What is real shawarma?

The sauce is prepared separately from natural yogurt with the addition of sesame oil and spices. This is one of the differences between Arabic shawarma and not a drop of store-bought mayonnaise.

The technology for cooking meat is also special. It is fried on a special vertical spit, which rotates around its axis and heating elements.

Gradually, as it is cooked, the meat is cut off with long knives and falls onto a special tray. Next, the meat is finely chopped with a knife into small plates and sent to shawarma.

Shawarma is a dish of Armenian, Georgian, Turkish, Azerbaijani cuisine, which can now be bought in stalls in any country in the world.

The classic recipe is very popular in many countries, as it is prepared from simple ingredients that, when combined, give an incredible taste.

What ingredients will you need?

To prepare the dish you will need 2 thin Armenian lavash, spices and table salt. Curry, coriander and ground black pepper are used as flavor and aroma enhancers for the sauce.

Step-by-step cooking process

The dish is quite easy to prepare.

Cooking steps:

  1. First you need to prepare the sauce. This is done so that during the preparation of the main ingredients it infuses and becomes more saturated. This will make your homemade sauce more like store-bought dressing.
  2. In a bowl, mix all the ingredients needed to prepare the sauce. The garlic must first be peeled and passed through a press, and the pickled cucumber must be grated on a fine grater.
  3. The products must be mixed well and placed in the refrigerator.
  4. The chicken fillet must be rinsed under running water and then dried with paper towels.
  5. The prepared fillet must be cut into 3 parts (lengthwise), each of which must be well peppered and salted.
  6. The resulting layers must be placed on top of each other and removed to the side.
  7. Tomatoes and cucumbers need to be cut into slices that are convenient for use.
  8. Chop the cabbage and place in a small bowl, mash with your hands.
  9. In a grill pan, fry the chicken fillet on both sides for about 3 minutes.

  10. Using a fork and knife, separate the hot chicken fillet into thin slices.
  11. You need to spread a thin pita bread on the work surface, and then start laying out layers of filling. First you need to place cabbage, then chicken fillet, several slices of tomatoes and pickles, and then Korean carrots. It is necessary to season all products with the previously prepared sauce.
  12. The resulting mixture of ingredients must be folded into an envelope and placed on a heated grill pan.

Fry the shawarma for the required amount for 2 minutes.

Serving rules, decoration

The finished dish must be served hot. If desired, you can decorate the resulting product with prepared sauce, fresh lettuce or parsley. Shawarma must be served with any drink.

Recipe 5. Simple shawarma recipe with duck (instead of chicken)

Ingredients:

  • duck meat (boiled) - 200 g;
  • champignons - 200 gr;
  • sour cream - 2 tbsp;
  • butter - 50 g;
  • greens - 4 sprigs;
  • fresh or salted cucumber - 1 piece;
  • Korean carrots - 50 gr;
  • mayonnaise - 2 tbsp;
  • ketchup - 2 tbsp;
  • lavash - 2 pcs;
  • vegetable oil for frying;

Preparation:

1. Boil the duck meat in advance in salted water, with a bay leaf. 2. Wash the champignon mushrooms and cut into thin strips, place in a frying pan, add salt and cover with a lid, when the mushrooms give up their juice, remove the lid and fry until all the liquid has evaporated, add sour cream and chopped herbs. Simmer for two minutes.

3. Cut the cucumber into slices and place next to the prepared Korean carrots.

  • 200 g chicken fillet;
  • 300 g of mushrooms (it is best to use champignons or porcini mushrooms);
  • 150 g hard cheese;
  • 0.5 pickled cucumber.

You can also add mayonnaise to taste. This set of products is enough to prepare 1 serving, and there will also be some filling left over.

Step-by-step cooking process

Making mushroom shawarma is quite easy:

  1. Chicken meat must be washed well and cut into medium-sized cubes.
  2. In a thick frying pan, preheated and sprinkled with vegetable oil, fry the chicken breast on all sides.
  3. Hard cheese should be grated on a coarse grater.
  4. The pickled cucumber must be cut into long pieces.
  5. Prepared mushrooms should be washed well. To avoid cleaning the champignons, you can rub them with a clean dishwashing sponge, as a lot of soil accumulates on the skin.
  6. Well-washed champignons must be cut into random pieces - the main thing is not to completely chop the mushrooms.

  7. The product must be fried in a well-heated frying pan with the addition of vegetable oil for a quarter of an hour over low heat.
  8. After 10-15 minutes, you need to add salt to the mushrooms and transfer the resulting product to a bowl.
  9. During this time, you need to peel the onions and then cut them into half rings.
  10. The resulting product also needs to be fried over low heat until soft and slightly yellowish.
  11. Potatoes must be thoroughly peeled and washed. Peeled potatoes should be cut into bars; if desired, they can be cooled in ice water to obtain a crispier crust and softer inside.
  12. You need to fry the potatoes in vegetable oil (you can deep fry them if you wish).
  13. You need to spread the pita bread on the work surface.
  14. The surface of the pita bread needs to be seasoned with sauce. This can be any sauce of your choice, or standard mayonnaise with seasonings.
  15. It is necessary to lay out layers of shawarma in the following sequence: potatoes, fried chicken fillet, pickled cucumbers in blocks, fried onions, mushrooms, grated hard cheese.
  16. The resulting mass should be flavored with sour cream or mayonnaise. You need to roll the pita bread and then tuck the edges.

  17. Using a silicone brush, coat with a small amount of vegetable oil.

Pita bread on both sides must be fried for several minutes on each side until golden brown.

Serving rules, decoration

The finished dish must be served hot. If desired, you can decorate the resulting product with different sauces (to taste) or serve with fresh herbs and vegetables. As a supplement, you can use cold drinks or soda.

Homemade shawarma

1. Pour flour into a bowl, add salt. Make a hole in the middle and pour the egg into it, mix the flour with the egg and gradually pour in milk or water and mix. Knead the dough in a cup, then place it on the table and continue kneading. When the dough is ready, let it rest for 20-25 minutes and cover it with a towel.

2. Divide the finished dough into several circles and roll out each piece to 2 mm. Bake in a dry, oil-free frying pan for 1-2 minutes on each side.

3. For the filling, cut the meat into slices and fry it in a frying pan in vegetable oil.

4. Thinly slice the onion into half rings, cut the cucumbers into thin strips, grate the carrots using a Korean carrot grater and cut the cabbage into thin strips.

5. Make the sauce. Mix sour cream with chopped garlic and dill, salt and pepper to taste.
