In the national gastronomy of any country, the culinary traditions of the capital always occupy a special place. Old Moscow or Moscow cuisine began to develop in the 17th century, but its roots go much deeper - during the times of Ancient Rus'. Recipes in those distant times were the same for all segments of the population. Ingredients, by the way, too - “exotic” items such as expensive foreign wines, dried and dried fruits, sweets, of course, only noble people could afford, but the bulk of food products (meat, poultry, fish, milk, mushrooms) were common to nobles and common people. In general, meat was not eaten often due to numerous fasts. But fish, mushrooms, and dairy products were loved and favored. The Moscow-style fish recipe is a prime example of this trend. Fish baked in Moscow style. Recipe

Ingredients (for 5 servings):

fish fillet – 700-750 gr.;

potatoes – 1.2-1.3 kg;

fresh mushrooms, such as champignons or oyster mushrooms – 300 g;

onions – 2 pcs.;

sour cream – 4-5 tbsp. spoon;

milk – 150 ml;

wheat flour – 1.5 teaspoon;

hard-boiled egg – 3 pcs.;

grated cheese – 80-100 gr.;

salt, ground black pepper, flour for breading, oil for frying - to taste.

Preparation:

Cut the peeled potatoes into thin round slices and fry in the usual way until almost fully cooked; at the end of frying, add salt to taste.

Salt and pepper the pieces of fish fillet with ground black pepper, roll in flour and quickly fry on both sides until golden brown.

Prepare the sauce for baking. To do this, fry finely chopped onions in oil until golden brown, add finely chopped mushrooms, add a little salt and simmer covered for 10-12 minutes.

Mix sour cream with flour and milk, and while stirring, pour this mixture into the mushrooms and onions, cook until thickened.

Place fried potatoes in a greased baking dish or in portioned frying pans, place pieces of fried fish on it, and place thin slices of hard-boiled egg on the fish.

Place sour cream and mushroom sauce on top and sprinkle with grated cheese.

Place in the oven at 210-220 degrees and bake for 10-15 minutes until the cheese is baked and golden brown.

Traditionally, fish baked in Moscow style is served with lightly salted or pickled cucumbers or tomatoes and, if desired, with cold vodka, for example, with this:

From the beginning of the 17th century, Moscow cuisine began to develop, because its recipes became much more varied and richer.
The most common product used in cooking was fish. Because meat was very often forbidden to eat due to numerous fasts. Therefore, fish in Moscow began to bear this name. To prepare this dish, you can use any fish, as long as there are few small bones in it. You can take salmon, pike perch, trout, pink salmon, chum salmon, sturgeon, sea bass, sterlet or beluga. Restaurants served food in small individual frying pans, and any porridge as a side dish. Later they were replaced by potatoes. At home, Moscow-style fish can be cooked in a general form and a large frying pan. In any case, it will turn out very tasty.
