If you start to carefully study recipes for sweet dishes, you will be surprised how few hot ones are among them. In principle, any pie - from charlotte to crumble - can be served straight from the oven. But there are a number of desserts that are only good when served hot. We talked with the chefs and selected both classic ones (like chocolate fondant or flambéed crepe-susette pancakes) and original ones - date puddings, apple pie with hot caramel and pieces of fresh fruit and berries stewed in orange sauce.

Chocolate pudding

An amazingly tasty and easy to prepare dessert.

Ingredients

  • Condensed milk – 170 g
  • Dark chocolate – 350 g
  • Butter – 60 g
  • Eggs – 4 pcs.
  • Flour – 100 g
  • Cocoa – 1 tbsp. l.
  • Vanilla sugar – 1 tsp.
  • Salt - a pinch

Preparation

  1. Beat the warm butter with a mixer and powdered sugar. You should get a lush, homogeneous mass.
  2. Add condensed milk little by little, continuing to whisk.
  3. Separately, beat the eggs with vanilla sugar and a pinch of salt and add them to the main mass.
  4. Pour cocoa with one tablespoon of boiling water, mix and also add to our mixture.
  5. At the end, add melted chocolate and flour. Mix everything well until smooth.
  6. Grease ceramic molds with oil and pour pudding into them.
  7. Preheat the oven to 200 degrees, then place a baking sheet in it, on which we will place our molds with pudding to warm up a little.
  8. Place the pudding in the oven for 15 minutes.
  9. We take out the finished pudding and immediately run a knife along the sides of the mold and turn the pudding over onto plates. Sprinkle with powdered sugar.

Ready! You can serve hot chocolate pudding with berries, ice cream or whipped cream.

"Buhti"

Bulgarians also love hot desserts. And the most popular is “bukhti”, delicious curd donuts. Moreover, children love to eat them, and mothers love to cook them: making bays is very simple. A pack of cottage cheese is mixed with a glass of flour, a spoonful of soda and three eggs. It is better to take cottage cheese that is not grainy or to rub it through a sieve. Heat a large amount of vegetable oil in a deep bowl or saucepan. The mass is scooped up with a spoon and dropped into deep fat. The bays fry very quickly. When they turn beautiful brown, take them out and place them on a napkin to remove the oil. And for extra deliciousness, donuts are either sprinkled with powdered sugar or dipped in hot syrup or melted chocolate.

Charlotte with apples

Ingredients

  • Apples – 2-3 pcs.
  • Flour – 1 cup 240 ml
  • Sugar – 1 cup
  • Eggs – 3 pcs.
  • Cinnamon – ½ tsp.
  • Vanilla extract – ½ tsp.
  • Salt - a pinch
  • Powdered sugar - for dusting

Preparation

1. Mix salt, flour and cinnamon in a bowl.

2. Beat eggs with sugar with a mixer for about 3 minutes. The mass should lighten and increase slightly in size.

3. Gradually add the dry mixture and beat until smooth.

4. Peel the apples and cut them into cubes.

5. Grease the baking pan with vegetable oil and lightly sprinkle the bottom and sides of the pan with flour. Lay out the apples and fill them with the resulting mass so that the fruit is completely covered with dough.

6. Bake in an oven preheated to 180 degrees for 30 - 40 minutes. Check the readiness of the charlotte with a wooden skewer.

7. Before removing the mold, let the charlotte cool a little. Sprinkle with powdered sugar if desired.

"Fruit Happiness"

You can also make complex hot desserts from fruits. Moreover, you don’t have to worry too much: the cooking process is still not too complicated.

Four large pears wash well and dry a little. The center of each is cut out with a knife. One hundred grams of dried apricots, washed and chopped, are mixed with the same amount of raisins (take the ones without seeds). Pears are filled with this mixture and placed in a baking bag. It is placed in the oven at 180 degrees for a quarter of an hour. Then the dessert is removed from the bag, topped with caramel sauce or any syrup and served to those at home with a sweet tooth.

Baked apples step by step

Apples can be baked with a variety of fillings that you like. We offer a recipe for baked apples with nuts, cinnamon, honey and lemon juice.

