Usually, pureed soups, which we make from available and inexpensive products, turn out to be light and delicate in taste. But I also make a heartier version of these soups by adding dumplings from various ingredients.
In this recipe, I talked about preparing delicious and simple semolina dumplings that are suitable for adding to any liquid pureed soups. And in the next one I’ll tell you how to make dumplings from other types of cereals.
Recipe for soup dumplings
In the classic Russian and Ukrainian version, the broth is cooked with chicken. Chicken parts can be any - dietary fillet or giblets, as well as wings, legs, back. While the broth is preparing, you need to knead the dough for the dumplings.
Any grandmother will tell you how to make dumplings for soup, since two generations ago, when there was no industrial pasta, the rich, high-calorie component in soups was made from flour and water.
To make dumplings for soup, the recipe recommends using the following products for 1 liter of broth:
- water 1 tbsp. l;
- 100 g flour;
- 1 egg;
- pinch of salt;
- 50 g sunflower oil.
Before making dumplings for soup, vegetables are peeled and cut: potatoes, onions, carrots. The dough is kneaded like this: the yolk is mixed with water, oil and salt and poured into a mound of flour.
The beaten egg white is added at the end and mixed into the dumpling dough. It turns out to be a soft consistency like thick sour cream, easy to take with a spoon. While the dough is resting, put potatoes (2 pieces) cut into strips and salt (2 tsp) into the broth boiling over low heat.
Next, prepare a frying mixture of 1 onion, 1 carrot and oil. The onion is cut into cubes and sauteed until golden brown with grated carrots, then the frying is placed in a pan with broth in which the chicken meat is cooked.
When everything comes to a boil, use a tablespoon to scoop out half-spoon-sized dumplings and place them in the boiling soup. The dumplings cook quickly - 10 minutes. Before finishing cooking the soup with dumplings, pepper the entire aromatic mixture and sprinkle with finely chopped parsley and green onions. After 2 minutes, the dumpling soup is ready.
With cheese
Lunch will be filled with a rich, creamy taste if you add cheese to the dumplings. This dough is often used to prepare chicken first courses, as well as puree soup.
Composition of ingredients
Product set:
- chicken egg – 2 pcs.;
- cheese – 100 g;
- salt – ½ tsp;
- cold water – 3 tbsp. l.;
- flour – 150 g.
What can be added and changed in the composition
You can add fresh or dried herbs and seasonings that your family prefers. You should be careful with salt, as cheese often already contains the required amount.
Step-by-step cooking process
Cooking process:
- First of all, you need to keep the piece of cheese in the freezer for a while (15 minutes is enough).
- Next, the dairy product will need to be grated and immediately mixed with the egg and salt with a fork.
- All that remains is to add the sifted flour and knead the dough, which is immediately placed in a plastic bag and set aside for 10 minutes.
- Next, divide the piece into several parts, first roll each into a tube, and then cut into dumplings. The thickness should not exceed 0.5 cm.
To prevent the products from sticking together, you need to lay them out on a dry surface sprinkled with flour. In this form they can lie for about 20 minutes.
Semolina dumplings
For fatty meat soups, dietary soup dumplings are offered, which are made with water, flour and salt. The dough is made loose and placed into the soup in teaspoonful portions. There are recipes for dumplings made with milk or kefir, which replace water and are better suited to vegetable and mushroom broths.
Semolina dumplings for soup add a softer and more distinctive taste to the first course. There is a special soup made from semolina dumplings, which pleasantly surprises with the combination of bell pepper and beef broth with tender yellow lumps of dumplings.
If you want to make semolina dumplings for soup, the recipe is quite simple; for the broth, use:
- 1 liter of water;
- 300 g beef;
- 1 bay leaf, pinch of ground pepper;
- 2 bell peppers (red and yellow);
- carrots 1 pc;
- onion 1 pc;
- potatoes 2 pcs;
- salt 2 tsp;
- greenery.
For semolina dumplings, take 80 g of semolina, mix with 50 g of milk and 1 egg. The dough turns out to be fluid; it must be left for 30 minutes for the semolina to swell.
Add potatoes to the prepared broth of finely diced beef, whole carrots and whole onions. Then, after boiling, add the diced bell pepper and let it simmer for 10 minutes. We take the swollen semolina with a teaspoon soaked in cold water and put it in the boiling soup. After 10 minutes of cooking, add the greens. Before eating, remove carrots and onions from the soup; they have already given their smell and taste to the soup.
So I’m eating the soup, which by the way is very tasty, I don’t want to spill it on the keyboard like yesterday with coffee, and I’m writing its recipe. It just so happened that all this bunch of ingredients (mushrooms, processed cheese and beef...) ended up in one place (in my refrigerator) at the same time and ended up in this soup.

