Coffee beans can be used not only to prepare a drink, but also as an additional ingredient for baking. The powder has a pleasant smell, gives an unusual taste, and can be used to create contrasts. There are several coffee cake recipes. The dough can be baked both in the oven and in a slow cooker.

Coffee cake with nuts

Coffee nut pie is best made with shortcrust pastry.
Ingredients:

  • You will need 2 heaped cups of flour;
  • Egg yolks – 3 pieces;
  • Take 1 glass of sugar;
  • We take half a large pack of margarine;
  • Baking soda - on the tip of a knife;
  • Coffee will do 3 tsp. for 50 ml of water;
  • Shelled walnuts – 1 cup.

Cooking method:

  1. A Lenten dough recipe involves replacing eggs and margarine with vegetable oil and water.
  2. Mix all the dry products, grate the margarine.
  3. Add eggs and diluted coffee.
  4. Chop the nuts and add three-quarters of the mass to the dough.
  5. Place in the pan and bake.
  6. To understand when to remove the cake from the oven, pierce it and see if the splinter is dry.
  7. If you cook not in the oven, but in a slow cooker, you need to check readiness in the same way.
  8. Crumble the remaining nuts on top, you can also sprinkle with powdered sugar or pour honey in a thin stream.

Description

The most popular and simplest pie recipe is Italian. It's called "la torta all'acqua", which translates to "water cake". Previously, even the poorest Italian family could use this recipe, since the ingredients contain no eggs, no milk, no cream. All you need is flour, coffee, sunflower oil and yeast. You also can't do without sugar.

In addition to availability, the low calorie content of the dish stands out. The coffee version of the cake makes you feel energetic, which is why it is eaten in the morning. The recipe is simple and does not take as much time as baking other products.

In German cuisine, coffee cake is called streusel. This is a traditional German dish. It is a pie with shortcrust pastry crumbs and a strong coffee taste and aroma.

“Monastery” coffee cake in a slow cooker

Required ingredients:

  • 300 ml water;
  • walnut halves - 1 cup;
  • 300 g of sifted wheat flour;
  • 1 teaspoon of soda (do not extinguish);
  • 1 glass each of honey and brown sugar;
  • a pinch of salt;
  • 2 tbsp. spoons of natural coffee;
  • a little powdered sugar (as decoration).

Cooking instructions

Step #1. We pour coffee into the Turk. Pour in 300 ml of water. We are waiting for the moment of boiling. Immediately turn off the fire. No need to boil. Leave the coffee for 10 minutes to steep. Then we filter it.

Step #2. Place honey and sugar in a bowl. Add coffee. Stir the ingredients. The main thing is that the honey and sugar crystals dissolve.

Step #3. We not only grease the bottom of the bowl with oil, but also sprinkle it with flour.

Step #4. Add halves of nuts, soda and flour to the honey-coffee mixture. Salt. Mix. Carefully pour the resulting mass into the bowl. Start the “Baking” mode. Set the timer for 60 minutes. If you think that coffee cake can be served immediately, you are mistaken. Take it out of the multicooker, place it on a flat plate and leave for 20 minutes. Then decorate with powdered sugar. Now we invite our household members to drink tea.

Coffee cake with chocolate

Ingredients:

  • Flour – 2.5 tbsp;
  • Cocoa powder – 3 tbsp. l.;
  • Coffee – 1 glass;
  • You will need 3 eggs;
  • Take 100 g margarine;
  • Baking powder – 1 tbsp. l.;
  • Salts - half a teaspoon;
  • Sugar – 1 glass;
  • Chocolate topping.

Cooking method:

  1. The amount of sugar can be adjusted depending on how sweet you like your baked goods.
  2. Mix dry ingredients: flour, cocoa, salt, baking powder.
  3. Grind the sugar with margarine and eggs.
  4. Mix everything with coffee and place in the mold.
  5. Place in the oven to bake.
  6. Sprinkle the finished cake generously with topping or cover with chocolate glaze.

