Fish is easily absorbed by the body and does not cause a feeling of heaviness in the stomach after consumption. Nutritionists around the world tirelessly advise eating as much fish as possible.

It is believed that boiled, baked, steamed fish is very healthy. It is true, but from this entire list I prefer baked fish. I also like to bake it with vegetables, since it also prepares a side dish at the same time. To keep the fish juicy, I like to bake it in foil.

I have already given several recipes for baked fish, including pink salmon with vegetables, carp in sour cream, and trout in sauce. Today I offer you a new recipe. We will bake it in foil with vegetables and cheese. Absolutely any vegetables can be used. It's summer, the season for vegetables, so I'll be using a lot of them.

Fish baked with vegetables and cheese in foil

We will need (for 3 servings):

  • fish -3 pcs
  • onion - 1 pc.
  • tomatoes - 6 pcs
  • bell pepper - 3 pcs
  • eggplants -1-2 pcs
  • potatoes - 6 pcs (small)
  • cucumber - 1 piece
  • lemon - 1 pc.
  • hard cheese - 150 gr
  • tarragon, basil, mint - 3 sprigs each
  • ginger root - 50 g
  • spices - for fish
  • salt, ground black pepper
  • vegetable oil -2-3 tablespoons

As you can see, there are a lot of ingredients. It will turn out very tasty! With such a set it simply cannot be any other way! It is advisable to use fresh, young vegetables. Let me boast, eggplants, peppers, tomatoes, cucumbers, herbs - all from my own garden! So it will be even tastier!

Preparation:

  1. Most likely, everyone already knows well how to choose the right fish. The best thing is when it is fresh, just caught. Then no one even doubts its freshness. But if you purchase frozen fish, then you need to inspect it very carefully.
  2. Immediately pay attention to the gills and eyes. The gills should be red, and the eyes should not be cloudy or of an indeterminate color. If you see a different picture, it means the fish was caught a long time ago, and it is better to refuse this one.
  3. The second thing you need to pay attention to is the smell. Fish should smell like fish and nothing else.
  4. When you buy and bring the fish home, you need to clean it. If the fish is frozen, defrost it at room temperature. Then clean the scales, trim the fins, remove the entrails, gills and eyes.
  5. Remove the entrails very carefully, try not to damage them, otherwise the fish may turn out bitter.
  6. When everything is cleaned, rinse thoroughly with water. Then dry with paper towels.
  7. We make a mix of spices. If you have ready-made spices for fish, you can use them. I make a mix in which I put a pinch of ground cumin, coriander, rosemary, and add a pinch of paprika, turmeric and thyme.
  8. Sprinkle the fish with salt and pepper and rub thoroughly inside and out. Sprinkle with spices and rub in again. Leave to marinate for one to three hours. The longer it sits, the tastier it will be.
  9. When the allotted time has passed, we will begin preparing the vegetables.
  10. We cut all the vegetables as desired. The only thing to remember is that potatoes will take the longest to cook. Therefore, we cut it thinner. I cut it into 0.5 cm thick slices.
  11. Take two sheets of foil, or six at once. Or rather, decide for yourself here. You can make the required number of servings at once, or do them one at a time, in order.
  12. When you do everything at once, you definitely won’t forget to put anything in. But this requires a lot of space. Therefore, if space on the table allows, make 3 servings at once. If not, then do one at a time.
  13. I will describe it in one serving. Grease a baking sheet with vegetable oil. Take two sheets of foil and place them on a baking sheet, slightly overlapping. It is necessary to calculate them in such a way that fish and vegetables fit in them, and so that all this is also wrapped in a package.
  14. Place foil on a baking sheet, shiny side up. It reflects the heat received much better and does not stick to the dish. In general, foil protects products from loss of vitamins and beneficial microelements.
  15. We also grease the foil with vegetable oil and lay out the sliced ​​onion as the first layer.
  16. Place sprigs of basil, mint and tarragon on it. The rough stems of the greens can be removed, leaving only the tender branches. Place four slices of chopped ginger root on top. When the dish is cooked, the ginger can be removed, but the onion will become very tasty from its juice and aroma. And the smell will spread to both fish and vegetables.
  17. Place the fish on top. Also put the same greens inside. Then, after cooking, we will remove it. By that time, it will give all its taste and aroma to the fish, and will no longer be needed.
  18. Let's start laying out the vegetables. We put the potatoes in first. It takes the longest to cook, so the juices released from other vegetables will help it cook faster. Place the eggplants nearby.
  19. Place medium-sized tomatoes cut in half on top of the potatoes and eggplants. Then bell pepper. Don't forget about the cucumber. Cucumber has recently proven itself to be an excellent combination with chicken breast. So I decided to include it in the dish again, this time with fish.
  20. Sprinkle vegetables with salt and pepper.
  21. Place lemon cut into slices on the fish.
  22. It seems like nothing was forgotten. Wrap the fish and vegetables in foil. Try to wrap it in such a way that the foil does not open when heated. We need to create a closed space so that the steam does not escape and the vegetables release more juice.
  23. We do the same procedure with other portions. Place the bundles on a baking sheet. The packages turned out to be large; only two fit in the baking tray. Therefore, I simply place the third portion on the wire rack. The package is sealed and nothing will leak out of it.
  24. Place the baking sheet and wire rack in an oven preheated to 180 degrees. Bake for 25 minutes.
  25. Meanwhile, grate hard cheese on a coarse grater.
  26. After 25 minutes, take out the baking sheet, open the foil slightly, and try to pierce the potatoes with a knife. My potatoes are ready, so you can open the foil completely and sprinkle the dish with cheese.
  27. If the potatoes are not ready, cover the dish with foil again and place in the oven for another 5-10 minutes.
  28. Subsequently, bake uncovered so that the dish is covered with a beautiful golden brown cheese crust.
  29. Take out the baking sheet. Prepare large serving plates. Place fish and vegetables on them directly in foil. Wrap the foil carefully, creating a semblance of a plate to make the dish look aesthetically pleasing.

