Often in small towns and villages, buying an ingredient such as cream turns into a real pursuit race - well, you can’t find it anywhere.

Looking ahead, let’s say right away that we cannot make 100% ice cream from dry cream, since this powder does not even have a hint of milk, all chemicals and synthetic additives.

But from powdered milk at home you can make a simply gorgeous dessert, just like a real creamy ice cream.

  • Let's prepare the dry mixture. Mix powdered milk with vanilla and granulated sugar in a small enamel container.
  • Then fill the resulting composition with milk (350 ml). And in the remaining milk, we first dilute the starch, and then add everything into a common container.
  • Place the saucepan on medium heat and, whisking with a hand whisk, bring the mixture to a boil, and then, without ceasing to stir, cook everything until it reaches the consistency of jelly and remove from the stove.
  • Cool the milk broth to room temperature, then pour it into a container and put it in the freezer.
  • Now every 15-20 minutes, while the ice cream hardens, we need to beat it with a mixer so that it does not turn into an ice cobblestone, but is soft and airy.

After a couple of hours the ice cream will be ready.

Easy Vanilla Ice Cream Recipe

Ice cream with vanilla according to this recipe is simply finger-licking good!

Ingredients:

  • vanillin - 2 teaspoons;
  • cream 20% - glass;
  • milk - 300 ml;
  • a pinch of salt;
  • sugar - half a glass;
  • 2 eggs.

Making homemade vanilla ice cream:

  1. Beat eggs in a bowl. Add sugar and work with a mixer until thick foam. Add salt and stir gently.
  2. Boil the milk. Carefully, little by little, pour it into the egg mixture, which is still whisking. Pour the resulting mass back into the pan where the milk was and put it on the stove again, turning the heat to minimum. You need to cook until the mixture becomes thick enough. This takes approximately 7 to 10 minutes. At the very end of cooking, add cream and vanillin to the pan.
  3. Once the mixture is ready, pour it into molds and cool. It is better to cool the ice cream completely in the refrigerator. And only then move the molds into the freezer.

Ice cream made from 10 percent cream

Studying various recipes for cold dessert with cream, the conclusion suggests itself that for real homemade creamy ice cream, prepared at home and without any auxiliary units, 10% fat cream will not be enough.

However, our step-by-step recipe is ready to challenge this fact and support our arguments with evidence - the most delicious ice cream.

Ingredients

  • Cream 10% fat – ½ l;
  • Granulated sugar – 50 g;
  • Chicken egg yolk – 3 pcs.;


How to make creamy ice cream sundae at home

  1. Let's start our ice cream preparation by separating the egg yolks from the whites. We don't need the whites; you can use them to make the meringue. And beat the yolks with sugar with a mixer until white foam.
  2. Next, pour very cooled cream into the egg mass, mix everything and boil the mixture in a water bath with regular stirring.
  3. After this, the container with the creamy mass must be cooled sharply by placing it in a bowl of ice water. In this case, the mass must be continuously whisked so that it does not curl. There is no need to knead for a long time, literally 5 minutes, until the walls of the container cool down.

All we have to do is put the ice cream base into containers and put it in the freezer for 4 hours. However, during this entire period, every 20-30 minutes you need to remove the ice cream from the freezer and beat it with a mixer to break up the crystallization. This will make the dessert soft and tender.

Homemade Popsicle Recipe

You can make apple ice cream.

For cold apple sweetness you need:

  • 1 medium apple;
  • half a teaspoon of gelatin;
  • half a glass of water;
  • 4 teaspoons granulated sugar;
  • lemon juice - added to taste.

Making homemade popsicles:

  1. First, soak the gelatin for 30 minutes in 2 tablespoons of chilled boiled water.
  2. Dissolve sugar in boiling water. Mix the swollen gelatin with syrup and cool.
  3. Prepare applesauce.
  4. Mix the cooled syrup with gelatin and puree, add a little lemon juice.

Ingredients

  • Cream 20% - 0.35 l;
  • Milk 6% - 150 ml;
  • Powdered sugar – 150 g;
  • Vanilla – 5 g;
  • Cocoa powder – 2 tbsp;

How to make creamy ice cream at home

  1. Pour chilled cream, cold milk into a deep bowl, add powdered sugar, cocoa and vanilla. Mix all components at the lowest speed of the mixer for literally 1-2 minutes.
  2. Now pour the prepared ice cream mixture into the container of the ice cream maker, insert the blades and set the operation timer for 50 minutes. This technique for preparing ice cream is acceptable for a fully automated ice cream maker, which produces cold on its own.
  3. If you have a simpler model, in which the cold inside the unit is kept by the ice cream maker’s bucket, which should first be kept in the freezer for several hours, then the ice cream composition should be poured while the ice cream maker’s mixer is running. This is necessary so that the cream mixture in the cold bowl does not freeze before the mixer is started.

40-50 minutes is enough to prepare thick ice cream, which should then be divided into containers and placed in the freezer. Or eat it right away.

Delicious ice cream in 5 minutes

A chilled dessert that tastes indistinguishable from expensive ice cream from famous brands can be prepared very quickly at home with just two ingredients (not counting the freezing time).

We will need:

  • whole condensed milk – 150-250 grams,
  • whipping cream (33%) – 400 ml,
  • vanilla sugar – 5 grams.



The technology for preparing the delicacy is as simple as two and comes down to thoroughly whipping the cream, followed by adding condensed milk to it. The dairy product must first be cooled. Then, at maximum speed, we bring the substance to the desired consistency. The cream should form a dense mass that holds its shape well and does not settle.