Lenten chocolate cherry cake

This cake can be safely prepared for the holiday table. The top of the dessert is covered with a special lean glaze, and it can be decorated with candied fruits and nuts.

You will need:

Dough:

0.5 cups of water, 1 cup of flour, 2-3 tbsp. l. cocoa, 3 tbsp. l. odorless vegetable oil, 180 g sugar, a pinch of salt and 1 tsp. baking powder.

Cherry cream:

1 cup rich cherry compote, 2 tbsp. l. semolina, 5-6 tbsp. l. Sahara.

Glaze:

1.5 tbsp. l. sugar, water, vegetable oil and cocoa, 50 g of any nuts, 50 g of candied fruits. Preparation:

1. Place the dough components specified in the recipe in a deep container and beat with a mixer. Pour the mixture into a mold and bake in the oven. 2. Add sugar and semolina to boiling compote or juice; cook until thickened, then cool and beat with a mixer. 3. Cut the baked and cooled chocolate cake into two parts. Place the first layer on a plate, spread the cream, cover with the second. Pour glaze over, sprinkle with nuts and candied fruits. 4. For the glaze, mix water with sugar, cocoa and butter, bring to a boil, cool until warm.

Kefir coffee cake

Product set:

  • two eggs;
  • 1 cup each of flour and sugar;
  • 3 tsp instant coffee (any brand);
  • kefir – half a glass;
  • baking powder - 1 sachet (can be replaced with soda, slaked with lemon juice);
  • package of butter (per 100 g).

Practical part:

  1. We lay out on the table everything from which we will prepare the coffee cake. What are the next steps? Pour coffee into a bowl. Fill with the specified amount of kefir.
  2. In a separate bowl, beat eggs and sugar. Here we add the kefir-coffee mixture, as well as a piece of butter, flour with baking powder. We take a spoon. Mix everything thoroughly.
  3. Preheat the oven by setting the temperature to 200 °C. We take out the baking dish. We coat its bottom with oil. Now transfer the dough into the mold. Place in the oven. In 25-30 minutes the pie will be ready. It should be served warm. But before that you need to decorate the baked goods. Make cream using 1 tbsp. spoon of sour cream and sugar. Plus add 1 teaspoon of coffee. It will give the cake a soft chocolate color. There are two options for using the cream. You can pour it on top of the pie or grease the cakes cut in the middle. Ingredients

  • 0.5 cups (100 ml) kefir;
  • 3 teaspoons instant coffee;
  • 2 medium eggs;
  • 1 cup (180-200 g) sugar;
  • 100 g butter;
  • 1 glass of flour (150 g, this is a glass of 250 ml in volume);
  • A packet of baking powder (I took 15 g, I think 12 g will be enough);
  • A pinch of salt.

For the cream, if you like:

  • 2 tablespoons sour cream;
  • 2 tablespoons sugar;
  • 2 teaspoons coffee or chicory.

For those who can’t have caffeine, I think this pie can be baked with the addition of chicory. This healthy drink has the color, taste, and aroma almost like coffee!

How to bake:

Take the butter out of the refrigerator in advance to soften. Or you can warm it up a little in the microwave, cutting it into pieces (otherwise it will start to melt at the edges and remain cold in the middle). Only for a short time - 20 seconds, and at the lowest power.

Cover the bottom of the mold with a circle of parchment and lightly grease it with odorless vegetable oil. Turn on the oven to warm up to 180C.

Pour coffee into kefir and stir.

The grains dissolve, and amazingly beautiful patterns are obtained, reminiscent of either a plexus of intricate patterns, or the spiral swirls of galaxies.

And when you stir the coffee until the grains are completely dissolved, the kefir will become a stunningly beautiful coffee color! And what it smells like!

Set the coffee kefir aside for now and beat the eggs and sugar.

We use a mixer; 1-2 minutes is enough to get a fluffy mass.

Pour kefir into the whipped mass and mix.

Now add soft butter and beat a little more with a mixer until smooth.

Add flour mixed with baking powder and salt.