Ingredients

  • Apples – 6 pcs.
  • Brown sugar – 2 tbsp. l.
  • Pine nuts – 2 tbsp. l. (you can use any other nuts)
  • Cinnamon – 0.5 tsp.
  • Butter – 30 g
  • Lemon or lime juice

Preparation

1. Wash and core the apples. We make small cuts in the skin around the entire circumference of the apple so that it does not burst in a hot oven.

2. Grind nuts, sugar and cinnamon in a blender, but not for long. A couple of turns will be enough.

3. Sprinkle the apple core with lemon juice.

4. Stuff the apples with nut filling and place on a buttered baking dish.

5. Divide 30 g of butter into 6 cubes.

6. Place a cube of butter in the core of each apple. Bake in an oven preheated to 200 degrees for 45 minutes.

7. When serving, pour syrup from the juice that the apples released during baking.

"Apple Pleasure"

Even more popular is the preparation of hot desserts from always available apples. Even just baked in the oven, they already make you salivate. And if you add a few pleasant additions, the delicacy will tempt even an ascetic.

A kilogram of apples with dense pulp is peeled and cut into small pieces. The Cortland and Gala varieties are especially good for baking. However, others will also give good results. Apple pieces are mixed well with the juice of a large lemon, two spoons of cinnamon and a third cup of sugar (it is better, again, to prefer cane sugar). The “glaze” should coat each piece. The mold is placed in an oven whose temperature is raised to 2000 Celsius. The dessert is baked for half an hour with occasional stirring.

Tarte Tatin with pears

A classic French pie with an interesting and simple cooking technology.

Ingredients

  • Flour – 1 cup
  • Sugar – 1 glass
  • Butter – 200 g
  • Sour cream – ¼ cup
  • Pears – 5 pcs.
  • Ground nutmeg – 1 pinch
  • Salt – 0.5 tsp.
  • Lemon juice – 2 tbsp. l.

Preparation

  1. Let's prepare the dough. In a bowl mix flour, 1 tbsp. l. sugar, salt and 120 g butter. Knead everything well with your hands. Then add sour cream and mix everything with a whisk until smooth. Dust the mixture and your hands with flour, form a ball of dough and place it in the refrigerator for 1 hour.
  2. Place the remaining butter in a frying pan and melt over medium heat.
  3. Add 2/3 cup sugar, stir and remove from heat.
  4. Wash and peel the pears. Cut the pears in half, leave one half whole, and cut the rest into slices. Pour lemon juice over them and sprinkle with 2 tablespoons of sugar.
  5. Place the pears in a frying pan with oil. Place the whole half in the center, lay out the rest in a circle.
  6. Return the pan to the heat and bring the mixture to a boil. Cook for 15-20 minutes until caramel forms. Then remove from heat and add nutmeg.
  7. Roll out the dough into a round layer and cover our pears with it. We crease the edges well into the depth.
  8. Bake in an oven preheated to 180 degrees for 40 minutes.
  9. Remove the tart from the oven and immediately carefully turn it onto a plate.
  10. Let the pie cool slightly and you can serve it.

Jelly desserts

This type of cold-served sweets includes jellies, jelly, creams, sambukas, and mousses. To prepare this entire classification of gelled sweet dishes, various natural polymer substances are used to create the desired consistency. For example, potato or corn starch is used for jelly. This is the cheapest thickener and begins to crystallize at 64 degrees Celsius. Gelatin is used for mousses and sambucas. This is a tasteless and odorless protein product that dissolves in hot liquid and solidifies as it cools.

Agar is used to make jelly. It is extracted from the ahnfeltia algae of the Pacific Ocean, it has strong gelling properties, swells in cold water and begins to solidify at 39 degrees Celsius.

Guryevskaya porridge

Semolina pudding with nuts and jam.

Ingredients

  • Semolina – 3 tbsp. l.
  • Heavy cream – 750 ml
  • Almonds – 50 g
  • Walnuts – 30 g
  • Sugar – 1 tbsp. l.
  • Berry jam – 2 tbsp. l.
  • Ground cardamom – 1 pinch
  • Cinnamon – 1 pinch
  • Lemon zest – 1 pinch
  • Butter – 1 tbsp. l.

