  1. Clean and rinse the fish, pour in lemon juice and leave for half an hour.

Cooking method:

  • Wash the tench, removing mucus and entrails. Cut off the heads, tails and fins of the carcasses. Rinse the carcasses again and blot with napkins.
  • Peel the onion and cut into thin half rings.
  • Rub the fish with salt and pepper, coat with mayonnaise.
  • Stuff the tench carcasses with onions and dill.
  • Peel the potatoes, cut into round or semicircular slices. Season with salt and pepper.
  • Secure one side of the culinary sleeve with a special fastener or tie it.
  • Place the potatoes in the cooking sleeve.
  • Cut the tomatoes into circles. This needs to be done with a special or just a very sharp knife so as not to squeeze out excess juice from the vegetables.

To prepare this dish you need about 0.5 kg of tench, 200 g of sour cream, boiled potatoes, vegetable oil for frying, some breadcrumbs, parsley, salt.

The first thing to do is to clean the tench from mucus and remove the entrails and gills, rinse well. Salt the tench well, bread it in breadcrumbs and fry in vegetable oil on both sides. Then the fried tench is placed in a greased form, and chopped boiled potatoes are laid out around it.

Pour all this with sour cream and sprinkle with breadcrumbs. Place the pan in the oven for 10 minutes (when the fish is browned, the dish is ready). We take out the form, sprinkle everything with herbs and serve.

Whole baked tench


Compound:

  • lines – 1 kg (3-4 pcs.);
  • mayonnaise – 60-80 ml;
  • salt, fish seasoning - to taste.

Cooking method:

  • Clean the tench from mucus and gut it. Rinse the carcasses and dry with a kitchen towel. Remove the gills and fins from the fish.

One of the best ways to prepare tench.

Ingredients:

  • tench fish - 1 carcass;
  • salt - to taste;
  • universal seasoning for fish;
  • lemon - 0.5 pcs.;
  • food foil;

Preparation:

  1. It is not at all necessary to clean tench fish, because they have very small scales. In order to cook tench, we first need to build a fire. Well, while the coal is burning, we will prepare the fish.
  2. We gut the tench and wash it thoroughly.
  3. Then you need to salt, add seasonings and coat the fish with them.
  4. Squeeze the juice of half a lemon and rub it into the fish. Let the fish soak in the seasoning mixture.
  5. Wrap the tench fish in foil. There is very little left - to wait until only coals remain from our fire.
  6. Now we dig a hole in the coal, put a line there in foil and cover the fish with coals.
  7. We time it for thirty minutes - during this time we cook the tench on coal.

In the oven with potatoes and onions

The most tender baked fish with a soft potato side dish and spicy sauce will be the best dish for a family dinner. For the recipe you need to take: 4 tench, 5 pcs. potatoes, 3 onions, 3-4 garlic cloves, 1 tsp. finely chopped salt and crushed pepper, a bunch of fresh parsley, 50 ml of oil.

You need to bake a nutritious universal dish in the oven in stages. Divide the peeled and washed potatoes into medium-thick circles and place on an oiled baking sheet. Chop the onion into rings, disassemble and place on the potatoes.

Lightly salt and sprinkle vegetables with seasonings to suit your personal taste. Mix the oil with garlic passed through a press, seasonings, salt and chopped herbs. Coat the cleaned fish carcasses with a generous portion of sauce.

Place the fish on the vegetables and pour the rest of the sauce on top. Bake at 200℃ for about 40 minutes, from time to time the grizzled fish should be basted with the oily juice that is released. Tench should be served hot with a soft potato side dish and sauce.

It is known that not only pork and chicken are suitable for jellied meat, but also some fish. Tench is one of these breeds. For a cold “New Year’s” dish, you need products that are available in any home. For 1 kg of tench you will need:

  • 1 – 2 medium sized onions;
  • 1 large carrot;
  • parsley root (1 piece weighing about 50 g);
  • 2 tbsp. l. gelatin powder;
  • and salt and black pepper.

Separate the head from the fish, cut the rest of the carcasses into small pieces, add salt and leave to rest for 2 - 3 hours. During this time you need to prepare the filling. Pour water over all vegetables and herbs and put on fire. After boiling, let the mixture cook for about 15 minutes, then add the fish heads there. After half an hour - an hour you will need to take them out, and instead put the rest of the meat in the broth. And cook for another half hour.

After that, all that remains is to strain the broth through cheesecloth and add gelatin diluted in cold water. Immediately pour half of the liquid into the prepared container and let it harden. Then place the vegetables and fish on top (it is advisable to remove the bones first) and pour in the rest of the broth. A few hours later, a delicious and beautiful dish is ready!

With sour cream sauce

You can prepare the lake dweller in different ways. Tench can be fried, steamed or made into soup... But the tastiest is tench baked in sour cream. The fish comes out very tasty, tender and juicy.

Ingredients:

  • a glass of sour cream;
  • two spoons of flour;
  • garlic clove;
  • salt, fish spices, bay leaf.

Cooking method:

Method of preparing a dish step by step. Stuff gutted tench carcasses with scissor-cut tarragon, sliced ​​garlic and lemon slices. Salt the skin of each specimen and sprinkle with crushed pepper. Wrap the fish in two layers of foil, place the pieces on the grill and place over the burnt coals.