And mix. The result is a fluffy, rather thick dough that flows slowly, as if reluctantly. If you stir, the marks from the spoon last a long time, like this:

Place the dough in the mold and level it out.

Place in the oven and bake on the middle floor at 180C for about 30 minutes. Check your oven: you may need 25 or 35 - you need to try the pie with a skewer. If it is dry and the pie has risen and turned golden brown, it is ready.

After cooling the cake slightly, open the pan and transfer it to a plate.

We cut off a piece and admire it, inhaling the wonderful aroma of coffee and fresh baked goods!

And it will be even tastier if you make a cake out of the pie. Prepare the cream by mixing sour cream with sugar and coffee. And grease the top of the pie. You can cut it and layer it, but I didn’t because the cake was very tender and could crumble when cut. And next time we will make a cake based on this recipe :)

First of all, we need to pour freshly brewed coffee into a saucepan and then put butter and sugar into it. Melt it all over moderate heat. Before removing the pan from the heat, do not forget to add grated or finely broken chocolate. Stir everything until dissolved. The next step is to add cocoa powder, flour, baking powder, and a pinch of salt into the chocolate mass. All ingredients must be mixed until smooth. Then add the egg and mix thoroughly again.

Prepare the baking dish as follows. We line the bottom of the mold with paper, and only then pour half of the resulting dough into it. Place cherries on top and then pour in the other half of the dough. The pie must be baked at 190 degrees for approximately 30-40 minutes. You can check the readiness of the pie using a wooden stick.

  • Sugar - 80 grams.

  • Wheat flour - 1 teaspoon.

Mix egg, sugar, salt and cinnamon in a deep bowl. Then add melted butter and mayonnaise to this bowl. Brew coffee in 0.25 cup of boiling water, give it time to cool and pour the cooled coffee into the dough, mix. Pour the dough into a mold that needs to be greased; the diameter of the mold should be 18 centimeters. Put it in the oven. You can check the readiness of the pie using a dry match.

While the pie is cooking, you can start preparing the sauce for it. Mix all the necessary ingredients, except sour cream, in a saucepan and set to heat. The mass should be a little thick. The sauce must be cooled, after which you can add sour cream to it, then mix it thoroughly.

When the pie is ready, all we have to do is pour the sauce over it and let it flow freely over the pie. This dish will need to be refrigerated for half an hour to give the sauce time to harden.

Basic Ingredients

The basic ingredients used are:

The list of ingredients includes:

  • 0.5 tbsp. kefir;
  • 1 tbsp. flour;
  • 100 g butter;
  • 3 tsp. instant coffee;
  • 2 chicken eggs;
  • 1 tbsp. Sahara;
  • 10 g baking powder.

Eggs, sugar and coffee are immediately added to kefir. Mix everything using a mixer. If desired, you can first beat the eggs with sugar, then add to kefir and coffee to make the pie more fluffy. Softened butter, baking powder and flour are added to the mixture.

For the cream you will additionally need 2 tbsp. l. sour cream and sugar, as well as 2 tsp. chicory. It is not advisable to replace the latter with coffee powder, since it dissolves less well.

When preparing the pie, proceed as follows:

  1. Remove the butter from the refrigerator to soften it. If you have little time for preparation, you can melt the creamy mixture in the microwave. To do this, cut the butter into pieces, set the power to minimum and melt it for 15-20 seconds.
  2. Prepare the form in advance. The bottom is covered with parchment paper and greased with vegetable oil. The latter should be odorless. Allow the oven to warm up.
  3. Coffee is poured into kefir and mixed thoroughly.
  4. In a separate container, beat whole eggs with sugar. The mixer speed is gradually increased to maximum. The mass should become fluffy.
  5. Carefully pour kefir into the beaten eggs. The ingredients are carefully mixed so that the mass does not settle.
  6. Oil is gradually added to the dough piece. At this stage, it is better to switch the mixer speed to minimum.
  7. The flour is sifted, mixed with salt and baking powder. The mass should be plump, without lumps. It is poured into the egg-kefir mixture and everything is mixed.
  8. The dough is poured into the mold. The workpiece is leveled. Place the mold in the oven for half an hour.
  9. Sour cream is mixed with sugar and chicory, then put in the refrigerator until the cream becomes thick. They cover the already cooled pie.

