The sandy base simply melts in your mouth, and the delicate berry taste gives you a feeling of eternal summer. To prepare it, you don’t need any special knowledge or culinary skills, just a little inspiration and a good mood - these are the main elements of the magical action. Do you want to feel like a wizard? Then we will offer you some of the most popular variations on the theme of shortbread pie.

Shortbread pie stuffed with berries

An absolutely universal option, available at any time of the year, because it will be good with either freshly picked or frozen berries. Shortcrust pastry for pie with berries, the recipe for which we will now tell you, is very quick and easy to prepare. See for yourself.

Ingredients:

  • Butter – 1 package (200 grams);
  • Flour – 3 cups;
  • Egg – 1 piece;
  • Sugar – 1-2 tablespoons (depending on your taste);
  • Salt - a pinch;
  • Baking powder for dough – 1 teaspoon (replaces 2/3 teaspoon of soda);
  • Starch – 100-150 grams;
  • Berries – 300-400 grams.

How to create a delicious dessert from such simple ingredients? It’s very simple, the main thing is to follow the following algorithm:

  1. The butter must be removed from the refrigerator in advance so that it softens a little. It is not necessary to heat, just chop the soft butter into pieces. Then add the egg and sugar to it and grind, trying to get the most homogeneous structure. The process can be made easier by replacing sugar with powdered sugar, or by beating the egg and sugar in advance using a blender.
  2. Now let's get to the dry ingredients. Mix sifted flour, baking powder, starch and salt. Add this mixture to the butter-egg mixture in small portions.
  3. Initially, mix the liquid mass with a spoon, then form an elastic lump with your hands. While kneading, try not to sprinkle flour on the surfaces, as it can easily clog the dough, making it tougher. As a result, we will get a smooth, soft dough that does not stick to your hands. Now is the time to start shaping the cake.
  4. From the total mass we separate approximately one quarter of the dough, which we will leave for decoration. The remaining three quarters will become the basis of our pie. Roll them out into a layer, the thickness of which is approximately 0.5-1 cm. Try to roll them out so that the middle is a little thinner than the outer edges.
  5. Lightly coat the pan with butter. We spread the shortbread dough so that the edges form a side (about 3 cm), then lay out the filling. If you use juicy berries, you need to drain the juice in advance so that it does not start to leak out and burn. The second option is to sprinkle them with a small amount of starch, which will increase the viscosity of the juice and gel it a little.
  6. Now let's start decorating. Roll out the rest of the dough thinly and cut out thin strips from it. From them we form a braid along the upper ball. Try to calculate the length of the strips with a margin so that the remaining area is laid out along the contour of the pie.
  7. We send the workpiece to the oven, the temperature of which has already reached 180 degrees. The pie will take approximately 20-25 minutes to prepare.

Now be patient, because the finished pie needs to be cooled before eating. Then cut into portions. You can decorate with powdered sugar or serve with a scoop of ice cream.

Step-by-step preparation with sour cream

Shortcrust pastry for the pie can be prepared with sour cream (fat homemade sour cream is suitable). The dough will be crumbly with a rich creamy taste.

Ingredients:

  • sour cream 20 percent fat (200 g);
  • butter (50-100 g);
  • flour 1c (300 g);
  • whole grain wheat flour (150 g);
  • water (3-4 tbsp.);
  • granulated sugar (100 g);
  • salt (no more than a pinch);
  • soda (0.5 tsp).

Preparation:

  1. Melt the butter in a small saucepan over low heat, add sour cream and a mixture of sugar, salt and soda, stir.
  2. Add first grade flour and knead the dough well.
  3. Add a few tablespoons of water and whole grain flour to the resulting mass and knead.
  4. In order for the dough to acquire plasticity, it must be kept in the cold for some time.
  5. Bake the divided dough at 200 ºС for 30-40 minutes.

Pie with curd and berry filling

There are not so many lovers of cottage cheese in its pure form, but the beauty of this product is that it does not lose its usefulness during heat treatment. Therefore, this pie is not only tasty, but also healthy.

Ingredients for the dough:

  • butter – 100 grams;
  • sugar – 100 grams;
  • flour – 250 grams;
  • egg - 1 piece.

Filling ingredients:

  • berries – 300 grams;
  • cottage cheese – 1 package (250-300 grams);
  • sugar – 100-150 grams;
  • egg - 1 piece.

This amount of ingredients is enough for us to fill a mold with a diameter of 22 cm. For a larger volume, we need to increase the proportions at least twice. We divide the preparation of the pie into several stages:

  1. Prepare the dough. We need to make it in advance, because before baking we need to cool the workpiece for 20-30 minutes in the refrigerator. Soften the butter and mix with sugar and flour until crumbly. Add the egg there and knead the dough.
  2. Now we form the blank. You can roll out the dough separately with a rolling pin, or use your fingers to stretch and level the dough over the surface of the mold. Make it a little thinner on the bottom and a little denser on the sides. We send the workpiece to the refrigerator.
  3. In the meantime, let's make the filling. Pass the cottage cheese through a sieve or meat grinder, add egg and sugar to it. Mix everything until smooth. Wash the berries, remove the seeds (if any), drain the excess juice from the juicy ones.
  4. Remove the dough from the refrigerator and evenly distribute the curd mixture over it. Place berries and fruits on top.
  5. Bake for 20-25 minutes until golden brown.

This pie is served already cooled, cut into portions.

Decor options

Aesthetics in a dish are no less important than the taste itself, which is why you need to pay a lot of attention to the design of the dish. Shortbread pie can be served in several design options:

  • Open, when only the base and sides are made of dough, while the top layer consists entirely of berries or cottage cheese;
  • Network. This option is described in the first recipe. From a small amount of dough (about 1/4) roll out strips that cover the top of the pie. you can fold them crosswise in the form of a lattice or diagonally, forming beautiful rhombuses;
  • Closed. About a third of the dough needs to be frozen, then grated. Small pieces are evenly distributed over the surface, covering it;
  • Mixed top. If you have several types of berries and fruits in your arsenal, you can try to decorate the pie in this way. Roll 2-3 (depending on the number of berries) sausages from a small amount of dough and place them crosswise on the curd base. So we divide the surface into 4 or 6 sectors, each of which is filled with a different type of fruit or berry.

Cooking secrets

Autumn, housewives often, when trying to cook a new dish, follow the recipe very strictly, following absolutely all the instructions, but the result leaves much to be desired. There is nothing surprising in this, because we all learn from mistakes, but it is also possible to prevent them in the first place.

We will share a few secrets that will help you prepare the pie the first time:

  • Butter dough is not heat-loving, so it is better to knead it not with your hands, but with a blender or dough hook. If there is neither one nor the other, just try to knead less, and then let the dough sit in the refrigerator;
  • The second main problem is leaking juicy or frozen berries. This spoils both the appearance and the taste, since the leaking juice often boils and burns, imparting a bitter taste to the pie. Preventing this is very simple: you just need to sprinkle the berries with starch;
  • Another problem is clogged hard dough. In order not to become the happy owner of such a pie, it is enough not to overdo it with flour. As soon as the dough begins to stick to your hands, you can put the flour aside and never return to it.
