Dry wine has exceptional qualities for marinade; it contains a balanced set of aromatic substances and natural acids that can turn our ordinary herring into a real delicacy. And herbs and spices successfully complement this delicious union!

Ingredients for cooking herring in wine sauce:

  • salted herring – 2 pcs.
  • dry red wine – 400 ml
  • wine vinegar – 0.5 cups
  • sugar – 1-3 tbsp.
  • onion or red salad - 1 pc.
  • cloves – 2-3 buds
  • bay leaf – 1-2 pcs.
  • mustard seeds – 1 tsp.
  • coriander seeds – 1 tsp.

Recipe for herring in wine sauce:

First you need to prepare a wine marinade for herring: mix dry red wine and wine vinegar in a small saucepan.

Add the prepared spices – coriander beans, mustard seeds, bay leaf and sugar. The amount of sugar depends on how “sour” your wine is. We advise you to add sugar gradually: the marinade should not be too sweet, because the dish belongs to the category of snack foods, which means the proportions of sugar, acid and salt should be approximately the same. Place the saucepan on the fire, bring the wine to a boil, and simmer the marinade for 5 minutes over medium heat.

At this time, cut the onion into rings.

When the marinade has cooled a little and becomes warm, pour it over the onion rings and leave for 10 minutes.

This time is enough to fillet the herring, removing the head, entrails, skin and bones.

Place the cooled wine sauce in a colander, reserving all the liquid.

Cut the herring fillet into portion pieces of a size suitable for you and place them in a deep dish or in a food container in layers along with onion rings and spices.

Pour wine sauce over the herring, cover with cling film, and refrigerate for 1-2 days.

This marinade for herring allows you to get the finished product very quickly - literally in three to four hours. Combine half a glass of tomato puree with a quarter of the same juice, three tablespoons of olive oil, ground allspice and black pepper (to taste), salt and half a tablespoon of sugar. All this is whipped, gradually half a glass of cream is poured into the mixture. Pieces of herring fillet are placed in a jar, interspersed with half rings of red onion and layers of marinade - it turns out to be quite thick. Believe me, you don’t even know how tasty this fish can be!

Herring in wine sauce: recipe with white wine

Ingredients

  • Medium-salted herring - 2 pcs.;
  • Onion - 1 pc.;
  • Sugar - 1 tbsp;
  • Dry white wine - 200 ml;
  • Water - 200 ml;
  • Wine vinegar - 2 tbsp;
  • Cloves - 3 buds;
  • Peppercorns - 5 pcs.;
  • Bay leaf - 3 pcs.

How to cook herring in wine sauce

We cut store-bought salted fish into fillet strips so that there are no bones left. If you want the presentation to be more impressive, roll the meat into rolls and secure them with toothpicks.

Immediately place in a flat enamel or glass container where the fish will marinate.

Spicy herring in wine sauce: recipe with red wine

We cut a couple of pieces of salted store-bought herring into fillets and set them aside to prepare the marinade.

  • Combine 400 ml of dry red wine with 100 ml of wine vinegar.
  • Heat them in a saucepan and, when the mixture begins to boil, add 2 tbsp. sugar and spices - 3 pcs. cloves, 1 bay leaf, 1 tsp. mustard seeds and the same amount of coriander.

We determine the amount of sugar approximately, since it depends on how salty the herring is. On average, you need from 1 to 3 tbsp. into two cut large carcasses.

  • Boil the marinade for 5 minutes and, while it simmers, peel and cut a large onion into rings - it can be white or red, lettuce.
  • Pour the wine sauce over the onion rings and leave for 10-15 minutes, then strain.

  • Cut the herring fillets into portions, 1.5-2 cm wide, and place the portion in a flat container in one layer, then add the spices from the marinade on top. We repeat the operation until the fish runs out. After this, pour the sauce over everything, cover with a lid or cling film and leave for 2-3 days.

Serve the finished herring along with the marinated onions. Bon appetit!

Cooking herring in wine sauce (recipe with wine vinegar)

This recipe will come in handy if you don’t have dry white or red wine on hand, but want to make an unusual snack. Let's use wine vinegar and the right set of spices to get the perfect result.

Let's prepare a couple of fatty salted herrings in advance - remove the bones and cut them into portions.

Prepare spices for the marinade:

  • Three fresh ginger root on a grater - we need 1 tbsp.
  • Grind 7-8 pieces a little in a mortar. clove buds and 1 cinnamon stick.
  • There is no need to grind the spices into dust, but it is necessary to grind them slightly to give a richer taste to the marinade.

After preparation, we proceed to the marinade itself:

Add these spices to 300 ml of hot water, also add ½ tsp. ground white pepper, 2 bay leaves, 4 tbsp. sugar and 1 tbsp. salt.

1 tbsp. pour red wine vinegar and regular table vinegar. Keep on low heat for 4-5 minutes, turn off, strain.

Immediately place the fish fillet in a flat dish in one layer, pour hot marinade over it, then a second one and repeat the procedure until the herring slices are gone.

We put it in the refrigerator overnight, and in the morning you can enjoy a wonderful snack!

1. Take the herring, already salted, large in size. We clean it of entrails and large bones. 2. You need to hold each fish under running boiling water, then the skin will be easily removed. 3. Cut off the head and tail, cut the fish into pieces, removing the remaining large bones. 4. Prepare the marinade. Grind the ginger on a fine grater, and crush the pepper or grind it in a blender. Mix all the spices, pour wine over them, and boil until it starts to gurgle. Cool, add vinegar. 5. Now pour the cooled marinade over the fish and leave it in the refrigerator overnight. Ready!

Instead of vinegar - vodka

Many people believe that nothing can be pickled without vinegar. Exceptions are made only for barbecue meat - there the choice of base is quite large. However, there is a marinade for herring, the recipe of which successfully dispenses with this acidic component. A small, extremely hot pepper is finely chopped and ground with a teaspoon of lemon juice and two cloves of chopped garlic. Add a little dill, a third of a small spoon of sugar, half a glass of vegetable oil and vodka. This mixture is poured over the chopped fillet and left in the refrigerator for several hours.

  • Vinegar (table vinegar (I have it half and half with red wine)) - 1 cup.
  • Clove (bud) - 1 pc.
  • Bay leaf - 2 pcs.
  • Black pepper (peas) - 1 tsp.
  • Mustard (seeds) - 1 tbsp. l.

I'm crying and sobbing because I accidentally deleted the photos of preparing the marinade. I regret this terribly, because the marinade turns out sooooo beautiful. I made half the norm, because 5 herrings is a lot, in my opinion, even for big herring fans.