Coffee cake with cinnamon cream sauce

If you follow the recipe, you can make a sweet pie with a strong coffee-chocolate aroma with hints of cinnamon. To prepare it take:

  • 200 ml kefir;
  • 100 g sour cream;
  • 3 chicken eggs;
  • 100 g butter;
  • 200 g flour;
  • 200 g sugar;
  • 1 tsp. instant coffee;
  • 0.5 tsp. soda;
  • 0.5 tsp. baking powder;
  • 1 tbsp. l. powdered sugar;
  • 1 tbsp. l. cocoa powder;
  • 1 tsp. cinnamon;
  • chocolate chips to taste.

Beat the eggs with sugar, then carefully pour in the kefir and melted butter. Add baking powder and soda, then coffee and cocoa. Carefully add flour. The dough is brought to a homogeneous state. It is poured into a mold greased with vegetable oil. The workpiece is baked in the oven for 30-35 minutes.

In a separate container, mix sour cream, powdered sugar and cinnamon. Spread the cream over the cooled pie and decorate it with chocolate chips if desired.

Orange coffee cake with honey

The combination of orange and coffee causes a surge of strength and vigor. Honey complements the taste and makes it sweet. Due to the reduction in the amount of sugar, such a pie is considered healthier, although it should not be abused.

The dish is prepared from:

  • 1 orange;
  • 250 g flour;
  • 5 chicken eggs;
  • 1 tbsp. l. honey;
  • 120 g butter;
  • 100 g powdered sugar;
  • 1 tbsp. l. natural coffee;
  • 1 tsp. baking powder;
  • pinches of salt.

The yolks are separated from the whites. The latter are beaten with salt until a dense foam forms. The butter is melted and mixed with powdered sugar. Pour coffee into the whites, add sweet mass and flour, carefully bring to homogeneity. If desired, the orange is peeled and cut into semicircular thin slices. The baking dish is greased with odorless vegetable oil, poured with honey and a layer of fruit is placed on the bottom. The dough is placed on top. The workpiece is baked for 30-40 minutes, then the mold is cooled slightly, taken out and turned over.

Chocolate-coffee cake

Chocolate-coffee pie with nuts is called “Squirrel”. To prepare it you will need:

  • 200 g sour cream;
  • 200 g sugar;
  • 3 chicken eggs;
  • 1.5 tbsp. flour;
  • 1 tbsp. l. baking powder;
  • 2 tbsp. l. instant coffee;
  • 2 tbsp. l. cocoa powder;
  • 50 g walnuts;
  • 50 g hazelnuts;
  • 50 g almonds.

Beat eggs with sugar, add sour cream to the mixture and beat again. Add cocoa and coffee, then baking powder and flour. The ingredients are mixed carefully so as not to deprive the mass of splendor. The consistency of the dough should resemble thick sour cream. Nuts are crushed in a blender. The particles must be large. They are added to the main mass and carefully mixed with a spatula. The mold is greased with vegetable oil, the dough is placed in it and baked until ready.

Coffee apple pie

The apple pie turns out fluffy and juicy. Cinnamon lovers will love it.

The list of ingredients includes:

  • 300 ml kefir;
  • 100 g butter;
  • 2 tbsp. flour;
  • 2 chicken eggs;
  • 220 g sugar;
  • 2 tbsp. l. instant coffee;
  • 1.5 tsp. baking powder;
  • 1 tsp. cinnamon;
  • 2 apples;
  • powdered sugar to taste.

Eggs are mixed with 120 g of sugar and kefir. Melted butter is poured into the mixture. After mixing, add flour and baking powder. Making dough. The remaining sugar is mixed with coffee and cinnamon. Apples are cut into slices. Place half of the dough in the pan, cover with fruit and sprinkle with the sugar mixture. The mold is covered with the remaining mass. The pie is baked for 35-40 minutes.
