In just a few minutes you can prepare an unusual, but very tasty milk soup. Zatirka is an old recipe in Belarusian cuisine. Simple, no frills, but I ate this soup and felt full for a long time!

Milk grout is a dish from the childhood of our mothers and grandmothers; many modern people don’t even know the word. What comes to mind when you hear the word “grout”? Surely some kind of building material!

Meanwhile, this is quite a healthy and nutritious soup, invented by our great-grandmothers. After all, before there was no pasta, much less small noodles. So they came up with something similar for cooking milk soup.

The semi-dry dough was rubbed between the fingers into boiling milk or simply into boiling water. The dough particles turned out to be of different sizes, this is also a pleasant feature of the grout - sometimes you get a large piece, sometimes it’s just thick flour in the milk. Delicious, simple and fast!

I looked through many recipes - everywhere the dough is mashed with a fork, this is a modern interpretation, and the result is not quite the same. I saw how my neighbor’s grandmother did the grouting - she made the pieces straight out of a small spindle - this is a special art!

  • onion – 75 g;
  • sunflower oil – 45 ml;
  • butter – 5 g;
  • milk – 50 ml;
  • flour – 160 g;
  • table salt - to your taste;
  • soup chicken - 1 quarter;
  • egg – 55 g.

To make the broth more rich and tasty, you need to take a chicken soup set to make it. From the specified number of components you can make 8 servings.

Step-by-step cooking process

The step-by-step process for creating Grout soup at home is shown in the following paragraphs:

  1. The chicken should be placed in a saucepan with water and brought to a boil, simmering over low heat under a closed lid until the bird is cooked.

  2. Potatoes must be peeled and cut. Then you will need to remove the chicken from the broth and place the vegetable in the pan.
  3. The onion will need to be peeled, washed and finely chopped into cubes.
  4. Pour vegetable oil into a saucepan, add a little butter and fry the onion until lightly browned.
  5. To grout, beat an egg into a bowl and mix it with table salt and milk.
  6. Then you will need to dip your hands first into the egg mixture, then into the flour and, rubbing your palms, remove the resulting dough from your hands. The process must be repeated several times until half of the egg mixture is used up and the flour is formed into pellets. Where the lumps are large, they should be broken into smaller lumps.
  7. When the potatoes are cooked, place a small part of it in a separate bowl, mash it, and then return it back to the pan along with the fried onions.
  8. Next, you need to add grout to the boiling broth, constantly stirring the composition with a spoon.

After a few minutes of boiling, the “Grout” soup is ready to serve.

How to serve a dish

When serving, the soup should be sprinkled with chopped parsley leaves or dill sprigs. It is advisable to consume the dish hot. If desired, the product can be seasoned with mayonnaise or sour cream.

Step-by-step cooking process

The detailed process of creating a flavorful delicacy with the addition of mushrooms is shown in the following steps:

  1. The onion should be peeled, washed and cut into small cubes.
  2. The carrots will need to be peeled and chopped on a coarse grater.
  3. Potatoes need to be peeled, washed and cut into small cubes.
  4. The mushrooms need to be cleaned and then cut into medium-sized plates.

  5. You will need to add water to the pan and bring to a boil. Afterwards, you need to place the previously chopped vegetables into the container, add salt and reduce the heat to low. If foam forms, it must be removed and the vegetables boiled until tender.
  6. Break an egg into a bowl, add table salt and water and stir everything with a fork.
  7. Place the sifted flour in another bowl.
  8. Clean hands should be dipped into the egg mixture, and then into flour and rub your palms together until flour crumbs form. This must be done over a sieve so that you can immediately get rid of the excess flour.
  9. Parsley should be rinsed and finely chopped.
  10. The finished flour crumbs should be placed in boiling soup with constant stirring.
  11. You need to cook the dish for 5 minutes, and then add chopped herbs and vegetable oil.

At the end, the pan with the treat should be removed from the heat and served hot.

Today I am simply 100% sure that you do not know such a dish. I ate it myself when I was a child. I remember that it was very tasty.. So, today we have prima - Belarusian milk grout or milk soup grout. It is prepared very simply, but in different regions of Belarus it is different, and maybe every woman at home has her own original recipe. I was given knowledge of great non-calculation. The name of the dish comes from the word “to mash.” And we mash the flour with something: potatoes, eggs or something else, the flour can be different - rye, wheat, buckwheat... You should get crumbs, so we cook them later. Or you can grind it without crumbs.

First version of grout milk soup:

  • 1.5 stack. - Wheat flour
  • 1-2 pcs. - egg/ eggs
  • 40 g - butter/ sour cream
  • 6-7 stacks. - milk
  • salt.

And this grout has a toasted, nutty taste. Fry the sifted flour in a frying pan without oil until light brown, add a little water, egg, oil, salt, grind thoroughly. Pour the resulting lumps of dough into boiling milk.

