constantly, bring the flour to a light brown state. This is a very fast process, literally 20 seconds between toasted and burnt flour.

While stirring the soup, add flour in a thin stream and mix thoroughly. Add bay leaf. Let the soup simmer for another 15 minutes and you’re done. From the moment the lentils boil in the broth, they should cook for 50 minutes. Turn off the soup. Cover with a large towel and let sit for 2 hours.

When serving, sprinkle the soup with herbs and serve wheat bread crackers in a bowl.

You can add potatoes to this dish and serve it with sour cream, but the original recipe for soup with smoked meats and lentils does not include potatoes and sour cream.