- Pour water (2 liters) into a saucepan and put on fire.
- Wash the beef, cut into pieces and place in a pan. When it boils, remove the foam. Let the beef cook on its own for about 40 minutes, and while the beef is cooking, prepare everything else:
- Make a fry of onions and carrots: peel and finely chop the onion, place in a frying pan with hot vegetable oil. Peel the carrots, wash them and grate them, add them to the onions in the pan. Fry together until golden brown (as in the photo).
- Peel the potatoes, cut into cubes and throw into the pan with the beef.
- Send fried onions and carrots there.
- Salt the soup to taste.
- Chop the mushrooms and lightly fry in vegetable oil. Season with ground black pepper. Place in a saucepan with beef and vegetables.
- Cut the processed cheese into small cubes and also add to the pan.
- Prepare semolina dumplings
: to do this, break one egg into a plate, salt it, beat with a fork and stir in, gradually adding (sprinkling in a thin stream) semolina. The whole process can be seen in the photographs. The mixture should be as thick as thick sour cream. Shouldn't flow. - Take a teaspoon, scoop up a little mixture of semolina and egg, and place the spoon in a boiling pot of soup. When the dumpling falls off the spoon and goes into the soup, put the next dumpling on the spoon. Repeat the process until the entire mass is in the soup in the form of dumplings. The dumplings should float almost immediately and greatly increase in size. When I cooked it for the first time, the dumpling didn’t want to leave a teaspoon, but then everything worked out :) The dumplings need to cook for 5-7 minutes.
- And the final touch is finely chopped greens. A little parsley and more dill. That’s how I like it, this combination seems delicious to me. Boil the greens for a few minutes (about 3), otherwise the soup will quickly disappear and will not last in the refrigerator.

THE SIMPLE SOUP WITH SEMONA DUCKINGS
YOU WILL NEED: chicken broth, onion, carrots, potatoes (2 pcs.), herbs, semolina and egg.
- Put the broth on the fire.
- Finely chop the onion.
- Chop or grate the carrots.
- You can fry onions and carrots in vegetable oil, or you can throw them raw into soup.
- Peel the potatoes, cut into cubes and add to the soup.
- Let it all cook for 20 minutes.
- Prepare semolina dumplings
: to do this, break one egg into a plate, salt it, beat it with a fork and, continuing to beat, gradually stir in the semolina. The mixture should be as thick as thick sour cream. Shouldn't flow. - Take a teaspoon, scoop up a little mixture of semolina and egg, and place the spoon in a boiling pot of soup. When the dumpling falls off the spoon and goes into the soup, put the next dumpling on the spoon. The dumplings will float and expand almost immediately.
- Cook until done (dumplings need about 7 minutes)
- Add greens.

Recipe No. 1 – Light soup with semolina custard dumplings.
This soup is very light, in its composition, it does not contain additional side dishes in the form of potatoes and sautéed vegetables, which can cause. Therefore, it is perfect for those who are currently on a diet.
What do we need?
- semolina (160 g);
- strong meat broth (two and a half liters);
- table salt;
- semolina (160 g);
- freshly ground allspice or black pepper;
- fresh dill (at your discretion);
- premium quality butter (52 g);
- green onion feathers;
- medium-sized boiled carrots (one piece).
Now let's look at the preparation steps in more detail:
- First you need to prepare semolina custard dumplings, and for this you need to boil 200 ml of strong meat broth, add the required amount of butter, add semolina (150 g) in a very thin stream with continuous and always intense stirring. Mix everything vigorously again, prepare a dough that resembles plasticine, and if it sticks to your hands, then you need to add a little more semolina.
- Semolina dough should be rolled out, then stars should be cut out of it using a special mold.
- Boil the remaining meat broth, throw the semolina dumplings into it and wait for them to float, and this whole process should take no more than seven minutes.
- As soon as the dumplings are cooked, you should place them on a separate dish, and pour all the chopped herbs into the pan, add seasonings, a small amount of freshly ground pepper and table salt.
- Pour the soup into portioned bowls and place a certain amount of semolina custard dumplings in them.
This way we got a light soup without any additional side dish.
Recipe No. 2 – Hearty chicken soup with semolina dumplings.
The next dish that I want to offer you does not have many more ingredients. This soup will turn out more satisfying and richer due to more vegetables.
- To prepare a dish such as chicken soup with semolina dumplings, you will need a set of the following ingredients:
- small leek onion (one piece);
- chicken fillet (two separate halves or one whole);
- bay leaf (two pieces);
- medium-sized carrots (two pieces);
- allspice;
- black pepper, table salt (to your taste);
- vegetable oil, deodorized for frying;
- filtered water (three liters);
- medium-sized potato tubers (five pieces).
In addition, you will need a specific list of ingredients for preparing semolina dumplings:
- chicken egg (one piece);
- semolina (110 g);
- butter (21 g);
- vegetable or chicken strong broth (110 ml)
- To begin with, you should prepare a broth, preferably chicken, and to do this you need to put two halves of chicken fillet in a pan, add the required amount of filtered water, add a whole peeled carrot, half a leek, a bay leaf, table salt, and allspice.
- As soon as the chicken fillet is completely cooked, it should be removed from the pan, then the broth should be strained. As for the chicken fillet, you must first cut it into portions, then return it to the pan.
- Grate the boiled carrots on a grater with the smallest holes, finely chop the leeks.
- Prepare the frying in vegetable oil, add a little salt and pepper. Cut the pre-peeled potatoes into small cubes, after which you can start preparing the dumplings, and to do this you need to combine the required amount of broth, butter and semolina in one container.
- From all the above components, make a dough, knead it, adding one chicken egg, then form small balls and place them in chicken broth.
- As soon as the semolina dumplings begin to float, add the frying agent to the chicken soup, wait until the contents of the pan boil and then turn off the stove.
- Let the chicken soup with semolina dumplings sit for ten minutes, then serve it with homemade bread and fresh herbs.