Preparation

  1. Pour boiling water over the almonds and soak for 2-3 minutes. Peel and dry.
  2. We fry all the nuts, then pound them in a mortar or grind them in a blender a couple of times.
  3. Pour the cream into a wide heat-resistant bowl and place in an oven preheated to 180 degrees. In the process, foams will form and when they begin to brown, they need to be collected. In total we need 6-8 foams.
  4. Cook semolina porridge using the remaining cream.
  5. Pour crushed nuts, butter, sugar, spices into the porridge and mix.
  6. In a heat-resistant round form, lay out the layers one by one: semolina porridge in a 1 cm layer, foam, nuts and again in the same order. Add jam to the penultimate layer.
  7. Place the porridge in an oven preheated to 150 degrees for 10 minutes.
  8. Remove the pan and turn the porridge onto a plate. Decorate with jam and nuts.

Prepared natural drinks quench thirst faster than regular water, have tonic properties and are sources of minerals and vitamins.

A classic sweet drink that became traditional in Ancient Rus' is tea. Brewed shoots of dried plants give hot water its taste, color and unique aroma. For normal concentration, tea is poured with boiling water in a ratio of 1 to 25, but everyone determines its strength for themselves. Tea is poured on the table into cups and saucers and served with sweets, honey, jam or other sweets.

Few people can resist the aroma of freshly brewed coffee. To prepare it, use Turks, coffee makers or coffee pots. There are many ways to serve it, some like it with milk, some with ice cream, and others just enjoy strong black coffee.

For lovers of a softer and sweeter taste, cocoa or hot chocolate is offered, which can also be diluted with milk, cream or ice cream.

Hot drinks also include alcoholic drinks, such as punch and mulled wine. Punch is the same tea, only heated with wine. Mulled wine is hot wine with the addition of spices, syrups and citruses, served in special cups. The serving temperature for hot alcoholic drinks is 60-70 degrees Celsius.

Italian pancakes tiramisu

Ingredients

  • Flour – 2 cups
  • Cocoa – 2 tbsp. l.
  • Milk – 1.5 cups
  • Baking powder – 2 tsp.
  • Sour cream – 5 tbsp. l.
  • Butter – 4 tbsp. l.
  • Eggs – 3 pcs.
  • Mascarpone – 125 g
  • Cream 30% – 1 glass
  • Soda – ½ tsp.
  • Black coffee – 4 tbsp. l.
  • Vanillin – 2 tsp.
  • Salt - a pinch

Preparation

  1. First, let's prepare the cream. Whip the cream with sugar and Mascarpone cheese. You should get a lush air mass. Place the cream in the refrigerator.
  2. To prepare pancakes, mix flour, sugar, cocoa, baking powder, soda and salt.
  3. Separately mix sour cream with milk until smooth.
  4. Melt the butter, beat the eggs and add to the milk mixture. Then add coffee and vanilla. Mix.
  5. Add the flour mixture and mix until smooth so that there are no lumps left. If the dough is too liquid, add more flour.
  6. Heat a frying pan and fry pancakes in butter. Place the finished pancakes on a plate and pour cream between each pancake. We also cover the top with cream and sprinkle with cocoa.

Gourmet breakfast is ready!

Sweet fondue

However, hot desserts can be made not from fruits. If you appreciate Swiss cheese fondue, it means that you have already purchased a device for its preparation - a fondue maker. If you don’t have one, any thick-walled vessel will do. Chocolate, black or white, as desired, is melted in it over low heat. It can be flavored with spices: cinnamon, vanilla and even cloves. And then they take tiny buns, dip them in the resulting “sauce” and eat them with great pleasure.

Cold drinks

Soft drinks include milk and fermented milk products served in glasses. Bars and cafes offer milkshakes. To do this, milk is whipped with ice cream and other additives (syrups, fruits, berries) and served in glasses with a straw.

This classification of sweet dishes also includes fruit drinks and lemonades. Fruit drinks are made from various berries; lingonberry and cranberry drinks are especially popular. Lemonade is made from lemons and oranges. To do this, they are peeled, finely chopped and filled with hot water, then boiled and infused for 3 hours. Sugar is added to the strained broth and served chilled.