  • 60 g refined olive oil;
  • 70 ml balsamic vinegar;
  • 1 hot pepper (green);
  • garlic - 5 cloves;
  • 3 tomatoes.

Cooking time will be: 1 hour 20 minutes. 210 kcal per person.

Step 1. Pour vinegar into a small container, place over low heat, and simmer until the balsamic vinegar has reduced. As soon as it acquires the consistency of honey, immediately turn it off.

Step 2. Peel the onion, garlic cloves, hot pepper, celery stalks and lemon with water. Let the garlic remain in the cloves, and divide the onions into eight parts, cut the pepper into two halves, chop the celery stalks and lemon into large cubes. Wash the sweet pepper and cut into strips.

We suggest cooking salmon in a culinary sleeve. We do this: put the prepared vegetables and fish in a sleeve, twist the ends. And then we put it in the oven for half an hour.

  • 3 small carrots;
  • 100 grams of olives (pitted);
  • salmon fillet – 0.8 kg;
  • 1 fennel;
  • lemon (zest and juice);
  • a couple of peeled garlic cloves;
  • 30 g peasant butter;
  • 6 young potatoes;
  • 60 g unrefined oil (preferably olive oil).

It will take 35 minutes to cook the fish. The calculation is made for 4 servings, each containing 400 kcal.

Step 1. Cut the fillet into 4 equal pieces, rub with salt and pepper. Cut the fennel into thin slices, chop the carrots and onions into thick circles.

Step 3. Boil all vegetables in boiling salted water. Dip them into water separately, soaking time is about two minutes. To dry the vegetables, place them in a colander, sieve or paper towels.

Step 2. Grind the peeled garlic cloves, combine them in a cup with oil, put the potatoes in the oil and mix well.

Step 3. In another bowl, mix carrots, zest, fennel, olives, season to your taste.

Recipe with cheese

Another variation of a dietary dish, for the execution of which you need:

  • 700 g white fish fillet;
  • zucchini;
  • 3 tomatoes;
  • ½ head of garlic;
  • 30 ml sour cream;
  • 200 g cheese;
  • salt, spices and olive oil.

Baked fish with vegetables

We suggest using fresh spinach and herbs to the fullest extent. These vegetables make a healthy and light vegetable coat.

  • 450 g fresh spinach;
  • pesto (sauce) – 30 grams;
  • sea ​​salt;
  • 2 white fish fillets weighing 300 grams;
  • 1 teaspoon olive oil;
  • 3 long tomatoes;
  • 2 tbsp. spoons of butter.

Preparation will take 1 hour 30 minutes. The dish is designed for 2 servings, each serving 389 kcal.

  1. Wash the spinach, dry and chop coarsely. Cut the tomatoes into thick slices;
  2. Heat oil in a frying pan with a thick bottom. Fry the fish fillet on it, only on one side. Then turn the pieces over and spread pesto sauce on each;
  3. Place tomato slices on the fish, sprinkle them with olive oil, chopped spinach and butter crumbs on top, pour in a little water. Place a lid on the frying pan. First simmer for 3 minutes at medium temperature, then reduce it and continue cooking for another 15 minutes. If necessary, add a little water. Salt the already prepared vegetable coat.

Fish with lemon in the oven

This is a great recipe for red fish.

You will need:
200 g fish, 50 g zucchini, 2 tbsp.
olive oil, 2 cloves of garlic, a quarter of a lemon, spices, herbs. Preparation:

Cut the zucchini into slices and place on greased foil. Roll the fish in spices and sprinkle with lemon juice, and then place on the zucchini. Sprinkle it with herbs, chopped garlic and small lemon slices on top. Wrap everything in foil and bake for 25-30 minutes at 180 degrees.

Pink salmon with assorted vegetables in a slow cooker

It’s good to experiment with pink salmon by cooking it with vegetables in a slow cooker.

  • 0.4 kg pink salmon;
  • 1 peeled onion;
  • 60 grams of tomato paste;
  • 2 red tomatoes;
  • 2 pinches of paprika;
  • salt, it is better to exclude.

In total it will take 35 minutes to cook. There are only 107.3 kcal per 100 grams.
