Charlotte with cherries: simple recipes for berry pie

This pie is the most popular in Russia. According to the original recipe, it is prepared with apples, which are filled with dough. Over time, instead of apples, they began to add various berries and pieces of fruit.

The composition of the dough is also prepared in different ways - biscuit with eggs, butter with milk and butter, kefir and even cottage cheese.

For dessert you can use both fresh and frozen berries. Therefore, this pie is relevant both in winter and summer.

Charlotte with cherries on butter dough

Delicious berry pie with polka dot design made with butter and milk. The composition contains ground almonds, which gives a special taste and light graininess. You can omit it and replace it with wheat flour.

Select large and fairly hard berries, then they will look beautiful on top of the dessert. If you want to add a slight sourness, use tart cherries.

Ingredients (23 cm diameter mold):

  • 113 g butter
  • 130 g flour
  • 55 grams of ground almonds (can be replaced with 195 grams of regular almonds)
  • 2 large eggs
  • 150 g sugar
  • 80 ml milk
  • 350 g fresh pitted cherries
  • 1.5 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp vanilla extract

1. Turn on the oven at 200°. Grease the bottom and sides of the pan and line the bottom with parchment paper.

2. Melt the butter in a saucepan and cool to room temperature.

3. Wash and dry the cherries. Take about 14 berries, cut them in half, and place them cut side down on a paper towel. We will place them on top of the charlotte during baking. Cut the remaining berries into quarters.

4. In a separate bowl, mix flour, baking powder and salt.

5. With a mixer at high speed, beat the eggs and sugar until thick white foam (about 3-5 minutes). Finally add a teaspoon of vanilla extract.

6. Pour the whipped mixture into a deep container. While stirring the dough with a whisk, add melted butter and milk. Then add flour and stir thoroughly so that there are no lumps.

7. Stir the cherry quarters evenly into the dough. Then pour it into the prepared pan, smoothing the top with a spatula. Bake in the oven for 15 minutes.

8. After the specified time, take out the charlotte, quickly arrange the halves of the berries on top - now they will not fall down, but will lie beautifully on the surface. Return the pie to the oven for another 15-20 minutes. Check readiness with a toothpick; if it is clean and dry, the dessert is ready.

Cool without removing the mold. Then transfer the baked goods to a plate. Top off the dessert with a dollop of whipped cream, custard or sour cream.

A simple recipe with kefir

If there is a glass of unused kefir left in the refrigerator, then you can put it to work and prepare a sponge cake for cherry charlotte on a fermented milk basis.

Ingredients:

  • 300 g pitted cherries;
  • 2 eggs;
  • 400 g sugar;
  • 200 ml kefir of any fat content (biokefir is also suitable);
  • 350 g of premium flour;
  • 50 g butter, vegetable oil or margarine;
  • a couple of drops of table vinegar;
  • a pinch of baking soda;
  • a packet of vanilla sugar.

Cooking method:

  1. Pour sugar into a mixing container, break the eggs there and beat the mixture with a mixer.
  2. Pour kefir into the resulting foamy composition and gradually sift the specified amount of flour, without stopping the beating process. Make the mixture homogeneous.
  3. Quench the baking soda with vinegar and add it to the dough to make it fluffy. If desired, you can use the equivalent of baking soda - baking powder.
  4. Knead the charlotte base and let it stand for 15 minutes in a warm place.
  5. Grease the bottom and sides of a heat-resistant form with oil and sprinkle with semolina or flour. Turn over and shake out any remaining powder.
  6. Pour half of the dough into the prepared baking dish. Then lay out a layer of cherries, which is filled with the rest of the batch.
  7. Place the charlotte in the oven and cook at 180 degrees and 25 minutes.
  8. Allow the finished product to stand in the pan for a while, then place on a wire rack to cool completely.
  9. Once the cake has cooled to room temperature, decorate it with powdered sugar or grated chocolate. The cherry charlotte is ready.

Recipe for charlotte with cherries and apples in the oven

The combination of these two fruits makes the pie very juicy and appetizing. In combination with biscuit dough, the dessert turns out light and tender. This pie can be made with other berries and fruits, and if fresh ones are not available, frozen ones will do. A very good option is plums and apricots. It will take no more than 1 hour to prepare charlotte, but the pleasure will last for the whole day.