Second milk grout option

In this case, the grout will have a uniform consistency. You can fry the flour, or not fry it, and without any crumbs at all. Knead the dough with egg and milk until the consistency of sour cream, as in the first recipes, and pour into the boiling mixture of milk and water in a thin stream while stirring. Cook, stirring for 5-7 minutes/ week over low heat. Add salt and sugar/sukar to taste.

Third grout option with potatoes

  • 50 g - wheat flour
  • 50 g - raw potatoes/bulba
  • 700 ml - milk
  • 300 ml - water
  • 10 g – sugar/tsukar
  • salt to taste
  • butter.

This grout is a little reminiscent of the taste of grated boiled potatoes, like in sorcerers, not much, but a little there. For those who are not familiar with this taste, it is better not to take risks, but to start with the first options.

Grate raw potatoes on the finest grater, squeeze a little, add flour and grind the whole mass. You can drain the juice immediately, or you don’t have to drain it - then add a little more flour. You should end up with this not-so-pretty grainy mixture. Mix water and milk, bring to a boil and pour in the potato-flour mixture in parts. Cook, stirring occasionally for 10-15 minutes. Add salt and sugar. I personally love milk grout with a distinct sweet and salty flavor. Let our grout sit under a closed lid for another 10 minutes. Season with butter just before serving.

With egg

Zatirka soup, the recipe for which can be supplemented with vegetables, eggs and herbs, turns out to be quite nutritious and satisfying. The dish is suitable for consumption by adults and small children over 3 years of age.

Since the calorie content of the delicacy will not be too high, the product is allowed to be eaten by those who are on a diet.

Composition of ingredients

The ingredients required to make Grout Soup are listed in the following paragraphs:

  • water – 3 l;
  • potato tubers – 300 g;
  • chicken egg – 110 g;
  • laurel leaf – 1 pc.;
  • onion – 75 g;
  • carrots – 75 g;
  • flour – 200 g;
  • parsley - 1 sprig;
  • table salt – 11 g;
  • black peppercorns – 4 pcs.

Instead of parsley leaves, you can use dill sprigs. It all depends on personal taste preferences. It is acceptable to use basil leaves or cilantro. If you don’t want the soup to be a little spicy, you need to exclude black peppercorns from the composition. However, the product will not be as spicy and piquant in taste as with spice.

Step-by-step cooking process

The step-by-step process of making egg soup is described in the following steps:

  1. Place a pan of water on the fire and bring it to a boil.
  2. Potatoes and carrots need to be peeled, washed, and then cut into large cubes or cubes.
  3. You will need to peel the onion and then finely chop it.

  4. Prepared vegetables must be placed in a boiling liquid and boiled for 20 minutes. until soft on medium heat.
  5. To grout, you will need to sift the flour into a bowl and beat in the egg. All ingredients should be mixed well, and then rub the dough between your palms, forming small pellets.
  6. Lumps will need to be sifted through a sieve to remove any remaining flour.
  7. Next, you need to place the pepper and bay leaf in the pan and boil the contents for about 5 minutes.

  9. Then add a scrambled chicken egg to the soup and simmer on low heat for about 2 minutes.

At the end, the “Grout” soup must be removed from the heat and allowed to brew for 10 minutes. Then you can serve the treat to the table.

What can I add?

If desired, you can add pickles and olives to the soup. They will allow you to diversify the taste and aroma qualities of the finished product. When making a dairy version of the dish, the soup can be supplemented with grated cheese. Thanks to this, the taste will be richer and more delicate.

How to serve a dish

When serving hot soup, add parsley and a slice of bread. If desired, the product can be seasoned with sour cream.

“Zatsirka” - a forgotten soup originally from Belarus

When my relatives found out that I was writing recipes for a competition about my grandmother’s kitchen, they began vying with each other to list their favorite foods from childhood. And nephew Sasha remembered his favorite soup from his grandmother - “grout”, or as we sometimes called it - “zatirukha”.

The soup is already forgotten, simple, but tasty, unusual and satisfying. Especially if you are tired of all the traditional soups, then the prepared grout will be like a new dish on the table.

Grout – from the word “to rub”, to grind, this is how it is prepared from flour and eggs. The grout is cooked either in meat (preferably chicken) broth or simply in water with frying of lard, cracklings, and onions. Milk grout is also very tasty, and children readily eat it (ours ate it with pleasure, and Sasha’s grandmother cooked it almost every day).

So, prepare the grout soup with chicken broth.

Ingredients

With lard

Soup based on flour lumps can be made from a minimum set of food products. You just need to use potatoes with onions, lard and herbs.

The result is a fairly aromatic and satisfying delicacy that can be prepared within 20 minutes.