Turn the mixer to minimum speed, add condensed milk with vanilla to the dessert.

The ingredients should mix well together, without separating the water. We adjust the sweetness of our ice cream to your taste by adding the right amount of condensed milk.

Transfer the mixture into a plastic container.

Cover with a lid and place in the freezer until completely frozen (about 5 hours). This is for the most impatient. Or you can leave it overnight and enjoy a refreshing ice cream in the morning.

To complete the taste, you can add chocolate chips and crushed nuts to homemade ice cream.

Creamy ice cream in an ice cream maker according to GOST

According to the state standard, the highest quality ice cream contains heavy cream, whole and powdered milk, as well as sugar and non-vegetable fats.

With all this, the mass fraction of fat in the ice cream should be at least 10%. And this only says one thing: for real ice cream you need to take cream with at least 35% fat content and only natural products. Our recipe is based on this postulate.

Ingredients

  • Heavy cream (35-40%) – ½ l;
  • Cow's whole milk (3.2-6%) – 0.6 l;
  • Whole milk powder – 70 g;
  • Granulated sugar – 1 tbsp;
  • Sweet vanilla – 10 g;
  • Corn starch - 1 tbsp. with a slide;

How to make ice cream

  1. Mix powdered milk, granulated sugar and vanilla in a metal container, pour in half a liter of milk and put on low heat.
  2. Constantly stirring the mixture, bring it to a boil and pour in the remaining 100 ml of milk with the starch diluted in it. We continue to cook the mixture until it reaches the consistency of jelly, and then turn it off.
  3. When the brew has cooled down a little, pass it through a strainer and put it in the refrigerator for 1 hour, after covering the container with an airtight lid or vacuum film.
  4. After an hour, you can start whipping the cream. Before this, the cream itself must be kept in the refrigerator for at least an hour so that it is very cold. The cream should be whipped until it reaches a stable fluffy mass, but the main thing here is not to overdo it so that the protein mass does not become butter.
  5. Now you can mix the cream with the chilled milk jelly and immediately put the resulting mixture into the ice cream maker.
  6. Set the mixer operation timer for half an hour and after the specified time has elapsed, put the finished ice cream into cups, seal it tightly and put it in the freezer to harden for a couple of hours.

You can make ice cream from cream at home quite simply and quickly, especially if you have an ice cream maker at hand. And if you want to diversify the taste of a traditional creamy ice cream, then you can add any additional ingredients to the ice cream at the mixing stage, for example, plum jam, fresh raspberries, chocolate or your other favorite syrup. There are really a lot of original options, it all depends on your gastronomic preferences and culinary imagination.

Types of ice cream

Let's go back to our time. Modern delicacies can be classified according to composition, taste, consistency. For example, ice cream is divided according to its composition as follows:

  • A delicacy based on animal fat (sealing, milk and butter).
  • Ice cream made from vegetable fat (coke or palm oil).
  • Fruit ice. A solid dessert made from juice, puree, yogurt, etc.
  • Sorbet or sorbet. Soft ice cream. Cream, fats and eggs are very rarely added to the composition. Sometimes the recipe contains weak alcohol. Prepared from fruit and berry juices and purees.

You can use fruit juice, fruit pieces or pulp puree for it.

Ingredients:

  • Orange juice – 50 ml
  • Cherry juice – 50 ml
  • Peach puree – 50 ml
  • Plastic cups
  • Skewers or toothpicks
  • foil

Puree the peach in a blender. You can buy ready-made ones in the baby food department. We will make ice in stages.

We need each layer to harden. This way we will get very beautiful layers and feel the taste of each of the fillers.

Pour some orange juice into glasses and put them in the freezer for 1.5 hours.

Place the remaining sauce and puree in the refrigerator to cool.

Then we take the molds out of the freezer and add another type of juice on top.

Take the foil and cut three pieces from it. Which will be larger than the circumference of our molds. Insert a toothpick into it in the center and cover the cups. Let it freeze again for 1.5 hours.

Then we take it out, remove the foil and spread the peach puree in the outermost layer. Remove from freezing again.

Diet banana dessert without sugar

We replace sugar with honey, but you can completely remove all additional sweetness from the composition. Leave only two ingredients.

Ingredients:

  • 1 spoon of honey
  • 2 very ripe bananas
  • 1 tbsp. milk

Peel the banana and cut it into pieces. Cover with cling film and freeze them. This will make the banana easier to chop and will not turn black when exposed to air.

Place the pieces in a blender and add a spoonful of honey. It can be replaced with dates.

Beat the ingredients into a homogeneous mass.

Quick yoghurt treat

Ingredients:

  • take a jar of yogurt
  • stick or disposable spoon

In a closed jar of yogurt. Cut a hole in the top foil.

In which we will place our spoon.

And put it away to freeze. After three hours, we take out the jars and place them in warm water so that the treat comes out quickly.

And remove the top label.

Recipe with sour cream and condensed milk

Sour cream is much fattier and denser than milk, so it contains fewer water molecules. This means that when frozen it will not produce ice crystals. The taste of this ice cream is much more delicate and richer.

Ingredients:

  • 400 g fat sour cream from 20%
  • ½ can of condensed milk
  • Any additive (frozen berries, grated chocolate, chopped nuts or cocoa)

Place sour cream and condensed milk in a common bowl.

We grate or cut the chocolate, which we pour into the liquid ingredients. Mix the whole mass so that the chips are evenly distributed throughout the mass.

And pour it into molds or plastic cups.