  • 7 eggs
  • 7 tbsp. flour
  • 7 tbsp. Sahara
  • 0.5 tsp vanilla sugar
  • 3 apples
  • 1 cup cherries

1. Separate the yolks, mix them with regular and vanilla sugar. Beat with a mixer until smooth.

2. Add sifted flour little by little and fold it into the egg mixture with a spatula. Rub the lumps thoroughly.

3. Beat the whites into a fluffy white foam. Add them into the dough in parts, gently mixing the mixture.

4. Core the apples and cut into small slices. Remove the pits from the cherries. Place the prepared fruits on the bottom of a baking dish lined with parchment paper.

5. Pour the dough on top, spreading it evenly with a spatula. It should completely cover the fruit. Place in an oven preheated to 170° for 25 minutes.

6. Turn the finished pie onto a plate, first separating the sides from the pan with a knife.

Sprinkle the top generously with powdered sugar, or drizzle with honey. Garnish with a sprig of mint.

Cooking secrets

Baking will turn out delicious if you follow some tips.

  • Add some starch. The baked goods will be more porous.
  • Reduce the amount of sugar in the dough. In the event that the product is poorly baked.
  • Place water under the pan. To prevent the pie from burning. If this does happen, clean the dark area with a grater.
  • Beat the eggs well. Charlotte will be tall. You can beat the whites separately and carefully fold them into the dough.
  • Do not open the oven during cooking. Otherwise the pie will settle.

The dough for this pie is biscuit, it is easy to prepare and always bakes well. The juicy berries keep it moist and flavorful. You can take both fresh and frozen. To prevent them from releasing a lot of juice when defrosting, they are rolled in starch.

  • 1.5 tbsp. Sahara
  • 5 eggs
  • 1 tbsp. powdered sugar
  • 1 tbsp. starch
  • 500 g frozen cherries (or fresh)
  • 1 tsp vanilla sugar
  • 1 tsp baking powder
  • 1 knob butter (for greasing)

1. Place baking paper on the bottom of the pan and generously grease the sides and bottom with butter. Then lightly flour the entire inside surface.

2. To prevent the cherries from leaking juice, place them in a bowl, frozen, and mix with a spoonful of starch.

3. Add the eggs into the mixer bowl and beat at high speed until smooth. Then add sugar (regular and vanilla), continue beating for 5 minutes until fluffy.

4. Sift flour into the resulting mixture and add baking powder. Mix with a mixer until a homogeneous mass without lumps is obtained.

5. Place cherries on the bottom of the mold and fill with dough. Shake lightly to coat the berries evenly. Bake in the oven at 200° for 45-50 minutes. Be sure to check readiness with a wooden skewer.

Cool the finished pie slightly, then turn it over onto a plate so that the berries are on top. Sprinkle with powdered sugar.

The pie prepared in a slow cooker turns out tall and fluffy, and is well baked inside. Its taste is moderately sweet, with a pleasant sourness. You will need a minimum of ingredients and time to knead.

Required Products:

  • 4 large eggs
  • 120 g flour
  • 400 g cherries
  • 140 g granulated sugar
  • 1 tsp baking powder
  • 2 tbsp. refined sunflower oil

1. Place sugar and eggs in a dry and clean container. Beat with a mixer at high speed for 5-6 minutes. The mixture should turn white and double in volume.

2. Pour vegetable oil into the resulting mass, sift the flour and add baking powder. Gently mix everything with a spatula, moving in one direction from the edge to the center. Take your time to prevent the beaten eggs from settling.

3. Peel the cherries and add to the dough.

4. Grease the multicooker bowl generously with a piece of butter. Cover the bottom with baking paper. Pour the dough, cover with a lid and set the “Multi-cook” mode, temperature 125°, time 1 hour. Then click the Start button.

The dough for this pie is prepared using cottage cheese and butter. Instead of cherries, you can use any other berries or fruits - strawberries, apricots, plums. The baked goods are tasty and juicy, with a delicate creamy taste.

  • 100 g butter
  • 2 eggs
  • 200 g cottage cheese
  • 400 g cherries
  • 200 g flour
  • 1 tsp baking powder
  • 180 g sugar

1. Grind soft butter at room temperature with sugar using a mixer until crumbly.

2. Beat eggs, add cottage cheese and baking powder. Mix everything until smooth.

3. Add sifted flour, stir with a mixer or spatula. You should get a viscous mass.

  2. It is best to cook charlotte in the oven, so it will turn out airy. A multicooker is also used if there is simply no other option. In this case, the multicooker bowl must be lined with parchment paper. If you do not do this, you will not be able to remove the cake carefully.
  3. Charlotte with cherries can be prepared at any time of the year. For example, you can freeze cherries or strawberries for the winter. The pie will turn out no less tasty.