Composition of ingredients

Making “Grout” soup with lard is possible if you have the following food products:

  • vegetable broth – 2 l;
  • greens - for serving;
  • potatoes – 500 g;
  • onion – 75 g;
  • flour – 150 g;
  • table salt, ground pepper - as needed;
  • lard – 60 g.

The broth can be made not only of vegetables, but also of meat, or you can replace it with plain water.

For frying, it is recommended to use lard that does not contain meat streaks.

The above ingredients are enough to make approximately 6 servings.

Step-by-step cooking process

Making “Grout” soup at home is based on the following points:

  1. Potatoes need to be peeled and cut into medium cubes.
  2. The broth should be brought to a boil and the potatoes should be placed in it, adding salt and boiling over low heat for 10 minutes.
  3. The flour must be sifted and a little cool water added, stirred thoroughly, and then rubbed with your fingers until small lumps form. Rub the product between your palms and transfer the mixture into a bowl.
  4. Finely chopped lard should be melted in a saucepan, and then peeled and finely chopped onion should be fried in it until golden brown.

  5. Next, you need to add flour mixtures, frying them for 1 minute. and removing the saucepan from the heat.

The contents of the pan should be added to the soup in about 5 minutes. until ready, stir and serve the dish to the table for tasting.

How to serve a dish

When serving the hot dish, it is recommended to supplement it with chopped parsley leaves and a slice of rye bread.

Method six. Thicken the soup with coconut milk

If yogurt takes us back to the Slavs and the Balkans, coconut milk reminds us of Southeast Asia and India.

Pumpkin soup with ginger and coconut milk

Coconut milk is often used to give curries a smooth, smooth texture. Along with the thickening, it adds a sweet flavor and creamy texture to the dish - almost like you're eating a little coconut. It's also a great option for those who are lactose intolerant.

BOTTOM LINE: If you want a thicker, heartier soup, choose something starchy. If you need a creamy consistency and delicate flavors, try “milk” versions of natural thickeners. This method adds body to your soup while maintaining its original flavor.

How to grout tiles on the floor. Technology for using cement-based mixtures

  1. Preparing the surface for grouting. Checking the quality of cleaning of joints (full cleaning should be done when laying tiles). If necessary, clear with a wooden wedge. Professionals use a special knife with replaceable blades for seams from 2 mm. The cutting surface is coated with tungsten carbide, which copes with hardened material (this is the answer to the question of how to remove grout from tile joints that has lain there for several years). Then remove the dust with a slightly damp cloth. The operation is carried out regardless of whether dust is visible or not. It is important not to miss anything: first the vertical (left to right) seams are cleaned, then the horizontal (top to bottom) seams. Of course, the spacer crosses must be removed.

  2. Preparing the mixture. Produced in strict accordance with the instructions on the packaging with mandatory weighing of the components. Pay special attention to accurately maintaining the time interval before re-mixing (the dye crystals are dissolving). The entire volume must be used up within the time specified by the manufacturer. Grouting with the addition of dry latex to the cement mixture is relevant. They acquire water-repellent properties, are strong and durable in any conditions, including swimming pools. 30 colors and shades, work with ceramic, porcelain stoneware, glass, clay tiles and natural stone, including marble.

  3. Filling seams. At the first stage, you can use a metal spatula for grouting tile joints. For further distribution and compaction, a trowel with a rubber base specially designed for cementitious compounds is used. The LITOKOL series of troweling tools has a blue replaceable base. High-quality grouting of floor tile joints is done with a squeegee with a foam rubber working element. Due to the large width – 50 cm – the work goes faster. It is possible to replace the rubber element. Connections to plumbing fixtures are not treated with cement grout.

  4. Removing the remaining mixture and washing it off. Done 15-20 minutes after filling the seams. This operation, in addition to removing excess mortar, smoothes and compacts the seams. For these purposes, a two-layer foam sponge is used: the harder side removes large fragments, the softer side cleans the seams. The movements are light, without much pressure. The sponge is damp, and when it becomes dirty, rinse thoroughly in clean water at room temperature. If you don’t have a special one, you can use a dishwashing sponge. Of course, its small size will significantly increase operating time.

  5. Seam formation. There are a lot of special spatulas for this operation. A section of antenna television cable is the most accessible. Each manufacturer of grouting materials offers its own design. The best tool for smoothing is a spatula with replaceable balls: 17, 22, 25, 30 mm. The handle - the telescope expands the coverage area. Such a tool is quite expensive, but with large volumes of jointing it noticeably speeds up the work. Formation begins after the grout has slightly hardened. After each vertical or horizontal movement, the adhering solution is removed from the spatula. The corners of the junction of several tiles are smoothed separately.

  6. Final cleaning of tiles. After final hardening, the tiles can be finally cleaned of traces of grout and polished. This is done using dry terry cloth.
