Real creamy ice cream
For cream ice cream you need:
- cream 35-38% fat - 600 ml;
- eggs - 3 pcs.;
- sugar - 100 g;
- vanilla on the tip of a knife.
How to cook:
- Separate the yolks from the whites; the latter can be used for a whitening mask.
- Beat the whites with sugar. It is advisable to use a fine-grained product or grind regular granulated sugar into powder.
- Separate 200 ml from the taken amount of cream and heat to 80 - 85 degrees, add vanilla.
- Remove the cream from the heat and in a thin stream, without ceasing to stir, pour in the yolks with sugar.
- Heat the cream and yolks again to + 85, stirring the mixture without ceasing.
- Cool the cream mixture on the counter to room temperature, and then refrigerate for at least 1 hour.
- Beat the remaining portion of the cream until fluffy; this is best done with an electric mixer. The operating speed of the device is average.
- Transfer the mixture from the refrigerator to the whipped cream.
- Beat the mixture with a mixer for 2-3 minutes.
- Place the future ice cream in a suitable container.
- Keep it in the refrigerator for about half an hour. Then gently mix the contents from the walls to the middle.
- Repeat the operation 2-3 more times every half hour.
- After this, leave the dessert until it hardens.
